Injera is the staple food to Ethiopians mostly prepared from tef as the main ingredient. This was a research done by partially substituting tef, relatively expensive flour, by cassava flour and evaluated its injera making quality. Tef and cassava flours were mixed in all possible ratios at 10% intervals. Functional properties, sensory evaluations and proximate compositions were estimated using standard methods. Except water absorption capacity, all other functional properties were significantly varied with changing proportion of tef and cassava flours. The sensory acceptability of tef-cassava injera was significantly decreased in all parameters with increasing proportion of cassava flour. Tef-cassava injera contained 7.59 to 9.41% moisture, 0.65 to 1.87% ash, 0.40 to 1.02% crude fat, 3.79 to 11.89% protein, 1.10 to 3.05% crude fiber, 75.73 to 83.54% carbohydrate and 349.45 to 364.45 energy/100g. As cassava flour substitution levels increase, most flour functional properties increased, whereas sensory characteristics and proximate composition parameters (protein, fat, ash and energy) decreased. It was concluded that up to 40% cassava could be incorporated with tef to make injera with slightly acceptable sensory quality and fair nutritional value. It is characterised by the presence of persistent albuminuria and a reduction of the Glomerular Filtration Rate (GFR) in diabetic condition. No study has revealed the prevalence of DKD in Cameroon. This cross-sectional study was conducted in Buea and Ngaoundere to determine the prevalence of DKD and characterize its biochemical profile in diabetic population under medical care. A total of 250 diabetics were enrolled with a mean age of 56.78±12.06 years, out of which 59.6% were diagnosed with Chronic Kidney Disease (CKD), 32.8% presented micro-albuminuria and 3.6% were diagnosed with macroalbuminuria. The prevalence of DKD was 15.2% out of which 78.9% were females (p=0.002). The prevalence of the co-morbidity hypertension and DKD was 8.8%. Significant association was found between DKD and two variables: female gender (OR: 2.28 (1.21-4.29); p=0.002) and hyper-creatinemia (OR: 3.47 (2.13-5.66); p < 0.001). The high prevalence of micro-albuminuria found in this study may reflect a high frequency of micro-albuminuria in diabetic population in Cameroon. This study is the first, to assess DKD in Cameroon according to the ADA consensus on CKD and diabetes. Composting is thus, environmental friendly option for utilization of this waste. Therefore this study was to evaluate some physicochemical parameters of compost produced from coffee pulp with cow dung and enset leaf (Ensete ventricosum).Results: Treatments were built in randomized complete block design with proportions of treatment one (90% of coffee pulp and 10% of top soil), treatment two (65% of coffee pulp, 25% of cow dung and 10% of top soil), treatment three (65% of coffee pulp, 25% of enset leaf and 10% of top soil) and treatment four (50% of coffee pulp, 20% of cow dung, 20% of enset leaf and 10% of top soil). It conducted for 80 days, from December 28, 2018 to March 17, 2019. Some physicochemical parameters were determined at 25, 55 and 80 days of composting and mean value of bulk density, moisture content, pH, electric conductivity, organic matter, total organic carbon, total nitrogen, total phosphorous, total potassium and C/N ratio were 483.6 kg/m3–487.11 kg/m3, 50.74–52.43%, 7.45–8.36, 3.08mS/cm-3.42mS/cm, 45.26%-46.99%, 26.19%-27.27%, 1.54%-1.61%, 0.41%-0.59%, 0.75%-1.15% and 17.5-18.44 respectively.Conclusions: pH of treatment four was more neutral than from all and total potassium of treatment four was more nutrient content than the rest. The experiment was designed following a randomized complete block (RCB) with 21 cane genotypes in three replications. Each plot consisted of five dual rows of ten meters with 0.5 and 1.90 m of inter-row spacing, i.e. 95 m2 per plot and about 6,000 m2 for the whole experiment. It was carried out on a commercial sugarcane plantation of Ferke 2 located in the northern part of the country, over two seasons (plant cane and first ratoon) as an early-season crop from, November 18, 2016 to November 15, 2018. Over each micro-plot, data based on different agro-morphological traits were collected at harvest from three central dual rows. The study showed that most relevant traits in genotype clustering were related to juice quality (recoverable sucrose, sucrose content, purity), yields and yield components (millable stalk number/ha, stalk height, stalk diameter, internode number). Based on sugar yields, four genotypes equivalent to the check (R579), namely KQ228, R97-6177, R99-4064 and KQ236, were found promising for the next advanced selection stage with, respectively, 19.2, 17.7, 17.3 and 16.9 t sugar/ha. Their cane yield performances ranged from 147.7 to 170.8 t/ha compared to 170.7 for the check and belong to 3 clusters genotypes over the eight determined. Farmers utilize various protection strategies and methods to minimize the level of damage by pests, but among protection strategies pesticide application is the predominant method. There is high dependency of farmers on pesticide control of pests in fruits and vegetable production. Pesticide application encourages farmers to rely more on pesticides than on other pest control methods because of quick results obtained. This will result in accumulation of pesticide residues on the crops. Pesticide residue refers to pesticides that may remain on or in food after they are applied to food crops. Hence pesticide residue includes the pesticide that is remained in the sprayed produce such as fruits and vegetables and bioaccumulation in animals and products such as fish, meat, eggs and dairy. Pesticides used on fruits and vegetables leave residues on the exposed crops which expose human beings to adverse health effects. The continuous use of pesticides in fruits and vegetables as practiced by farmer’s poses a health risk to consumers and may lead to higher pesticide residues. Organochlorine and organophosphate pesticides which are the most hazardous and banned chemical groups are still in use in Ethiopia. Among the cereal crops, tef is one of the most popular and staple crop that originated and highly diversified in Ethiopia. The demand is very high in the country, and it needs production expansion to the area where tef is not primary grown. The current study was consists of forty-nine tef genotypes were conducted by using simple lattice design at Assosa, Western Ethiopia for two consecutive cropping seasons (2016 and 2017) to evaluate the performance of tef genotypes for the non-traditional tef growing area particularly Assosa, Ethiopia. The analysis of variance indicated that there was high (p ≤ 0.01) significant difference among tested tef genotypes for days to heading, plant height, panicle length, culm length, grain yield, and harvest index. From the mean performance of genotypes, the maximum grain yield of 14.70 kg ha-1, 14.33 kg ha-1, 13.49 kg ha-1, and 13.31 kg ha-1 were obtained from G-12, G-1, G-37 and G-19. The organic materials (poultry refuse, mustard oil cake, rice bran and sawdust) were incorporation with the soil 3 weeks before transplanting of onion seedlings whereas Tricho-composts were added in the soils 5 days before seedling transplanting. The results showed that different organic materials displayed varying levels of effective to the nematode infection. All the treatments gave satisfactory reduction of gall development on roots and increased plant growth as well as yield of onion. Among the treatments, Tricho-composts and poultry refuse appeared to be the best amendments for root knot nematode reduction and significantly influenced the growth of the onion with the highest yield. Saw dust, rice bran and nematicide Furadan 5G were also proved to be better amendment for reduction of root knot nematode which enhanced plant growth and increased yield of onion. Results show that the plastic film mulching cultivation under a g a, fertilizer than average wheat yield of 537.75 kg/hm2, increase 7.31%. Fertilizer use efficiency increased by 12.51%, 2.4% (2.4% nitrogen, phosphate, potash) conclusion: in longdong HanYuan or poor fertility zone production level, the formula ratio N12.5: P6: K4, using plastic film mulching cultivation, soil testing formula fertilization of wheat nitrogen fertilizer utilization rate was 37.4%, the utilization rate of 24.1% phosphate fertilizer, potash fertilizer utilization rate of 43.0%. Conventional fertilization of wheat nitrogen fertilizer utilization rate is 35.0%, utilization rate of 21.9% phosphate fertilizer, potash fertilizer utilization rate of 35.1%. Previous studies have shown that phenol is the substrate of enzymes that lead to browning. In order to investigate the substrates that that leads to browning of peroxidase (POD) and polyphenol oxidase (PPO) of chestnut kernel. The extraction and purification methods and the main substrates of POD and PPO from chestnut kernel were investigated. First, the effects on enzyme activity of different kinds of buffer, temperature, time and pH value were studied; second, the salting out purification of different concentrations and the main substrates of POD and PPO from chestnut were studied. The results were shown that POD enzyme in chestnut could be obtained by extracting with sodium dihydrogen phosphate-dibasic sodium phosphate buffer (pH 6.8) at 4°C for 5 h. PPO enzyme in chestnut could be obtained by extracting with disodium hydrogen phosphate-citric acid buffer (pH 5.4) at 4°C for 5 h. The two enzymes could be purified best by 80% ammonium sulfate, and the activity of POD and PPO enzyme had been enhanced for 60% and 190% respectively. In this thesis, Pseudomonas sp was the first dominant bacterium in the Beijing sausages, which was taken as the research object. The total number of bacteria and the sensory score were taken as the evaluation indexes. On the basis of previous studies, Cinnamon, clove and fennel had good antibacterial effect and those were selected as compound preservatives. By using three-factor quadratic universal rotation design experiment and establishing the mathematical model. Then the effect of single factor experiment shown that within the coding range, the bacteriostatic effects of anise, cinnamon and clove were gradually weakened, the effect of interaction experiment shown that there was significant interaction between cinnamon and clove. When the total number of bacteria reached the lowest level, the optimal ratio of the compound preservatives was determined as follows: cinnamon 0.063 g/mL, clove 1.000 g/mL, fennel 0.810 g/mL. According to this formula, 0.1% of compound preservative was added to the meat and compared to the control group, under the same conditions and time of storage, the total number of bacteria was significantly lower.
