Quantitative results from pre- and post-testing demonstrated an increase in students' openness to diversity and challenge upon the conclusion of their engagement in the real-world sport industry project. Qualitative analysis showed that the reflection and research requirements associated with the assignment allowed the vast majority of students to develop awareness of unconscious bias in their work, and create inclusive recommendations for future practice. Employing a quasi-experimental design, a total of 60 MICE learners were randomly assigned to either the experimental group or the control group, each of which consisted of 30. The experimental group utilized Netflix streaming videos to complete their training, while the control group relied on traditional methods and textbooks for the same course. Both quantitative and qualitative research findings indicated that MICE learners who incorporated Netflix into their learning process exhibited significant improvement in learning motivation and foreign accent perception. This paper focuses on an innovative pedagogical approach based on experiential learning activities. With this study we intend to describe the context, the teaching and learning process, and a real case package proposal that was successfully implemented by a group of undergraduate students. This education approach has been developed for the last three academic years as part of a 3rd year module ‘Sport, Leisure and Tourism’ within Sports undergraduate degree at the University of Algarve (Portugal). The case study method and reflective portfolio, underpinned by experiential learning theory, were designed to create an authentic, enriching and transformative learning experience for all students. The authentic experiential learning had positive impact on the dynamics established in the classroom, where we could see active participation of the students. Combining use of the truncated Poisson model and order logit model, we analyze the demand structure of cultural heritage tourism relative to frequency of visits to the Forbidden City. Although the results based on the two models differed, we show major determinants to be authenticity selection attributes and sociodemographic and tripographic characteristic variables. The SMBD module integrated data literacy, sustainability knowledge, and marketing skills through problem-based learning, creative problem solving, computer-based learning, and project-based pedagogical approaches. Employing a mixed-methods research design, this investigation evaluated the effectiveness of the proposed SMBD curriculum through a quasiexperimental design and compared learning outcomes between an experimental group (n = 44) and a control group (n = 39) taught with traditional methods. Pre- and posttests were used to assess students' data literacy, sustainability attitudes and behaviors, and marketing competency. ANCOVA revealed that the experimental group exhibited significantly greater improvements across all dimensions than did the control group. Regression analysis confirmed the positive influence of gains in big data literacy and sustainability knowledge on marketing skill demonstration. Qualitative analysis of focus group data provided further insights into students' learning experiences and engagement with the SMBD curriculum. The results support the efficacy of the theory of change framework and active learning pedagogies in enhancing undergraduate hospitality students' competencies in three critical domains. Higher tourism education has undergone these changes concordantly as it incorporates an applied field. Therefore, an atmosphere of uncertainty and chaos has arisen in universities. The study approaches the effects of the pandemic on the education system through the perspective of chaos theory. The data were collected from tourism academics, one of the pillars of the higher education system. Semi-structured in-depth interviews were conducted with 21 lecturers. Study findings revealed that the lack of compulsory attendance reduced student participation in online classes. Accordingly, low student attendance resulted in the lack of lecturer-student interaction in courses, negatively impacting lecturer motivation and highlighting the inefficiency of distance education. Practical classes in kitchen laboratories are strategic in development the segment. A practical class demands that students mobilize a wide range of skills, assimilate visual cues, information about products and utensils, and critical points of preparation, in a dynamic process in which, besides cooking, students must also practice teamwork, clean the space, manage several activities, and commit to the deadlines and objectives set by the teacher. There are several gaps highlighed in the literature regarding educational practices in hands-on cooking laboratories. Based on this premise, this research aimed to identify enablers and hindrances to hands-on learning in cooking classes, from the perspective of students, in a higher education institution in Portugal. To reach this goal, a structured questionnaire was applied to students of two higher education programmes in the area. Bardin’s content analysis model (2006) was used to analyze the results.
