The work provides a literature review on assessing the radiation safety of feed and livestock products produced in agrobiocenoses contaminated as a result of radiation accidents in the territories of the Russian Federation and the Republic of Belarus. The paper reflects the radioecological situation in the central parts of the Krasnoyarsk Region. The studies were conducted in the period 2016–2018 on the basis of the laboratory of the Federal State Budgetary Institution GCAS Krasnoyarskiy and the radiation monitoring laboratory SHANECO Siberia – a branch of JSC SHANECO Group JSC. In this work, based on a radioecological survey of agricultural landscapes in the central parts of the Krasnoyarsk Region, landscapes with anthropogenic pollution were identified, data on the specific activity of 137Cs in green and roughage harvested in hay-pasture agrobiocenoses of agricultural landscapes in the central parts of the Krasnoyarsk Region were obtained. The content of 137Cs in livestock products produced in agricultural landscapes with additional technogenic load was assessed. The content of 137Cs in the feed of agricultural landscapes with absorbed doses of 1.33 and 1.55 mGy/year exceeds the value of the specific activity of technogenic cesium in the Krasnoyarsk Region. In agricultural landscapes with additional technogenic pollution, the specific activity of the daily diet for 137Cs is higher than in the rest of the region. In agricultural landscapes with doses of 1.33 and 1.55 mGy/year, the content of 137Cs in feed does not reach the control levels established by instruction № 13-7-2/216; accordingly, radiation-safe feed is produced in the Krasnoyarsk Region. Objectives: development of technology for the production of texturates based on native wheat and sprouted corn grain and assessment of its energy income. The objects of research are the technology and equipment for the production of texturates based on Novosibirskaya 15 wheat grain and Rosso 140 sprouted corn. Experimental studies on the comparative assessment of technologies for producing textured flour were organized at the Engineering Center of the Federal State Budgetary Educational Institution of Higher Education \"Krasnoyarsk State Agrarian University\". The compared technologies were based on the production of textures from native wheat with a moisture content of 8.5–9.0 % and from a mixture of native wheat and sprouted corn grain with a moisture content of 15–16.5 %. The germination of corn grain was carried out on a patented installation, which made it possible to obtain sprouted grain up to 2 mm within 48 hours. In extruded mixtures based on wheat grain and sprouted corn, calculated on a dry matter basis, the highest fiber content was revealed – 8.64 % (10 % corn ), starch – 40.67 % (20 % corn); BEV – 78.5–78.74 % (15–25 % corn). The metabolic energy of the wheat extrudate and the extrudate containing sprouted corn (25 %) was 12.78 and 12.95 MJ/kg, respectively. Pathogenic variants of Escherichia coli, having a wide range of virulence factors, when entering the body, can lead to complications and da-mage to various organ systems, including those outside the gastrointestinal tract. Histopathological studies contribute to a better understanding of the mechanisms of pathogenesis, host responses and interactions at the tissue level in various forms of Escherichia infection, as well as the development of preventive and therapeutic strategies. The purpose of research is to study the effect of exometabolites of pathogenic Escherichia coli on the histological picture of internal organs and systems in rabbits. The material for the study was pathogenic isolates of Escherichia coli and a mixture of their exometabolites. The work used molecular-genetic, bacteriological, serological, biological and histopathological research methods. As a result, characteristic histological signs associated with toxic infections of pathogenic Escherichia coli producing Shiga-like, heat-stable and heat-labile exotoxins were established. Destruction of microvilli in the distal small intestine and colon, thrombotic microangiopathy in the kidneys, which included endothelial edema, thrombosis in the glomerular capillaries, fibrin deposition, mesangiolysis and damage to the tubular epithelium were revealed. From the central nervous system, perivascular narrowing, inflammation of the meninges, neuronal necrosis and gliosis were observed. Pathohistological effects in the form of toxic liver dystrophy and pulmonary emphysema were also noted. Objectives: to establish a rational amount of Allium Sativum peduncle added to minced meat snacks; to determine the qualitative characteristics of prototypes and comparison with those of the control sample; to develop stages for preparing meat snacks from chi-cken meat with the addition of a plant ingredient. The traditional recipe for making meat snacks was used as a control sample. The peduncle of Allium Sativum was collected in the vicinity of the city of Krasnoyarsk during its technical maturity in July 2023. After collection, it was dried at a temperature of 60 °C in a vegetable dryer, after which it was crushed. Experimental samples were prepared based on the recipe of the control sample with the addition of a new ingredient of the peduncle Allium Sativum, which was added to the minced meat in powder form in various dosages. An organoleptic and tasting assessment of the samples was carried out, on the basis of which the best prototype was selected. According to the obtained results of quality indicators of meat snacks with the addition of Allium Sativum peduncle, it was established that the rational dosage of the introduced plant ingredient is 1 % instead of raw meat. A basic scheme for producing snacks from chicken meat with the addition of the Allium Sativum peduncle, which is introduced into the minced meat system during its formation, is proposed. Lev. & Vaniot) Nakai) multiflora). Four varieties of chrysanthemum introduced into the South Ural Botanical Garden-Institute of the Federal Research Center of the Russian Academy of Sciences (Sundeam Bronze Bicolor, Meridian Red, Ditto Dark Pink and Daybreak Apple Blossom) were used as research objects. We examined the influence of two types of substrate (sand and vermiculite) and four growth stimulants on the rooting of chrysanthemums (“Zircon”, “Lignohumate” brand AM potassium, “Beres Super” seaweed extract, “Beres AminoComplex”). It was revealed that the treatment of chrysanthemum cuttings with plant growth regulators contributed to an increase in the number (by 7–117 %) and length of roots (by 3–118 %) in the majority of the studied objects. It was noted that positive results from the use of drugs were obtained when chrysanthemum cuttings were placed in vermiculite, in contrast to options with sand as a substrate. It has been shown that the greatest effect is noticeable when cuttings are soaked in solutions of “Beres Aminocomplex” and “Beres Super” in comparison with the control variant. Varietal diffe¬rences in chrysanthemums to the effects of root formation stimulants during vegetative propagation have been revealed. Thus, in the varieties Ditto Dark Pink and Daybreak Apple Blossom, an improvement in the biometric parameters of cuttings was observed when rooted in vermiculite after exposure to plant growth regulators. The experiments were performed on 20–42-day-old broiler chickens of the ROSS308 cross with a duodenal fistula. Duodenal contents were collected 60 and 120 minutes after feeding the birds to determine the taste (complex reflex phase of digestion regulation) and nutritional (neurochemical phase) properties of the protein supplement. 4 groups of chickens were formed (5 heads each): 1st control – received complete feed; 2nd experimental – grain mixture consisting of 25.0 % white lupine and 74.0 % wheat, 1.0 % premix; 3rd experimental, respectively, the ratio is 50.0/49.0 %; 4th experimental – 75.0/24.0 %, respectively. The results showed that trypsin activity 60 minutes after feeding increased by 37.6 % (p < 0.05) in the group of chickens receiving a feed mixture consisting of 25.0 % white lupine and 74.0 % wheat, compared to complete feed. The lowest digestibility was a grain mixture consisting of 75.0 % white lupine and 24.0 % wheat; trypsin activity in chyme decreased by 26.4 % (p < 0.05) compared to complete feed. At the same time, in the blood serum of broilers of the experimental group (25.0 % white lupine/74.0 % wheat), trypsin activity decreased compared to the control group by 21.5 %, which indicates a decrease in metabolic processes. Combinations of several Fusarium mycotoxins, including T-2 toxin and zearalenone, are often found in contaminated cereal crops. The liver plays a crucial role in detoxification processes and is one of the main targets of mycotoxins. The purpose of research is to study the effect of T-2 toxin and zearalenone on the production of pro-inflammatory cytokines interleukin-6 (IL-6) and interleukin-8 (IL-8) in primary cultures of chicken liver cells. The production of pro-inflammatory cytokines IL-6 and IL-8 was studied using ELISA kits produced by Vector. It was found that the concentration of the pro-inflammatory cytokine IL-6 was increased as a result of exposure to T-2 mycotoxin at both 100.0 nmol/dm3 and 1000.0 nmol/dm3 in hepatocyte culture, after 12 hours of incubation as a result of rapid toxic shock, but not at a toxin concentration of 10.0 nmol/dm3. When exposed to T-2 toxin for 24 hours, an adaptive response occurred and no significant differences were found. Significant differences in the concentration of IL-8 were found after 24 hours of incubation, compared to the control. When similar concentrations of zearalenone were added, no significant changes in the concentrations of the cytokines IL-6 and IL-8 were observed, except in the case of the maximum concentration of the toxin. When toxins were introduced together, the dynamics of IL-6 content was similar to that of T-2 toxin, but no potentiating effect was recorded. Lactic acid bacteria are one of the most common microorganisms used in the food industry. They play an important role in the production of fermented milk products, cheeses, cottage cheese and other dairy products. However, to use them, it is necessary to cultivate and preserve starter cultures, which requires certain technological processes. There are several methods for cultivating and storing lactic acid bacteria, one of which is the freeze-drying method. This method makes it possible to preserve starter cultures for a long time without losing their viability and activity. The main objective of the study is to analyze scientific papers, publications and reports on the application of the freeze-drying me¬thod for the production of starter cultures. The study revealed the main advantages and disadvantages of this method, and also determined the conditions for the cultivation and sublimation of starter cultures. An important result of the study is the creation of a database that will help optimize the production of star-ter cultures and create new logistics networks in the food industry. The database will contain information on the application of the freeze-drying method for the production of various types of starter cultures, as well as on cultivation and freeze-drying regimes. The results of the study can be used in the food industry to create new products based on starter cultures, as well as to optimize the production of existing pro-ducts. The object of research is local sheep breeds (based on Romanov) and their crosses, imported sheep breeds (Zabaikalskaya, Edilbaevskaya, Tuvinskaya). Sheep are kept in the Primorsky Region in pasture-stall conditions, fed with hay, oats and other concentrates. The research material included reports from the State Veterinary Inspectorate of the Primorsky Region, the results of monitoring studies, officially published documents on the imposition/removal of restrictive measures by the administration of the Primorsky Region, reports from Rosselkhoznadzor on the epizootic situation for the period from 2012 to 2022. The research method was epizootological analysis. The State Veterinary Service of the Primorsky Region annually conducts planned research, vaccination and treatment of sheep in the region, as well as regular monitoring studies for a number of diseases. Sheep breeding in the Primorsky Region is carried out by owners of personal subsi-diary plots and peasant farms. They often independently purchase and bring sheep from other regions of Russia without accompanying documents and without taking into account the epizootic situation. In this regard, outbreaks of sheep and goat pox and contagious pustular dermatitis of sheep were registered in the Primorsky Region. However, there are diseases whose pathogens have formed natural and anthropourgic foci. Keeping sheep together with other types of farm animals (cattle, horses, pigs, goats) creates the preconditions for the spread of diseases common to them. The study searched for materials in the electronic databases of Google Scholar, PubMed, ScienceDirec and Elibrary.ru in the period from 2018 to 2023, taking into account works in which the authors demonstrated the effectiveness and potential medicinal properties of beekeeping products for health when applied locally or systemically . To study the scientific literature on the problem, methods of summarizing and systematizing data were used. Modern ideas about the biotechnological potential of honey are considered, based on the component and biochemical composition. Its pharmacological potential and bioactive properties have been demonstrated. It has been revealed that bee processing products have nutritional and medicinal properties and contain essential components such as amino acids, carbohydrates, lipids, enzymes, and phenolic compounds. The antimic¬robial activity of honey is described by the effects of antifungal and antiviral properties attributed to the enzymatic formation of hydrogen peroxide, a reactive form of oxygen. The antibacterial properties of bee products are provided by the compounds methyl 4-hydroxy-3,5-dimethoxybenzoate and methyl \u00003,4,5-trimethoxybenzoate. Pollen in honey provides antiproliferative and antibiotic effects. The effectiveness of the complex of polyphenolic compounds and flavonoids of similar derivatives explains the bioactive properties, however the exact assessment of phenolic content and composition varies significantly, depending largely on the botanical and geographical origin of the raw material. Honey and processed pro¬ducts are products with biotechnological potential. The use of honey for food and preventive purposes is justified by the qualitative composition of the components and their manifestation.
