Understanding GI is beneficial in diet management, especially for weight loss or diabetic people. Various types of food, such as functional foods, have recently gained attention for their health benefits, with sourdough bread being a notable example. As sourdough bread becomes a preferred option for weight and diabetes management, disclosing its glycemic index is crucial. <i>Objective:</i> This study aims to assess the glycemic index of a newly available bread, the flaxseed oats sourdough bread. <i>Methodology:</i> Ten healthy subjects aged between 23 to 37 years old were recruited (mean 28.7 ± 4.4 years) and required to fast and then consume 50 g of available carbohydrate portions of test and reference foods. Finger capillary blood samples were collected at the start (fasting, 0 minute) and 15, 30, 45, 60, 90 and 120 minutes after consumption. The GI was calculated from the ratio of incremental area under the curve (iAUC) to reference food. <i>Result:</i> The results show that flaxseed oats sourdough bread has a GI of 37.3 which is classified as low GI. <i>Conclusion: </i>Determining the GI value of this bread provides valuable data that can enhance dietary recommendations for weight and diabetes management. Child malnutrition has been one of the major public health issues of the twenty-first century in the world. A search of some electronic databases was conducted to identify research involving nutritional status of children. A total 19 studies were identified in this review. The aim of this study was to assess the nutritional status and dietary pattern of children and its related factors. The study was conducted based on literature review. The search of literature from scholar.google.com, pubmed.com, jstor.com, nepjol.info, tucl.remotexs.co (proquest.com search.ndltd.org) were used for the study. A total of 140 full-text papers were identified from electronic sources. Among 140 full-text papers, irrelevant papers were excluded. Only English medium literature about dietary patterns and nutritional status of children were included in this study. Sixteen studies were related to nutritional status of children and three studies were related to dietary pattern of children. The results of study showed low nutritional status of children of different countries. The result of the study showed that different behaviors related to eating habits promote the nutritional status of children. Dietary behavior strongly correlates nutritional status of children. Similarly, children are facing numerous nutritional problems due to the lack of exclusive breast feeding, maternal education, disease prevalence and low socio-economic condition. Especially the children are suffered from the problem of stunting and wasting in rural area. Most of the studies have been centered in an urban area. It is a high-protein, high-nutritional-value food that is beneficial for chronic disease prevention and treatment, alleviates depressive symptoms, and improves skin health, fiber, high in calcium and magnesium, essential amino acids, anthocyanin, saponins, lipids, and oligosaccharides. According to epidemiological studies, consumption of soybean based foods provides the advantages of lowering the prevalence of heart disease, reducing the chance of an ischemic stroke, and lowering cholesterol, which reduces the likelihood of atherosclerosis. It is effective against a wide range of malignancies, including breast, prostate, colorectal, ovarian, and endometrial cancers. Soybean recipe have antioxidant properties and helps to ease menopausal symptoms in women as well as lower the risk of type 2 diabetes. Isoflavones, a phytochemical present in soybeans, have numerous health benefits. Soybean recipes (dishes) are created in varied ways and composite ratios in different countries. Soy milk, bread, enjera, tofu and kukis are a few examples in Ethiopia. In all types of the recipes prepared, their nutritional compositions are outstanding and delicious in their tastes. The large population of Ethiopian Orthodoxy Christianity followers are not allowed during seasons of fasting, to consume proteins derived from animals. Hence soybean foods are good alternatives during those fasting days for the problem of protein malnutrition and vitamin A absorption. Ethiopian traditional unique foods like enjera, bread, wot, kitta, biscuit, kukis etc. can be prepared from soybean mixed flour. The results of large-scale reforms to ensure food security are reflected. On this topic, the results of scientific research conducted by leading economists of the countries of the world, and the measures taken by the countries of the world and the FAO organization to ensure food safety were studied. The concept of food security also requires the country to achieve independence and self-sufficiency in terms of basic food. Food independence means the possibility of providing the country's population with basic food products at the expense of domestic resources and production in an amount no less dangerous. Based on these opinions, in our opinion, the concept of food security is based on achieving food independence based on the self-sufficiency of the country in food products by harmonizing domestic sources of sustainable economic development and acceptable levels of imports necessary for citizens to have a reliable and stable physical (quantitative), economic and social access to high-quality and safe food products necessary to ensure an active and healthy lifestyle, in volumes not less than the expressed rational consumption norms established in the country. The study is based on the results of extensive analysis and observations based on scientific, theoretical and practical research. In the present study, we performed a fat-ingestion test and searched for fasting items to predict postprandial lipidemia. Methods: Healthy young Japanese women (n=54, age 21.1 ± 1.0 y) with apolipoprotein E phenotype 3/3 were enrolled. They ingested fat cream (OFTT cream™, Jomo, Japan; 1 g/kg as cream, 0.35 g/kg as fat). Venous blood samples were taken before (0 h) and at 0.5, 1, 2, 4, and 6 h after ingestion. Results: In multiple regression analyses, the area under the curve (AUC) and the peak of serum triglyceride (TG) were predictable by fasting (f)-TG itself, the AUC of remnant-like particle-TG (RP-TG) was predictable by f-TG and f-RP-TG, the AUC and the peak of remnant lipoprotein-cholesterol (RLP-C) were predictable by f-RLP-C itself, and those of apolipoprotein B-48 (ApoB48) were predictable by f-ApoB48 itself. The AUC and the peak of TG–RP-TG, an index of non-remnant TG, were predictable by f-TG. Conclusion: Postprandial lipidemia may be predictable by the measurement of the set of fasting serum TG, RLP-C, and ApoB48.
