Fletes Ocón, Alessandro Bonanno","doi":"10.31644/ED.V8.N1.2021.A01","DOIUrl":"https://doi.org/10.31644/ED.V8.N1.2021.A01","url":null,"abstract":"Since the end of the nineteenth century and with State support, coffee entrepreneurs from the Soconusco region in Chiapas have formed production, transformation and distribution links with American and European importers and roasters. The purpose of this study is to examine the strategies and alliances that these entrepreneurs established to address the global restructuration of the coffee industry and the rise of transnational companies. These strategies include, among others, the diversification of business activities, specialization of coffee business and a revitalization of the territory and agroecosystem. Employing qualitative methods, the research underscores the experiences and perspectives of key actors participating in production chains —farmers entrepreneurs, distributors, roasters—, members of coffee grower organizations, and public entities of the region and the state. The article´s primary conclusion affirms that coffee entrepreneurs were able to establish varying alliances, but also different degree of dissent, with transnational actors that enabled their insertion into the global coffee industry. We concentrate on examining the works that were directed to produce monographic visions or to study specific aspects of the Tzeltal and Tzotzil peoples. First of all, we deal with the structure and quantity of documents gathered in the report. Second, we move on to the analysis of the products. To this end, we reflect on the experience of collective research in the research project “The Chiapas–Guatemala border: territory, problems and social dynamics”, whose focus of study was the experience of daily life in the various territories that make up the Chiapas–Guatemala border. We explain the development of the research and the difficulties we face in the process and, primarily, we focus on discussing two fundamental axis: the border as an object of research, and narratives as a methodological proposal. The mole, although it is mole, is just because all its ingredients cooperate with flavors and because it is enough to dip the fingertip in the mixture to repair in each of them. To say that mole tastes like mole is to abstract the complexity of its flavors and that includes the cultural flavors that its confection involves. In Oaxaca, moles are a crucial part of the food culture of their people and each one has a particular configuration that goes beyond the culinary. Therefore, a mole is the condensation of multiple social relationships that coexist beyond folklorisms thatfetish, enchant and kill. An attempt will be made to show the multiple conflicts, tensions and negotiations that take place within it to account for a social space that is not systematic, nor does it have a common vision or interests. Using data from the National Household Income and Expenditure Survey (Encuesta Nacional de Ingreso y Gasto de los Hogares, ENIGH) of 2018 (INEGI, 2018), this study seeks to identify the factors that impact farming (FH) and non–farming (NFH) households in rural contexts of the southern region of Mexico as well as on a national level. Results show persistently high levels of poverty and social deprivation, actual wage income losses, and precarious working conditions. FH in the southern region of the country, comprising adult heads of households with low education levels and indigenous language speakers, who live in extended family units and with high levels of dependency, appear to suffer most from these conditions.
