Basil ( Ocimum basilicum L.) is an herb often consumed with active chemicals such as flavonoids and eugenol. This research aimed to see if basil leaves could be a natural inhibitor of pathogenic microorganisms in beef during storage. The study used a completely randomized design that treated beef by soaking it in basil leaf juice. The results showed that soaking beef in basil leaf extract had a substantial influence (P<0.05) on TPC, a very significant effect (P<0.01) on total E. coli bacteria growth and meat pH, but no effect (P > 0.05) on total S. aureus bacteria growth. The results indicate that soaking beef in basil leaf extract for 8 hours reduced TPC, suppressed the growth of E. coli bacteria, and maintained the pH of the meat but had no influence on the growth of S. aureus bacteria.","PeriodicalId":16096,"journal":{"name":"Journal of Food and Nutrition Research","volume":" ","pages":""},"PeriodicalIF":1.1,"publicationDate":"2023-05-21","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"45992159","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":4,"RegionCategory":"农林科学","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

However, there is little or no information on farmers’ and consumers’ perceptions and preferences for yellow flesh cassava varieties that contain high levels of total carotenoids. This study was done to assess the perceptions and preferences of Ghanaian farmers and consumers for yellow flesh cassava varieties. A survey was conducted on cassava farmers and consumers in Abura-Asebu-Kwamankese, Agona East, Asikuma-Odoben-Brakwa, Assin South, and Twifo-Ati-Morkwa, which are the five major cassava-growing districts in the Central region. In all, 600 respondents consisting of 200 farmers and 400 consumers were interviewed using a content validated structured questionnaire. Data were analysed using SPSS version 25 and showed that 91.2% of the consumers and 88.8% of the farmers have heard of the yellow flesh cassava and 72% were willing to cultivate it, but lack of planting materials and non-availability of a ready market were their major constraints. Also, the majority of the farmers and consumers recommended that fufu and gari be made from the yellow flesh cassava. It is recommended that breeders should breed for mealy yellow flesh cassava to meet demand. More sensitization is also needed to increase the patronage for yellow flesh cassava.","PeriodicalId":16096,"journal":{"name":"Journal of Food and Nutrition Research","volume":" ","pages":""},"PeriodicalIF":1.1,"publicationDate":"2023-05-19","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"48052775","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":4,"RegionCategory":"农林科学","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

AR contains a variety of chemical constituents which can be classified into the following categories: polysaccharides, saponins, flavonoids, amino acids, and trace elements. There are several techniques to extract these constituents, of which microwave-assisted, enzymatic, aqueous, ultrasonic and reflux extraction are the most used. Several methods such as spectroscopy, capillary electrophoresis and various chromatographic methods have been developed to identify and analyze AR. Meanwhile, this paper also summarizes the biological activities of AR, such as anti-inflammatory, antioxidant, antitumor and antiviral activities. It is expected to provide theoretical support for the better development and utilization of AR. The potential pharmaceutical properties of calycosin in the treatment of tumors, inflammation, stroke, and cardiovascular diseases have gained increasing attention in the recent years. The literature survey showed that calycosin exhibits promising effects for the treatment of several diseases and that these effects may be due to its isoflavonoid and phytoestrogenic properties. The effects of calycosin most likely result from its interaction with the ER receptors on the cell membrane and the modulation of the MAPK signaling pathway. Calycosin exhibits great potential as a therapeutic drug and may be a successful example of the standardization and modernization of traditional Chinese herbal medicine.","PeriodicalId":16096,"journal":{"name":"Journal of Food and Nutrition Research","volume":" ","pages":""},"PeriodicalIF":1.1,"publicationDate":"2023-05-18","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"45706693","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":4,"RegionCategory":"农林科学","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

Primary human brain microvascular endothelial cell (HBMEC), the major component of BBB, plays a major role in its creation and maintenance. Growing evidence suggests an inverse relationship between dietary flavonoids intake and cardiovascular risk, possibly due to their antioxidative effects. This study systematically investigated the effects of four common and abundant flavonoids in HBMEC under oxidative stress microenvironment. The results showed that H 2 O 2 resulted in a 70% inhibition of capillary network formation, 80% growth reduction, and a 2.5-fold increase in apoptosis. However, the addition of quercetin, apigenin, and genistein mitigated H 2 O 2 -induced dysfunctions in HBMEC by 80% to 95%. In addition, quercetin, apigenin and genistein exhibited a 90% reversal of H 2 O 2 -induced oxidative stress, oxidative lipid and DNA damage. In contrast, myricetin neither reversed H 2 O 2 -induced oxidative stress nor displayed any protective effects in HBMEC. Interestingly, quercetin and apigenin caused a 2-fold increase in NRF2 and NQO1 levels in HBMEC whereas genistein had no impact on their levels. Our research provides pre-clinical evidence indicating that certain flavonoids possess antioxidant properties and alleviate oxidative stress-induced dysfunction in brain endothelium. It highlights the positive impact of flavonoids on the BBB and offers potential therapeutic strategies for treating neurological diseases.","PeriodicalId":16096,"journal":{"name":"Journal of Food and Nutrition Research","volume":" ","pages":""},"PeriodicalIF":1.1,"publicationDate":"2023-05-16","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"47707560","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":4,"RegionCategory":"农林科学","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

Unfortunately, this practice was, for many, temporarily interrupted by COVID-19. In this crossover study, we posit that two conditions—silent eating versus conversing while eating with cafeteria situation affects consumption and taste. In all, 11 students at a university in Japan served 10 g of popcorn each during a 90-s interval under these two conditions. The main outcome measures were consumption, the scores for which were significantly higher when eating with conversation. The results indicated that ambience and friendship affected eating rates are important for food consumption. This paper’s result suggested the importance of eating with others.
