However, for postprandial hyperlipidemia, no definitive criteria exist, and fasting values of lipids and lipoproteins had limited efficacy for estimating postprandial lipidemia. In the present study, we performed a fat-ingestion test and aimed to propose indices for estimating postprandial lipoprotein metabolism. Methods: Healthy young Japanese women (n=54, age 21.1 ± 1.0 y) with apolipoprotein E phenotype 3/3 were enrolled. They ingested fat cream (OFTT cream™, Jomo, Japan; 1 g/kg as cream, 0.35 g/kg as fat). Venous blood samples were taken before (0 h) and at 0.5, 1, 2, 4, and 6 h after ingestion. Results: The serum triglyceride (TG) level peaked at 2 h and returned to below baseline at 6 h. The remnant-like particle-TG (RP-TG) level increased at 1 h, peaked at 2 h, and returned to baseline at 6 h. The remnant lipoprotein-cholesterol (RLP-C) level increased at 2 h, peaked at 4 h, and returned to baseline at 6 h. The apolipoprotein B48 level increased at 1 h, peaked at 4 h, and did not return to baseline at 6 h. The apolipoprotein B100 concentration slightly decreased at 2 h and increased at 6 h. TG−RP-TG did not change during 6 h, but RP-TG/TG rose at 2–6 h compared to the fasting value. RP-TG/RLP-C increased at 2–4 h and returned to baseline at 6 h. Conclusion: After fat ingestion, while the concentration of non-remnant TG was stable, remnant TG increased. The content of TG per remnant particle increased up to 2 h and decreased from 2 h to 6 h, and the size became smaller. Plant-based oils, specifically sterols, are essential compounds for cellular composition and proliferation. As vegetarians refrain from consuming animal products, although many versions of this lifestyle exist, plant oils are their only source of fat intake. Extracted plant oils are an essential source of fats and fatty acids; hence this study aims to address vegetarians knowledge and pessimistic perceptions of fats and plant oils to understand the vegetarian consumer choice through the Theory of Planned Behaviour. Despite extensive research on the vegetarian lifestyle, a pessimistic approach to understanding consumer choice in plant-based oils has been less than satisfactory. A qualitative research design was selected to conduct one-to-one in-depth interviews with seventeen vegetarian participants that met the eligibility criteria. Recruitment was based on a purposive sampling drawn from social media groups to provide an insight into the pessimistic views of vegetarians on plant-based oils. A thematic analysis was conducted using the computer-assisted software package NVivo 12 Plus. Pessimistic views and lack of knowledge on the functionality of fats and fatty acids may lead to nutrient deficiencies. The study has identified three major themes related to vegetarians pessimistic views towards plant oils: 1) pessimistic misconceptions of fats and plant-based oils, 2) pessimistic views on plant-based oil harvesting and manufacturing, and 3) plant-based oil challenges and pessimistic health claims. These conflicts are affecting the nutritional status of vegetarians by either avoiding or lessening extracted plant oils in their diet due to a lack of misinformation and uninformative nutritional labelling. The present study highlights the vegetarians’ pessimistic perceptions of extracted plant oils. It is a microbial process that affects the marketable quality of the beans. The microbial dynamics associated with cocoa fermentation as well as the quality of marketable beans were evaluated in a couple of towns in Cameroon. After plating on selective agar plates, the growth of microflora named yeast, acetic acid bacteria, lactic acid bacteria, bacillus and molds associated with the different fermentations was monitored by enumeration using decimal dilution. The quality of the beans was assessed by the fermentation index, pH and grain size. Cocoa beans from Bafia, Bertoua, Elogbatindi, and Penja were sampled after 0, 24, 48, 72, 96, 120, and 144 hours of spontaneous fermentation. It was found that the order of emergence and the time of appearance of the different microbial genera varied between locations and the fermentations process were generally dominated by yeasts followed by lactic acid bacteria and bacillus witch were found during all the fermentation stages except in Elogbatindi where baccilus appear after 48h. Bean pH decreased from 5.88 ± 0.02 - 6.52 ± 0.01 to 4.34 ± 0.02 - 5.68 ± 0.06. The fermentation index of the beans ranged between 1.00 and 1.40 at the end of the process of fermentation and the seeds obtained had consistent specific weight since the value of their weight were greater than 1. The population of the study comprised of 120 respondent 60 each from the two-study area, this was based on the availability of the red flower cotton tree found in the study area. The study adopted an experimental designed with an oral interview. The material used was the red cotton flower which was picked, dried, and grounded to obtained a powder which was used for the proximate analysis at the department of biochemistry, University of Jos. For the purpose of determining its nutritional content, the nutritional components of the plant (leaves) was determined using proximate analytical procedures. The analysis unraveled the presence of six nutrients which comprises of the following: moisture content, crude fibre, crude lipids, crude protein, NFE, and ash. Nitrogen free extracts consisting of carbohydrates, sugars and starches was found to be the highest with 18.48 followed by crude fibre with 5%, crude lipids having 3.8%. crude protein with 2.8% The least of them all was found to be moisture with a value of 2%. It was concluded that, Carbohydrates hydrolyzed the body to yield glucose, Proteins as body builders, they replace worn out tissues, and proteins are also immune booster and can help in cell division as well as growth, Fats which are important in energy production and help to regulate blood pressure of vital cell parts, and fibres which are parts of fruits and vegetable. According to many studies, physical activities and nutritherapy could be complementary solutionto this problem. Pawpaw (Carica papaya) is a tropical fruit highly consumed for its flavour and nutritive properties. The present studywas carried out to investigate the effect of some pawpaw’s varieties’ juice on obesity, insulin resistance and atherogenic riskin albino rats under oxidised palm oil and sucrose diet. Healthy males and females Wistar rats received during 13 weeks every day a supplement of oxidised palm oil (25%) sucrose (25%). At the end of this period, animals presenting obesity, insulin resistance and glucose intolerancecharacteristics were randomly separated into 6 groups. Three of these groups (satellite control groups (G III, G IV and G V) returned to standard diet and received a supplement of smooth cayenne and spanich variety of pawpaw (1 ml/100g), while thethree others groups (OPOS control groups G II, G VI and G VII) continued with oxidised palm oil and sucrose diet (OPOS), and received a supplement of smooth cayenne and spanich variety of pawpaw (1 ml/100g), respectively during 12 weeks. Oral Glucose Tolerance Test (OGTT) was performed and insulin sensitivity was assessed by performing insulin tolerance test, then determining insulin index (Kitt). Body weight, Lee index, naso-anal length, abdominal fat mass, BMI, faeces relative weight and lipid profilewere measured; Atherogenic risk was calculated. OPOS diet induced overall obesity, abdominal obesity, insulin resistance, dyslipidemia and atherogenic risk, and thenreduced Faeces relative weight in animals (P< 0.001 respectively). Treatment with two varieties of pawpaw fresh juice significantly (P< 0.001) reduced Lee index, naso-anal length, abdominal fat mass andBMI, and increased faeces weight; Glucose tolerance and insulin sensitivity were restored; the lipid profile was improved and the atherogenic risk eliminated both in males and females. These results highlight the obesogenic, hyperglycaemic and dyslipidemic characters of OPOS diet, and show the benefits of pawpaw fresh juice on these metabolic diseases. It is necessary to establish a convenient and effective method to identify two subspecies because of the different quality characteristics between the rice products of them, which lead to different processing uses and commodity values. The identification method of PCR based on the difference of chloroplast DNA is convenient and effective, to be attempted to establish. Based on 69 bp fragment deletion of chloroplast DNA (cpDNA) found in ORF100 region nucleotides within the cpDNA Pst I-12 fragment in indica rice but not in japonica, the primer pair and a probe located on the specific cpDNA fragment in japonica rice were designed to identify indica and japonica rice. Another primer pair and probe used to detect endogenous gene gos in rice were combined with above primer pair and probe for detecting cpDNA to establish duplex fluorescence PCR to amplify cpDNA and gos gene for improving detection accuracy, to avoid the false negative results caused by DNA extraction error. The duplex fluorescence PCR detection method was established using typical japonica rice (pearl rice) and typical indica rice (Taixian 11). The accuracy of the method was validated with 547 samples including 177 samples of rice seed and eaten rice known as conventional japonica varieties and japonica type hybrid combinations and 370 samples of rice seed and eaten rice known as conventional indica rice varieties and indica type hybrid combinations. In 177 japonica samples, 170 samples with both positive results of cpDNA marker and gos gene, a coincidence rate of 96.05% agreement japonica rice, and 7 samples with positive results of gos gene and negative of cpDNA marker, not agreement japonica rice with non-coincidence rate of 3.95%, were detected. Of the 370 samples of indica rice seed and eaten rice, with positive results of gos gene and negative of cpDNA marker were detected in 340 samples, the rate of coincidence to indica rice was 91.89%. Other 30 samples with both positive results of cpDNA marker and gos gene, were detected, and the non-coincidence rate with indica rice was 8.11%. These identification results were in good agreement with known indica and japonica varieties, and the coincidence rate of japonica varieties was higher than indica.
