Three treatment (T1, T2 and T3) of Pasta were prepared by using rice flour and different proportion of Moringa powder. Control sample containing only 100% Maida. All the treatment was evaluated for the nutritional and sensory quality. In India pasta is used as a fast food and if the nutritional properties of the pasta will be enhanced then it can be easily useful as a regular food. Pasta with ideal sensory and physical quality is characterized by elasticity and strength of the dough, high tensile strength and minimum cooking losses. India is largest producer of Drumsticks with an annual production of 1.1 to 1.3 million tons of tender fruits from an area of 380km 2. Drumsticks are a store house of important and anti-nutrients. All the parts of this tree are useful for Nutritional, Medicinal and Allied purpose. Drumsticks can be an extremely valuable source of various nutrients for people of all ages. Drumsticks is the richest source of Iron, beta carotene, providing micronutrient including protein, vitamin c, folic acid, Zinc and also calcium and potassium (Gopalan, 2000) Drumsticks leaves also contain good amount of Folates, Thiamine, Pyridoxine and Niacin, Antioxidants such as Flavonoids. Drumsticks are full of essential disease preventing nutrients. In India tradition maintains that the nearing tree can cure 300 diseases. The investigation was carried out in the Food Science and Nutrition Department, College of Home Science, CSA U & T, Kanpur. For this study Drumsticks powder has been prepare by sun drying method. Rapidly growing interest in Nutraceuticals can possibly help in controlling them and also fulfill the health requirements. Use of antioxidant rich foods need to be incorporated in our daily diets to overcome these health problems. Fruits, being an excellent source of antioxidants can be used in form of fresh variety and also as preserved-dehydrated products. While processing of mango products, the peel and seed kernel are generated as waste; making them a source of environment pollution. Studies have reported that mango seeds are rich in antioxidants such as vitamin A, vitamin C and polyphenols; and can be used for edible purposes by humans. It is known that stimulation of the function and production of white blood cells assist in strengthening body’s immunity. So, developing products using mango seeds (in any form) may provide health-benefits beyond the traditional nutrients it contains; thereby promoting optimal health, longevity and quality of life. Therefore, it is resourcefully advantageous and environment friendly to procure and utilize valuable product - the mango seed kernel flour. Above all, this resource utilization can contribute towards food security.","PeriodicalId":14043,"journal":{"name":"International journal of home science","volume":null,"pages":null},"PeriodicalIF":0.0,"publicationDate":"2022-01-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"87147986","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

Around 2.1 million people are living with HIV/AIDS in India. This number makes India the third-worst affected country in the world. Globally, we have made tremendous progress in converting it into a chronic manageable illness. Though the incidence of HIV/AIDS is also declining in India since 2001 but the stigma and discrimination associated with it are still candidly prevalent in many parts of the world and in India too. India has enacted legislation to do away with discrimination but still, there are miles to go. A study was conducted to study the lives of children living with HIV/AIDS in families and in institutional setup. Thirty families and thirty children residing in residential institutions were selected for the study depending upon the willingness of the families to participate in the study and access to the researcher. Unstructured interview guides, theme-based group discussions, observations of the family dynamics wherever possible, and narratives of caregivers and children were used to elicit the information. The study revealed the prevalence of discrimination and stigma in explicit and in subtle forms in the lives of people living with HIV/AIDS and the need to devise strategies to tackle it effectively.","PeriodicalId":14043,"journal":{"name":"International journal of home science","volume":null,"pages":null},"PeriodicalIF":0.0,"publicationDate":"2021-10-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"86339177","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

It would be difficult to root out this problem, if the entire society does not get aware and value the significance of a girl child. So, the present study was planned to assess the association of marital status and districts with family planning and birth control. The study was conducted in Uttar Pradesh state with nine districts randomly selected on the basis of sex-ratio i.e. high, middle and low. Random selection of 50 respondents from each district was done. Data was collected by using standardized scale “Family Planning and Birth Control Attitude Scale” developed by Dr. M. Rajamanickam (2005) with four variables (Population Problem, Fertility Control, Contraceptive method and Sterilization. Result revealed that majority of male (81.8%) and female (79.1%) respondents were married and vice versa. Equal percentage of male and female (50%) respondents was taken from in all districts of high, middle and low sex-ratio. Results throw light on four variables in which mean value was seen more in population problem variables i.e. (31.12) in middle sex ration districts. Mean values in other three variables were i.e. Fertility Control-(30.86), Contraceptive method-(29.99), and Sterilization (30.45).Data further asserted that significant association was found with districts and all variables. (Population problem F=5.98, Fertility Control F=11.18,Contraceptive Method F=4.81and Sterilization F=3.41). In case of marital status, unmarried respondents in population problem variables (30.52) have more mean value. But married respondents have more mean value in other three variables i.e. Fertility Control-29.76, Contraceptive method-29.36, and Sterilization-29.85. Data reported that significant association of marital status was found with two variables only i.e. Contraceptive method t= 3.88 and Sterilization t=3.11. It is concluded that districts with middle sex-ratio and married respondents were in favor of family planning and birth control.","PeriodicalId":14043,"journal":{"name":"International journal of home science","volume":null,"pages":null},"PeriodicalIF":0.0,"publicationDate":"2021-09-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"87595420","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

It holds 12 times extra protein equaled to milk, 6 times more than rice grain, 4 times added than wheat and 2 times more compared to pulses. Provide several nutrients in good amount like fat and water soluble vitamins (A, D, B, C), minerals (calcium, iron, phosphorus) and isoflavones which have phytoestrogen property prevents osteoporosis and also decrease the possibilities of cardiovascular disease and different cancers. Incorporation of nutrients or non-nutritive bioactive compounds into food products for prevention of micro and macro nutrients deficiencies and maintenance of health of population with cost-effective technique is known as food fortification. The present study is planned to estimate sensory quality and overall consumer acceptability of different blends of fortified aloo tikki with soybean by hedonic rating test. For the preparation of different blends boiled grated aloo was blended with boiled grinded soybean at 4:0, 3:1, 2:2 and 1:3 ratio (Control group-Aloo tikki made by 100% potato, Sample A-75% Potato + 25% Soybean, Sample B-50% Potato + 50% Soybean and Sample C-25% Potato + 75% Soybean). The sensory characteristics of soy-fortify aloo tikki like appearance, texture, mouth feel and overall acceptability were evaluated by 50 panelists (Male 23 and female 27) by using 9-Point hedonic rating test. The results elaborated that majority of acceptability was seen for sample B (56%-Like extremely), followed by sample A (48%-Like very much) than sample C having (32%-Like extremely). Sample C have lower consumer acceptability compared to other samples but in comparative analysis between sensory characteristics of different blends sample A contain maximum acceptability regarding appearance (64%), Sample C contain higher percentage for texture (62%) and highest mouth feel acceptability was seen for sample B (52%). On the other hand overall acceptability of samples on gender basis, variations were seen among both male and female Conclusion drawn from this study unveiled that sample B which contain equal ratio of aloo and soybean was more preferred among both sexes and preference for sensory acceptability was also similar among both sexes. But variations were seen regarding overall acceptability among male and female.","PeriodicalId":14043,"journal":{"name":"International journal of home science","volume":null,"pages":null},"PeriodicalIF":0.0,"publicationDate":"2021-09-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"86221778","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

A large number of Indians have a lower intake of vitamins and other micronutrients which are needed. For example, our intake of Zinc, Vitamin C and D is generally lower than what is required for optimal immune function. Improving the nutritional status by including immunity boosting foods proves to be an essential factor in strengthening the immune system as well as managing the chronic conditions prevalent in the population. Objective: To understand the importance of immunity boosting foods and its beneficial effects on the biochemical parameters and to evaluate the dietary consumption of the participants. Methodology: A cross sectional study was conducted on the selected participants who were the residents of Mumbai. The study included two groups i.e., control and experimental. Both the groups were administered the pre intervention questionnaire after which only experimental group was counselled and after a period of three months again both the groups were administered the post intervention questionnaire. The data was analysed by using the Statistical Set of Social Software programme for Windows (SPSS, version 20). The analysation of data involved t-tests and Chi-Square tests. p value less than 0.05 was considered statistically significant. Results: The comparison between control and experimental group showed significant differences as the total energy intake, protein intake, zinc intake, Vit A and C intake was higher and fats and carbohydrate intake was lower in the experimental group as compared to the control group post the intervention ( p< 0.05). The significant changes observed in the consumption of healthy and beneficial food items was increased in the experimental group post the intervention ( p< 0.05). There were positive changes observed in the experimental group as their mean fasting blood sugar levels, blood pressure, LDL cholesterol was decreased and HDL cholesterol was increased whereas in the control group mean fasting blood sugar levels, blood pressure, LDL cholesterol was increased and HDL cholesterol was decreased ( p< 0.05). Conclusion: In the study it was found that the nutrtion counselling had an postive impact on the increased consumption of immunity boosting foods which inturn had an positive impact on the biochemical parameters and the dietary intake.","PeriodicalId":14043,"journal":{"name":"International journal of home science","volume":null,"pages":null},"PeriodicalIF":0.0,"publicationDate":"2021-09-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"88590830","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

Polyphenols' benefit on health is determined by the level absorbed as well as their bioavailability. The origin and types along with their contents found in different food resources of the various polyphenols, as well as their impact are important as these compounds provide many health advantages in the fight against diseases found in humans. Referring to a balanced food regime is always a crucial aspect in maintaining good health and nutrition in today's world. Certain researchers have deduced that a population that eats a certain meal (notably polyphenol-abundant regimens) have lower chances of developing a variety of chronic anomalies, including cancer, diabetes, coronary disease, obesity, and so on. Specifically, polyphenols and their types have been explored and reviewed making sure via its conclusions, future research on polyphenols becomes easier.","PeriodicalId":14043,"journal":{"name":"International journal of home science","volume":null,"pages":null},"PeriodicalIF":0.0,"publicationDate":"2021-09-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"89320150","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}
