The link between gambling and wine is examined as an integral part of the tourism proposition. The possibilities for combining them are highlighted and the motives for attracting visitors by uniting them are discussed. Sustainable practices for the development of the wine business for the local economy and tourism in the context of the Green Deal“ are outlined. Major successful global models for the development of the wine industry are presented. The attention is focused on the directions for the implementation of new sustainable practices for the development of destinations. There are modern vineyards with wine cellars and typical branded wine products. The moral, material and spiritual features of the Bulgarian Karakachans ethnic group also determine the ethno-cultural peculiarities in their nutrition. The lifestyle, the religious affiliation and the deep roots of the beliefs and traditions are the basis of the understanding of nutrition as a cultural phenomenon. The nomadic way of life, migrations and long journeys in different climatic conditions of the environment, product diversity and living conditions form a knowledge of the use of wild plant species. They combine plant foods with dairy products derived from sheep's milk, but at the same time they also used products that find near the places to which they migrate. The Green Deal and the goals it sets for the countries of the community are discussed. An analysis of the wine production in Bulgaria and the European Union (EU) has been made. A definition of sustainable tourism according to the leading ecological norms has been derived. The goals set are related to the new conditions that wine tourism will face. The expectations from the implementation of the European Green Pact are discussed. Emphasis is placed on the relationship between wine producers and wine tourism. Examples of sustainable wine tourism in a modern, efficient and competitive economy are given. In this connection the objective of the research is to study and analyze the current state and the possibilities for development of alternative tourism as an efficient tool for diversification of the local rural economy. The research is based on direct inquiries to tourists and owners of tourism facilities in the settlement Momchilovtzi, Orehovo, Trigrad, Dospat, Banite, Devin and Shiroka Luka.
