Given the growing demand for nonalcoholic beverages, the study aimed to identify key beverages and topics missing from current curricula and create an optimal zero-proof beverages course. Input from food and beverage professionals and hospitality educators highlighted coffee, tea, water, functional beverages, fermented beverages, and zero-proof cocktails as critical. The course was developed using the Integrated Course Design Framework and reviewed by hospitality educators and students for improvement. Metadata from 27 SSCI and 30 ESCI tourism and hospitality journals were collected from Web of Science. Data analysis was conducted utilizing R package of Bibliometrix and Biblioshiny, adhering to the guidelines of bibliometric analysis. The study identified topics of sustainability and IT technology applications in tourism and hospitality as the recent research fronts. An increasing number of Chinese origin researchers emerged in the author collaboration network, followed by Korean origin researchers. Authors and universities in China started to form distinctive clusters in the author and institutional collaboration networks. Quantitative results from pre- and post-testing demonstrated an increase in students' openness to diversity and challenge upon the conclusion of their engagement in the real-world sport industry project. Qualitative analysis showed that the reflection and research requirements associated with the assignment allowed the vast majority of students to develop awareness of unconscious bias in their work, and create inclusive recommendations for future practice. The study was guided by the Design-Based Research method, which includes three stages used in iterative fashion to create a problem-focused intervention: analysis/exploration, design/construction, and evaluation/reflection. Using thematic and quantitative content analysis of online curricula artifacts from top-ranked universities globally, we investigate the extent to which these digital capabilities are integrated into hospitality and tourism management curricula, as well as the approaches to their integration. We add to the literature by providing empirical evidence of integration levels, by identifying various curricula integration approaches, and by discussing their integration strengths and weaknesses. Multigroup analysis findings proved that university social responsibility improved sustainable knowledge sharing within two leader groups. This study seeks to evaluate the effectiveness of peer assessment in developing critical thinking skills in a Chinese context. Peer assessment data were collected through group news presentations and individual assignments of college students studying tourism management. An epistemic network analysis was conducted to examine the role of peer assessment in students' critical thinking competence. Higher tourism education has undergone these changes concordantly as it incorporates an applied field. Therefore, an atmosphere of uncertainty and chaos has arisen in universities. The study approaches the effects of the pandemic on the education system through the perspective of chaos theory. The data were collected from tourism academics, one of the pillars of the higher education system. Semi-structured in-depth interviews were conducted with 21 lecturers. Study findings revealed that the lack of compulsory attendance reduced student participation in online classes. Accordingly, low student attendance resulted in the lack of lecturer-student interaction in courses, negatively impacting lecturer motivation and highlighting the inefficiency of distance education. This study compared teaching and learning experiences of 350 first-year sport students at a post-92 English University with how they were taught at their further education institutions. Key findings showed the teaching and learning methods at university were less structured and tutor-led but with more teaching staff involved.
