Among the tests usedwere: angels machine, coarse granulometry, finegranulometry, specific weights, loose unit weights, unitweights, rodded unit weight, sulfate test, abrasion test, aswell as the preparation of specimens to be tested to simplecompression and to verify the resistances at ages of 7, 14,21, 21, 28 days. To establish the formulations, the Design Expert Ver 8.0 software was used; the substitution levels cover a range from 5% to 30%; the sponge method was used because it offers better crumb quality. Bread quality was analyzed in terms of chemical composition, specific bread volume, width/height ratio of the central slice, crumb structure and firmness, and sensory analysis. Starch thermal properties were studied in terms of starch hydration properties. The incorporation of the flour blend increased protein, lipid, fiber, ash and myoinositol phosphate contents. However, the literature recommends contemplating their relationship with the quality of customer service to minimize the investment risk. Determining this relationship is the main objective of this study within the context of the retail trade in the city of Guayaquil. For this purpose, a quantitative paradigm with a non-experimental design of descriptive and correlational scope is used, with a transversal cut using a sample of 340 cases. A measurement instrument based on the SERVQUAL model and adapted to the study context was applied to them. The results show that consumers are between 26 and 40 years old, more than half of them consume food and non-alcoholic beverages, and 94% are satisfied with the quality of service received. The objective of this article is to propose a virtual teaching strategy for the strengthening of online learning of the subject Entrepreneurship and Management in the baccalaureate. The research conducted is hermeneutic in approach and descriptive-explanatory in scope. The sample selected was 58 students of the third year of high school of the Unidad Educativa Fiscal Durán, a probabilistic intentional sampling by quotas was applied, which facilitated the interpretation of results on the lack of use of virtual learning environments and technological tools by students and teachers. In addition, educators presented difficulties in planning, development and evaluation for online classes.
