In the current world context, where the focus is on sustainability and the efficient use of natural resources, apple by-products are becoming more and more relevant. The purpose of this paper was to analyze the specialized literature regarding the chemical composition of by-products from apples as well as their integration potential in the food industry. Current research is focused on the development of new methods of valorizing these by-products, which allow to obtain ingredients with improved functional properties, and as consumers become more and more aware of the benefits of healthy foods, apple by-products should represent an increasingly attractive raw material for the food industry. As the food industry generates effective alternatives for the integration of by-products, they will become an important segment on the consumer market.","PeriodicalId":320599,"journal":{"name":"ANNALS OF THE UNIVERSITY OF CRAIOVA, Biology, Horticulture, Food products processing technology, Environmental engineering","volume":"110 41","pages":""},"PeriodicalIF":0.0,"publicationDate":"2023-12-19","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"138959202","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

The separation of the compounds was carried out using a Hypersil Gold column (150x4.6) by gradient elution with a mobile phase consisting of 0.5% formic acid aqueous solution and methanol, with a detection of the compounds at 278 nm. The obtained results confirm the presence of phenolic compounds in the leaves of some wild fruit species, respectively gallic acid varied between 5.12 (Malus sylvestris) and 82.16 (Rubus fruticosus) mg/100g DW, and ellagic acid had values between 4.28 (Crataegus monogyna) and 936.34 (Fragaria viridis) mg/100g DW. The used protocol proved to be useful for the accurate and rapid identification and quantification of the two phenolic acids.","PeriodicalId":320599,"journal":{"name":"ANNALS OF THE UNIVERSITY OF CRAIOVA, Biology, Horticulture, Food products processing technology, Environmental engineering","volume":"114 20","pages":""},"PeriodicalIF":0.0,"publicationDate":"2023-12-19","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"138959621","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

The orientation towards apple cultivars with genetic resistance to diseases will be gradually imposed, especially in the case of apple, being the main factor in obtaining ecological productions. The value of the ecological apples, as dessert fruits, depends directly on the following physico-chemical characteristics: size (weight and caliber), content of fruit in soluble solids and acids (specially malic acid), firmness and the color of the epidermis. This work aims to quantify the quality elements of the fruits at the maturity of harvesting for 12 apple cultivars, of different origin (6 with Romanian origin and 6 foreign cultivars), located in a field trial of RIFG Pitești, Romania, managed in ecological system. The preliminary results registered at the level of 2022 show that the fruits size varied from 144.26 g ('Rubinola' cv.) to 306.8 g ('Orion' cv.), and the fruit caliber 71.62 mm ('Crimson Crisp' cv.) to 92.13 mm ('Orion' cv.). The cultivars 'Rumina', 'Topaz' and 'Orion' were noted for the high content of soluble solids (over 14%). 'Rubinola' cv. was noted by the high pH of fruits (4.02) and high acid content (0.88% malic acid).","PeriodicalId":320599,"journal":{"name":"ANNALS OF THE UNIVERSITY OF CRAIOVA, Biology, Horticulture, Food products processing technology, Environmental engineering","volume":" 17","pages":""},"PeriodicalIF":0.0,"publicationDate":"2023-12-19","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"138960957","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}
