Consumer perceptions of and willingness-to-pay (WTP) for aged-beef under two methods dry-aging and wet-aging, were studied in a representative sample of n = 1,275 U.S. residents alongside USDA quality grades. In general, U.S. residents are not knowledgeable regarding aged-beef but have a positive direct-stated perception of the practice. Respondents self-reported familiarity with USDA grades Prime and Choice and perceived them as superior beef attributes. Half of respondents were randomly assigned to receive a low information treatment about beef aging, while the other half saw a high information treatment with additional information about beef aging. A likelihood ratio test indicated that the two information groups could not be pooled for analysis, and a two-class latent class model was estimated for both the low information and high information treatments. Respondents in class 1, in both information treatments, had stronger preferences for beef and were more receptive of beef aging, with the exception of wet-aged beef in the low information treatment, which they were not willing to pay a premium for. The second latent class, which is probabilistically smaller, had negative WTP estimates for both aging methods under both information treatments provided. Additional information regarding beef aging was found to have a positive impact on mean WTP for dry-aged beef in latent class 2. This paper analyses the changes in agri-food trade (values, extensive and intensive margin and diversification) during the pandemic at global and regional level. It also considers parallels in the changes in agri-food trade and changes of various COVID-19-related factors (infections, deaths, mobility, policy stringency, industrial production output). The results show that changes in trade remained limited to short-term disruptions that mostly occurred at the extensive margin of trade and, primarily, at the height of policy stringency, mobility reductions and the overall reduction of economic output. The trade of staples was most resilient, while that of other agri-food products declined considerably. Latacz-Lohmann","doi":"10.1093/qopen/qoac012","DOIUrl":"https://doi.org/10.1093/qopen/qoac012","url":null,"abstract":"\u0000 While farmers in rural areas of northern Ghana find it difficult to obtain sufficient organic soil amendments to keep their soil healthy, there is not enough demand for city compost factories attempting to clean cities of organic solid waste to sustain composting rate at waste-clearing levels. In this study, 398 farmers in rural communities were surveyed in order to estimate the willingness-to-pay for different quality and access attributes of municipal solid waste (MSW) compost and examine how demand for it can be boosted among such farmers. Several specifications of the generalized multinomial logit (G-MNL) model, using farmers’ choice data, revealed that the compost quality and market access attributes surveyed in the study significantly affect farmers’ decision to buy MSW compost. The results also showed that preferences for the attributes vary widely among the farmers, mainly due to some unobserved personal factors. On average, the empirical estimates indicate that for a 50 kg compost bag, farmers are willing to pay GHS 9.43 for brand/label, GHS 5.76 for pelletized compost, GHS 4.49 for delivery in the community, and GHS 2.49 for sales when they have their cash windfall. Farmers face an average disutility of at least GHS 33.36 for deciding not to buy compost, regardless of its attributes, indicating that besides the attributes captured by the study, other factors important to farmers influence their purchase decisions. Significantly discounted prices together with improved compost quality increase the probability of compost purchase. Contrary to conventional breeding, evidence on the economic effects of research and development in organic breeding is lacking. This study assesses adoption, economic impact, and rates of return to organic crop improvement research. The economic surplus method is used to quantify the impact of the Wiwa winter wheat variety. The standard model is enhanced by considering the economic benefits of improvements in crop nutrient and processing quality as well as resilience gains. Results show substantial economic returns of 18.6% for the period from 1988 to 2019. The reduced downside risk of the organic cultivar is a key distinguishing factor in the analysis as organic breeding aims at providing farmers with resilient cultivars.
