De la resistencia a la adaptación, una etnografía de las poblaciones campesinas.","authors":"Juan José Pintos Radice","doi":"10.14409/es.v60i1.9145","DOIUrl":"https://doi.org/10.14409/es.v60i1.9145","url":null,"abstract":"La expansión de los cultivos transgénicos ha reconfigurado el mapa agrícola de la Argentina, la vedette de este proceso ha sido sin dudas la soja genéticamente modificada resistente a los herbicidas, que generó una fuerte expansión de la frontera agrícola, permitiendo desarrollar su cultivo en zonas antes consideradas marginales para esta actividad. A partir de un extenso trabajo etnográfico, Pablo Lapegna nos introduce en las características con las que se dio dicho fenómeno en el noreste argentino, más precisamente en la provincia de Formosa. Poniendo el foco en las comunidades rurales de Monte Azul y Moreno, expuestas a los efectos de las fumigaciones, el trabajo intenta arrojar luz sobre las zonas grises de un modelo de producción que altero la geografía del lugar, pero también sobre los efectos sociales y ambientales de sus prácticas de negocio. Methodology:Aall issues (470) were examined, including texts and illustrations. Results: Chile produced an early process of valuation of wine culture for its patrimonial, identity and territorial significance. Limitations: The magazine failed to cover local wine festivals. Conclusions: The state character allowed the magazine to act independently of the economic interests of the industry. Results: The intervention actions of the key actors, their relationships, proposal of care factors, their limitations, responsibilities and relationship schemes in sustainable regional development are considered. Limitations: Generate inter-institutional groups, programming of resources, joint actions, comprehensive intervention plan. Metodología: desarrollamos un estudio de caracterización del mercado local de alimentos, en los municipios estudiados. Identificamos tres aspectos centrales (abastecimiento, circuitos alimentarios y mercado interno de alimentos). Para esto configuramos una muestra no representativa a través de la técnica bola de nieve. Aplicamos entrevistas semiestructuradas a fin de lograr mayor profundidad en la caracterización de los mercados locales. Resultados: identificamos la preeminencia de la intermediación en la comercialización de alimentos, lo que determina los procesos de abastecimiento y consumo a nivel local. Logramos reconocer la importancia de los mercados campesinos respecto de su interés en lo que se refiere a promover los circuitos cortos de comercialización y la disminución de los ciclos de intermediación. Limitaciones: la financiación fue muy corta y fue necesario limitar la estrategia metodológica y el trabajo de campo. Por otro lado, la gestión administrativa del proyecto ocasionó tardanzas y dilaciones en su desarrollo, lo que afectó el curso e implementación de sus fases. Conclusiones: el sobre estímulo que tiene la intermediación comercial en el mercado agroalimentario en Colombia afecta negativamente la disponibilidad y abastecimiento de alimentos en los mercados locales de alimentos. Es necesario fomentar los circuitos cortos y disminuir la distancia entre productores y consumidores. Metodología: el estudio se basa en una aproximación exploratoria de corte cualitativo. A partir de observación participante se pudieron identificar los significados y el simbolismo en torno a la elaboración del atole de plato para su aprovechamiento turístico. Resultados: mediante el uso de la teoría de las representaciones sociales se identifica que el atole de plato es un alimento con valor cultural, histórico y social, situación que lo postula en una etapa previa a su inserción en la oferta turística de destinos rurales que han apostado por el turismo como un camino hacia el desarrollo. Limitaciones: entre las limitaciones del estudio se destaca la dificultad de aterrizar en el plano de la operatividad empírica los postulados de la teoría y, además, del hermetismo cultural del grupo familiar estudiado. {"title":"La modernización de la tradición. Algunos apuntes sobre la producción de mezcal","authors":"Domingo García-Garza","doi":"10.24836/ES.V31I57.1065","DOIUrl":"https://doi.org/10.24836/ES.V31I57.1065","url":null,"abstract":"Objetivo: analizar algunas de las transformaciones productivas más significativas en la cadena mezcalera en México entre los siglos XX y XXI. Metodología: después de revisar la literatura especializada sobre el tema, se efectuó una investigación de campo de catorce meses repartidos en nueve años y se movilizaron diferentes métodos de investigación (entrevistas, observación participante y etnografía). Se realizaron alrededor de treinta y cinco entrevistas a productores in situ. En razón de la pandemia del COVID-19, estas se completaron con otras diez realizadas vía Zoom con universitarios responsables de los cursos de capacitación también llamados “asistencias técnicas”. Se realizaron asimismo alrededor de cuarenta entrevistas a personas que visitaron alguna microdestilería. Resultados: se identificó claramente el impacto de las asistencias técnicas en la producción tradicional. La implementación de las recomendaciones científicas explica en gran medida su éxito actual en el mercado global. Limitaciones: el estudio se limita a los universitarios que impartieron las capacitaciones, ya que los productores son reticentes, reservados o evasivos en la materia. Conclusiones: después de dos tentativas infructuosas, la tercera tentativa modernizadora arrojó resultados positivos. El seguimiento de las recomendaciones impactó favorablemente la calidad, tanto sanitaria, como organoléptica. {"title":"Por una ética de la responsabilidad en la alimentación de origen animal: L’animalisme est un anti-humanisme.","authors":"Sergio Lorenzo Sandoval-Aragón","doi":"10.24836/ES.V31I57.1054","DOIUrl":"https://doi.org/10.24836/ES.V31I57.1054","url":null,"abstract":"Objective: criticize the “animalist”, “anti-speciesism” and “vegan” social movements, questioning the validity of the conception that their defenders have of their own humanity and of the demonization of the human being. Methodology: The analysis applies two basic analytical principles: against a naive constructivism, it proposes to analyze not only the \"representations\" about the relationships between humans and animals, but also the \"practices\" understood in their materiality. Likewise, according to the Weberian distinction the author adopts an “ethic of responsibility” attentive to practical consequences and not only to abstract considerations of ethical principles, as does the “ethic of conviction”. Starting from these principles, he carries out his analysis based on the history and anthropology of animal domestication and the relationships between humans and animals, on recent statistical data and on a review of contemporary literature, news and legislation. Results: Highlighting the argumentative absurdities and the political and economic risks of the movement under the label of \"animalism.\" Limitations: Although the author refers to a general historical and anthropological knowledge, as well as to some data on an international scale, the study is focused on France. On the other hand, although this does not weaken their arguments, they could give room for a nuance regarding the negative effects, also real, of the excessive production and consumption of meat and poultry, as well as of unregulated fishing, in the world. Methodology: Data on gross domestic product (GDP), and exports and imports, as well as from the Economic Censuses were used to observe the general behavior of the industry and the most important branches with four variables: economic units, employed personnel, salaries employed personnel and gross census value added. Results: Variables such as exports and imports were also affected. In terms of geographical distribution, different patterns were observed according to the food branches, especially in the production of dairy products, soft drinks and the other food industries, increasing the importance in some states in the north of the country and maintained the presence in central and western states from Mexico. Limitations: The research is based on secondary information, with sectoral and census data, which allow the calculation of global indicators and the location coefficient. Conclusions: The food industry is related to the behavior of the Mexican economy and the links with the North American economy. The distribution of these branches in the country shows its expansion throughout the country, although production is concentrated in the northern and central states of the country.
