One of the effective alternatives for preventing anemia is nutrition education through snakes and ladders games and booklets, which are able to attract attention and stimulate curiosity.Objective: The aim of this research is to analyze the effect of nutrition education through snakes and ladders games and booklets on increasing knowledge, attitudes, and practices for preventing anemia in adolescent girls.Methods: A quasi-experimental study with a pre-post group design was conducted on 34 adolescent girls subjects at SMP Ma'had Islam Semarang, which were selected by total sampling. Then it was divided into two groups by quota sampling. The first group was given nutrition education through snakes and ladders games, the second group through booklets. Knowledge, attitude, and practice data were obtained through a structured questionnaire, and evidence of practice data was obtained through interviewing for food intake with the FFQ method. Effect analysis using a paired t-test and an independent t-test.Results: There were differences in the average knowledge (p<0.001), attitudes (p<0.001), and practice (p<0.001) of anemia prevention before and after nutrition education through snakes and ladders games and booklets. However, knowledge (p = 0.179), attitude (p = 0.231), and practice (p = 0.179) of anemia prevention between the two groups have no difference. Conclusion: There is an effect of nutrition education through snakes and ladders games and booklets is equally effective in increasing knowledge, attitudes, and practices of anemia prevention in adolescent girls.Keywords: nutrition education snakes and ladders games, knowledge, attitudes, practices, anemia ABSTRAKLatar Belakang: Anemia remaja putri di Indonesia masih cukup tinggi. Salah satu alternatif efektif dalam pencegahan anemia, yaitu edukasi gizi melalui permainan ular tangga dan booklet yang mampu menarik perhatian dan menstimulus rasa keingintahuan.Tujuan: Tujuan penelitian ini adalah untuk menganalisis pengaruh edukasi gizi melalui permainan ular tangga dan booklet terhadap peningkatan pengetahuan, sikap, dan praktik pencegahan anemia pada remaja putri.Metode: Penelitian quasy experimental dengan pre-post group design dilakukan pada 34 subjek remaja putri di SMP Ma’had Islam Semarang yang dipilih secara total sampling. Administering anti-hyperglycemic enteral formulas based on sorghum flour and soy flour was chosen as an alternative to expensive commercial enteral formulas. The low glycemic index in sorghum and the amino acids arginine, glycine in soybeans are beneficial for controlling blood glucose level.Objective: To analyze and compare the nutritional content and viscosity of the enteral formulas based on sorghum flour and soy flour with commercial enteral formulas.Method: Enteral formula was made from sorghum flour, soy flour, mung bean flour, skim milk, extra virgin olive oil, maltodextrin and sugar. This an experimental study using 3 comparison groups of sorghum flour and soybean flour, namely formula A (3:1), B (7:2), and C (4:1) which were compared with formula D (commercial enteral formula). Carbohydrate, protein, fat, sugar and dietary fiber variables were tested using by by different method, kjehdahl, soxhlet, luff schroll, enzymatic-gravimetric and viscosity was measured using an Ostwald viscometer which was repeated 3 times. Data were analyzed by One Way Anova and Kruskal Wallis tests, except that nutritional content of formula D was not tested.Results: Energy, energy density, and fat formulas A, B and C had significant differences (p<0.001) but formulas A and C had values that were close to formula D. Carbohydrates formulas A, B and C showed significant differences (p<0.05). Dietary fiber cotent of formulas A, B, and C was 46,12 g, 41,54 g, and 73,82 g higher than formula D content of 16 g. Protein enteral formula sorgum flour dan soy flour showed no significant difference (p>0.05) but the levels were lower than formula D. Sugar content of formula A, B C was 4,13%, 5,49%, 5,98% higher than the formula D. The viscosity of enteral formula tepung sorgum dan tepung kedelai was significantly different (p<0.05) with formula D.Conclusion: Formulas A and C are formulas that are similar to commercial enteral formulas based on their energy content, energy density and fat content.Keywords: Diabetes mellitus; enteral formula; sorghum; soybean ABSTRAKLatar belakang: Diabetes Melitus meningkatkan berbagai risiko penyakit  komorbid sehingga meningkatkan risiko malnutrisi. One effort to increase the nutritional value of cilok is to add protein sources such as soybeans.Objectives: The purpose is determine the effect of adding soybean flour on protein content and organoleptic properties including color, odor, texture, taste, and overall preference in cilok.Methods: Experimental research with designed using completely randomized design. There is one control group/F0 (tapioca flour and wheat flour 1:1) and three treatment groups with the addition of soybean flour, namely F1 (10%), F2 (20%), and F3 (30%). Organoleptic properties was analyzed by Friedman Test, if significant (p value <0,05) continued with Wilcoxon Test. The protein content was analyzed descriptively.Results: The highest cilok protein content was 6,92% in F3 treatment. The results of the organoleptic properties showed that there was a significant effect on the color, odor, texture, taste, and overall preference. The most superior cilok formulation after F0 was the color F1 (2,10±1,06) yellow category, the odor F2 (3,60±0,89) slightly strong category, the texture F1 (3,43±0,67) slightly chewy category, the taste F1 (3,43±0,81) kinda delicious category, and the overall preference F1 (3,33±0,88) was kinda like category.Conclusion: The more addition of soybean flour in cilok will increase the protein content and significantly affect the color (more brown), odor (more strong), texture (less chewy), taste (less delicious), and decreased the overall preference of the cilok.Keywords : cilok; protein content; organoleptic properties; soybean flour ABSTRAKLatar belakang: Makanan jajanan seperti cilok yang terbuat dari tepung tapioka dan tepung terigu hanya mengandung energi tinggi dan kurang mengandung zat gizi lainnya, terutama protein. Salah satu upaya untuk meningkatkan nilai gizi cilok adalah dengan menambahkan sumber protein seperti kacang kedelai.Tujuan: untuk mengetahui pengaruh penambahan tepung kacang kedelai terhadap kadar protein serta mutu organoleptik meliputi warna, aroma, tekstur, citarasa, dan kesukaan keseluruhan cilok.Metode: Jenis penelitian eksperimental dengan Rancangan Acak Lengkap (RAL). Terdapat satu kelompok kontrol/F0 (tepung tapioka dan tepung terigu 1:1) dan tiga kelompok perlakuan penambahan tepung kacang kedelai yaitu F1 (10%), F2 (20%), dan F3 (30%). Data uji mutu organoleptik yang diperoleh kemudian dianalisis dengan Friedman Test. Apabila hasilnya signifikan (p < 0,05) maka dilanjutkan dengan uji Wilcoxon. Sedangkan kadar protein dianalisis secara deskriptif.Hasil: Kadar protein cilok tertinggi 6,92% pada perlakuan F3. Tigo Baleh Health Center is ranked as the first with the highest hypertension in Bukittinggi City. Non-pharmacological therapy management can be carried out in patients with hypertension sourced from local functional foods. Pumpkin is one of the local functional foods that has anti-hypertensive substances.Objectives: Hypertension is often referred to as the Silent Killer because it is a deadly disease without any symptoms as a warning sign to its victims. Bukittinggi is ranked 4th with the highest hypertension prevalence rate in West Sumatra at 31.2% in 2018. Tigo Baleh Health Center is ranked as the first with the highest hypertension in Bukittinggi City. Non-pharmacological therapy management can be carried out in patients with hypertension sourced from local functional foods. Pumpkin is one of the local functional foods that has anti-hypertensive substances. The purpose of this study was to determine the effect of giving pumpkin pudding on lowering blood pressure in patients with hypertension.Methods: This study used a Quasi Experiment Two Group Pretest-Postest design in the Tigo Baleh Health Center work area. The sampling technique was purposive sampling. Respondents in this study were 40 people who included the Treatment Group and the Control Group. Data analysis consisted of univariate analysis and bivariate analysis with the Dependent T-test to see the average differences of each experimental group also the Independent T-test to see the effect of changes in blood pressure after intervention from both experimental groups.Results The results showed an average blood pressure reduction of 20.35/8.05 mmHg in the treatment group and 3.30/4.35 mmHg in the control group. Also, there is a significant difference in mean blood pressure (p < 0.05) and there is a significant effect of blood pressure changes (p < 0.05) from both groups before and after hypertension.Conclusion: Pumpkin pudding is more effective in reducing blood pressure in patients with hypertension than pudding. Untuk mengurangi kerja ginjal biasanya pasien diberikan beberapa pembatasan zat gizi yang dapat menyebabkan pasien dengan penyakit ginjal kronis mengalami malnutrisi energi dan protein yang jika dibiarkan justru membuat harapan hidup pasien menurun.Tujuan: Tujuan dari kajian pustaka ini adalah untuk menganalisis diet rendah protein yang digunakan pada pasien penyakit ginjal kronis memberikan efek yang baik dan kontraindikasi dari pemberian diet rendah protein, sehingga dapat memperbaiki status kesehatan pasienMetode : Penelitian menggunakan sistematik review dari 19 jurnal dan dipilih 5 jurnal berdasarkan kriteria inklusi dan esklusi terkait dengan penyakit gagal ginjal kronis.Hasil : Beberapa artikel telah membahas terkait diet rendah protein yang diberikan pada pasien, namun perlu ada penilaian status gizi pasien dan kecukupan energi yang dikonsumsi pasien yang akan diberikan pembatasan protein. Adanya beberapa zat gizi juga seperti kalium dan jenis protein yang berasal dari sumber hewani dan nabati yang berpengaruh alam pengaturan pola makan pasien PGK karena adanyarisiko malnutrisi hingga kematianKesimpulan: Pemberian diet rendah protein pada pasien PGK sebaiknya juga mempertimbangkan beberapa hal sesuai dengan kondisi pasien serta pemilihan bahan makanan yang disesuaikan dengan kebutuhan. Faktor pemenuhan zat gizi untuk pasien PGK dapat menentukan status kesehatan pasienKata kunci: diet rendah protein, PGK, status Kesehatan ABSTRACTIntroduction: The prevalence of chronic kidney disease has increased as a result of various risk factors, and nutritional therapy, such as a low protein diet, is commonly used to maintain glomerulus advancement, which can lead to malnutrition and shorten the patient's life span.Aim: The goal of this literature review is to determine whether a low protein diet used in patients with chronic kidney failure has a good effect and whether there are any contraindications to delivering a low protein diet to enhance the patient's health.Methode: 5 journals were chosen for the study from a systematic assessment of 19 journals based on inclusion and exclusion criteria for chronic renal failure.Result: A nutritional assessment of the patient's nutritional condition and the appropriateness of energy intake in patients who will be given protein restriction has been explored in several studies. Because of the risk of starvation and death, various minerals, such as potassium and other types of protein, have an impact on the diet of CKD patients.Conclusions: A low protein diet must take into account a number of factors, including the patient's health and the food elements they require. Capaian ASI eksklusif menurut Data WHO, Profil Kesehatan Indonesia tahun 2022 dan Provinsi Jawa Barat bertururt-turut, 44%, 56,9% dan 59,4%. Data Dinas Kesehatan Kota Bekasi tahun 2021 didapatkan capaian ASI ekslusif Kota Bekasi sebesar 50,3%, sedangkan capaian UPTD Puskesmas Marga Jaya adalah 22,78% dan merupakan puskesmas dengan capaian ASI eksklusif  rendah di Kota Bekasi.Tujuan: Mengetahui hubungan umur, pendidikan, pekerjaan, pengetahuan, sikap ibu, kondisi fisik payudara ibu, teknik perawatan bayi baru lahir, dukungan keluarga dan dukungan tenaga kesehatan  dengan keberhasilan pemberian ASI eksklusif pada ibu menyusui di wilayah UPTD Puskesmas Marga Jaya Kota Bekasi tahun 2022.Metode: Penelitian menggunakan metode survey melalui pendekatan cross sectional dan teknik pengambilan sampel dengan total sampling sebanyak 62 responden ibu bayi usia 6-11 bulan,  menggunakan uji Chi-Square.Hasil: Responden yang berhasil ASI eksklusif sebanyak 53,2%, ibu dengan umur 20-35 tahun sebanyak 74,2%, 62,9% ibu dengan tingkat pendidikan menengah dan tinggi, 80,6% ibu rumah tangga, 93,5% pengetahuan ibu mengenai ASI eksklusif baik, sikap ibu terhadap ASI eksklusif positif sebanyak 69,4%, 90,3% kondisi fisik payudara ibu normal, 80,6% teknik perawatan bayi baru lahir gabung, 69,4% dukungan keluarga mendukung dan 58,1% mendapat dukungan tenaga kesehatan.  Tidak ada hubungan yang bermakna antara umur ibu (p=0,778), pendidikan ibu (p=0,354), pekerjaan ibu (p=0,372), pengetahuan ibu mengenai ASI eksklusif (p=0,332), sikap ibu terhadap ASI eksklusif (p=0,243), kondisi fisik payudara ibu (p=0,405), teknik perawatan bayi baru lahir (p=0,372), dukungan keluarga (p=0,243) dan dukungan tenaga kesehatan (p=0,143) dengan keberhasilan pemberian ASI eksklusif.Simpulan: Tidak ada hubungan yang bermakna antara umur ibu, pendidikan ibu, pekerjaan ibu, pengetahuan ibu mengenai ASI eksklusif, sikap ibu terhadap ASI eksklusif, kondisi fisik payudara ibu, teknik perawatan bayi baru lahir, dukungan keluarga dan dukungan tenaga kesehatan dengan keberhasilan pemberian ASI eksklusif.Kata Kunci: ASI Eksklusif; kondisi payudara ; pengetahuan ibu; dukungan keluarga; tenaga kesehatan.ABSTRACTBackground: Breastfeeding is the most effective way to keep infant’s healthy. Data of WHO for 2022 shows 44% of infant get exclusive breastfeeding. Indonesia's health profile data for 2022 states the national exclusive breastfeeding coverage is 56.9% and West Java Province is 59.4%. These products were great in demand and were chosen by consumers for cheap and practical reasons. However, the safety of these products was not recognized yet.Objectives: This study aimed to determine the total microbial value of Healthy Baby Porridges based on storage condition and to detect Escherichia coli and Salmonella bacteria.Methods: This study was quantitative descriptive research. The samples tested consisted of porridges and steamed rice. The total microbial value was assessed by using Total Plate Count (TPC), and the presences of Escherichia coli and Salmonella were identified. The TPC was performed for three conditions: (1) soon after samples were purchased at room temperature (26.5 - 27 °C), and after stored for six hours: (2) at room temperature, and (3) in the refrigerator (5°C). Escherichia coli and Salmonella was identified immediately after samples were purchased.Results: The TPC value soon after purchase ranged from 1.7 x 102 to 2.7 x 104. After six hours stored, it was between 1.4 x 103 to 1.9 x 107 at room temperature and between 4.8 x 102 to 1.3 x 106 in the refrigerator. The samples contained no Escherichia coli and Salmonella.Conclusion: The total microbial value of Healthy Baby Porridges had already exceeded the maximum limit of 1 x 102 soon after purchase and increased with storage time, especially at room temperature. Escherichia coli and Salmonella were not found. Consuming products with total microbial value above the threshold can potentially pose a health risk.  Keywords: Healthy Baby Porridges; complementary food; Total Plate Count; Salmonella; Escherichia coliABSTRAKLatar belakang: Bubur Bayi Sehat merupakan istilah yang biasa digunakan untuk produk Makanan Pendamping ASI siap santap yang dijual oleh pedagang kaki lima di pinggir jalan.  Bubur Bayi Sehat diminati karena alasan praktis dan murah. Akan tetapi, belum diketahui bagaimana keamanan pangan produk tersebut dari cemaran mikrobiologis. Tujuan: Penelitian ini bertujuan untuk menganalisis total mikroba Bubur Bayi Sehat pada beberapa kondisi penyimpanan, serta mengetahui keberadaan bakteri Escherichia coli dan Salmonella.Metode: Penelitian ini merupakan penelitian deskriptif kuantitatif. Sampel yang diuji berupa bubur dan nasi tim. Total mikroba diukur dengan metode Angka Lempeng Total (ALT), dan keberadaan Escherichia coli dan Salmonella diidentifikasi. Uji ALT dilakukan pada tiga kondisi yaitu (1) saat awal produk dibeli pada suhu ruang 26,5 – 27 °C, dan setelah produk disimpan enam jam: (2) di suhu ruang dan (3) di kulkas suhu 5°C. Identifikasi Escherichia coli dan Salmonella dilakukan segera setelah pembelian.Hasil: Nilai ALT saat awal produk dibeli berkisar antara 1,7 x 102 – 2,7 x 104. Questionnaires with a comprehensive socio-ecological approach to measuring the eating behavior of urban adolescents have never been designed.Objectives: This study aims to design a valid and reliable questionnaire with components of knowledge, attitudes and practices, food choice, and food availability with modification of snack and Sugar-sweetened beverages consumption modifications for urban adolescents.Methods: A cross-sectional study involving 30 high school students in Jakarta was performed for the validation and reliability tests of the socio-ecological questionnaire. The normality test was the Kolmogorov Smirnov. Spearman rank correlation analysis and reliability test were performed on the questionnaire component. R count>r-table or p-value <0.05 is valid and Cronbach alpha>r-table is reliable.Results: The result shows that 8 out of 17 questions of knowledge, 10 out of 21 attitude questions, 13 out of 19 practice questions, 35 out of 35 food selection questions, and 10 out of 13 food availability questions were identified as having r> 0.3494 for 30 respondents and Cronbach alpha>referred r.Conclusions: the components of the questions reflect the eating behavior of urban adolescents with the availability of high-calorie and high-fat snacks and sweetened drinks. Food choices cover all aspects including mood and price, while KAP aspects cover suggestions and composition of a healthy diet, consumption habits of snacks and sugar, and physical activity.Keywords: Adolescent; Food choice; KAP; Snack; SSB; Sustainability ABSTRAKLatar belakang: Pergeseran trend perilaku makan, terutama konsumsi makanan dan minuman kekinian yang tinggi lemak dan gula pada remaja yang teridentifikasi tinggi dapat mempengaruhi kesesuaian instrument pengukuran perilaku makan. Kuesioner dengan pendekatan sosio-ekologi yang komprehensif untuk mengukur perilaku makan remaja urban belum pernah dirancang sebelumnya dengan mempertimbangkan trend saat ini. Tujuan: Penelitian ini bertujuan untuk merancang kuisoner dengan komponen pengetahuan, sikap dan praktek, pemilihan makanan, dan ketersediaan pangan dengan modifikasi konsumsi makanan selingan dan minuman berpemanis yang valid dan reliabel untuk remaja urban.Metode: Penelitian cross sectional yang melibatkan 30 orang siswa SMA kelas 10 di Jakarta terlibat dalam uji validasi dan reliabilitas kuesioner sosio-ekologi. Penjamah makanan kaki lima merupakan suatu upaya individual yang berjualan makanan ditempat keramaian seperti ditepi jalan, di rumah sakit, disekolah dan lain sebagainya. Masalah kesehatan yang erat bagi tubuh yaitu masalah kebersihan dan sanitasi pada makanan. Hal tersebut dikarenakan pengetahuan, sikap dan perilaku sangat berperan dalam sanitasi pada makanan sehingga dapat menghindari pencemaran yang terjadi pada makanan.Tujuan: Untuk menganalisis hubungan pengetahuan dan sikap hygiene sanitasi terhadap perilaku personal hygiene pada penjamah makanan kaki lima di Wilayah Kecamatan Tapos Kota Depok. Metode: Penelitian ini menggunakan desain cross sectional pada penjamah makanan kaki lima di wilayah Kecamatan Tapos pada bulan Mei-Juni 2022. Kriteria inklusi, Subjek berumur 20-60 tahun, bersedia menjadi subjek dalam kondisi sehat, subjek merupakan penjamah makanan kaki lima makanan tradisional. Penelitian ini menggunakan pertanyaan pengetahuan dan sikap hygiene sanitasi, serta pengamatan pada perilaku personal hygiene.
