At the same time, the primary assessment of the impact of culture media composition on grapes is complicated by a high level of varie-ty specificity, the need for plant transplanta-tion, and the release of a large amount of tox-ic phenolic compounds into the culture media, resulting in plant death. Thus, the possibility of testing the effect of certain additives on the survival of in vitro plants on callus cul-tures as a simpler model object can signifi-cantly increase the efficiency of selection of culture media components. The article consid-ers the influence of various physiologically ac-tive substances on the changes in the synthesis of phenolic compounds in callus cultures of Krasnostop grape variety. As a result of the work, it was found that only coumaric acid from all the studied additives causes exces-sive formation of phenolic compounds in the callus culture of Krasnostop grapes. Ascorbic acid increases the growth rate of culture, re-ducing the level of oxidative processes. The study was carried out in order to determine the optimal length of pruning and the load of grapevine bushes in the conditions of the Black Sea agroecological zone. The work was carried out in 2018−2020 in the Temryuk-sky district of the Krasnodar Territory. The ob-jects of research were own-rooted vineyards with different fruit cane lengths: short − 4 eyes, medium − 8 eyes and long − 10 eyes. Industrial vineyards were laid in 2006, planting scheme was 3×2, the bushes were formed according to the type − a high-trunk horizontal cordon. With an increase in the length of pruning by 10 eyes, the indicators of fruiting and fruitfulness (K1 and K2) increase slightly. When the length of the pruning was 4 eyes, there was a tendency to decrease fruiting and fruitfulness (K1 and K2). Western Eu-ropean varieties ‘Cabernet Sauvignon’ and ‘Pi-not Noir’ were used as a reference. Alleles of 106 and 107 bps were identified at the ccmp3 locus, 104 and 105 bps at the ccmp5 locus, and 115 and 116 bps at the ccmp10 locus in the studied varieties. The variety ‘Genusa Tsibil’ and interspecific hybrids ‘Castor’ and ‘Muscat de Yaloven’ had a genotype of 106 105 115 bps at the ccmp3, ccmp5, ccmp10 loci, which corresponded to the chlorotype B. The varieties ‘Vasarga Chernaya’, ‘Zaarma’, ‘Marash Cher-ven’, ‘Ozirovka’, ‘Plavai’, ‘Porsi Shekerek’ ac-cording to these loci had a genotype of 106 105 116 bps and corresponded to the chloro-type C. The variety ‘Shirvan Shakhi’ according to these loci had a genotype of 107 104 115 bps, corresponding to the chlorotype D. To recover from phytoplasma infec-tion, a chemotherapy method using the antibi-otic Cefotaxime has been developed. At high concentrations of the antibiotic, intoxication of plants and deterioration in their quality charac-teristics were noted. Plants of Makhrovatchik variety showed an improvement in survival rate at antibiotic concentrations of 100 and 200 mg/l: 64.3 and 60.7%, respectively. For long-term cultivation without replantings, the effectiveness of slowing down growth process-es by increasing the density of the nutrient me-dium was studied. The study was carried out on the varieties Makhrovatchik, Tsimlyansky Sergienko. Studied concentrations of agar-agar were (6, 8, 10, 12, 13 and 15 g/l). One-factor field experiments were carried out in fruit-bearing industrial vine plantations of the Black Sea (Abrau-Durso LLC, Novorossiysk) and Anapa-Taman (Temryuksky district, Vysheste-blievskaya station) viticulture zones of the Kras-nodar Territory. The object of the study was technical (Merlot, Chardonnay) and table (Au-gustine, Moldova) grapevine varieties. The set-ting and conducting of experimental studies were based on the recommended methodological manuals adopted in viticulture. As a result of the conducted studies, the positive effect of foliar top dressing on the main productivity indicators of all studied grapevine varieties (fruiting coeffi-cient, number and mass of bunches) was re-vealed. The advantage of the systematic use of organomineral fertilizer Maxifol of various brands is determined by the indicator of the number of fertile shoots per bush in the varieties Chardonnay and Augustine. The effectiveness of the humic preparation \"Norm L\" was revealed in Merlot, Augustine, Moldova varieties. The experiments involved 15 variety-rootstock combinations consisting of five graft varieties (Dzhevat kara, Sary Pandas, Ekim Kara, Kefesiya, Kokur white) and three rootstock varieties (Berlandieri × Riparia Kober 5 BB, Berlandieri × Riparia CO4, Riparia × Rupestris 101-14). In order to reliably evaluate and interpret the data obtained, the impedance indicators of the studied rootstock-graft com-binations were compared with the data on the yield of standard grafted seedlings from a ground school. The purpose of the work is a compar-ative analysis of changes in extractive substanc-es in dry white wines from hybrid grape varie-ties grown in Rostov region during bottle aging. The objects of the study were dry white wines produced from grape varieties of ARRIV&W breeding according to generally accepted tech-nology under the same fermentation conditions – Platovsky, Stanichny, Donus, control – Ali-gote, which were aged in a bottle from 1 to 3 years in the enoteca of the institute. As a result of the research, it was found that the highest content of reduced and residual extract in com-parison with other samples was observed in wines from the Platovsky grape variety. In ex-perimental samples, the amount of organic acids fluctuated within 4.8–6.8 g/dm3 and, as aging in the bottle, decreased in wines from Aligote and Platovsky varieties by 25 %, from Stanich-ny and Donus varieties by 16 and 15.6 %. The maximum concentration of tartaric acid was noted in wines from Stanichny variety (4.1–2.9 g/dm3). In wines from varieties Stanichny, Donus, Aligote aged 1−3 years, the ratio of tar-taric and malic acids was more than 3, and the ratio of the residual extract to the total content of organic acids was less than 3, they also not-ed the development of taste properties in the direction of improvement. In wines from the Platovsky variety, after 2 and 3 years of aging in the bottle, the ratio of tartaric and malic ac-ids was 2 or less, and the ratio of the residual extract to the total content of organic acids was more than 3; they showed a deterioration in or-ganoleptic characteristics during aging, they were distinguished by a rough and discordant taste. There are 3 types of micro gears:type 1−1–4 micro gears from the lower part of the shoot, type 2 –from the middle part, 5−8 from the base of the shoot; type 3 − from the upper part of the shoot, 9−12 from the base of the shoot. When cultivated in conditions of high temperature and low humidi-ty, the best development was noted in the plants of the Mahrovatchik variety formed from the eyes of the middle part of the shoot. Inhibi-tion of shoot growth and higher plant viability during the entire cultivation period allows us to consider type 1 (bottom) of micro-gears optimal for laying a collection, and micro-gears of the upper and middle part of the shoot to be used for mass reproduction of the Belobulaniy varie-ty. Potapenko Institute are presented. Magic, Black Pearl, Vesta, Augusta. Cabernet Sauvignon was taken as a control variety. The amount of anthocyanins in the wort of the Augusta variety exceeded the value in the control variety and amounted to 689.0 mg/dm3, and the mass concentration of phenolic substances was also maximum and amounted to 1456 mg/dm3. Wine materials prepared from the studied grape varieties received high tasting scores of 8.6 −8.8 points. According to the content of resveratrol, a sample from the Vesta variety stood out − 5.32 mg/dm3, The content of 3.5 − diglycoside in the studied wines was not higher than the established norms (EC No. 1493/1999, Article 19 and EU No. 883/2001, Article 21). The highest value was noted in the August variety 12.68 mg/dm3. In the Krasnodar Territory, regularly repeated temperature drops in winter, typi-cal for the continental climate zone, cause significant economic damage to the viticul-ture industry. Abnormal manifestations re-sult in local and systemic losses. Local con-sequences − damage to the vegetative and generative organs of grape plants, up to the complete death of plantings. Thus, the search for physiologically active substances that are potentially capable of neutralizing the effects of low-temperature stress is an important task in agriculture.
