Cookies were created with composite flour barley or oat substituted with various ratios of corn and sorghum in this investigation. To minimize phytate, whole grains were treated with vitamin C and an acetate buffer (pH 4.8). Treatments led to a significant reduction in phytate of loss percentages ranging from 79.77 to 85.34 for vitamin C and 81.04 to 85.59 for acetate buffer. Cookies samples were examined for physicochemical and sensory qualities. Increased corn and sorghum % increased weight, diameter, and spread ratio. Comparison with control, barley cookies had no significant differences in overall acceptability; in contrast, oat cookies had substantial differences. Protein declines as the percentage of corn and sorghum increases. Increased corn and sorghum ratios increased fat, fibre and ash contents. Calorific value of barley and oat biscuits (BC1 and OC1) was the lowest. Increasing proportions of corn and sorghum flour in cookies improved total, soluble, and insoluble dietary fibre. During storage periods (90 days), water activity of barley and oat cookies increased marginally, fracturability increased with barley blends compared to oat blends cookies. Changes in acid and peroxide values of cookies during storage produced slightly variable results, but control had the greatest value. The obtained results indicated that red table beetroot powder was found to possess a higher amount of protein, ash, crude fibers, dietary fibers, and minerals than wheat flour, which was characterised by higher lipids and total carbohydrates. Results also showed that both water absorption, degree of softening, and dough energy of wheat flour were gradually increased as the level of substitution with red table beetroot powder increased. Furthermore, substituting red table beetroot powder for wheat flour increased the chemical composition percentage (moisture, crude protein, lipids, ash, and crude fibers), minerals content (Na, K, Ca, Mg, Mn, Fe, Zn), and dietary fibre content (total, soluble, and insoluble dietary fibers) of biscuit samples. However, total carbohydrates decreased in parallel with increasing the level of substitution compared with the control biscuit sample. In addition, both of the biscuits' weight, diameter, and spread ratio were gradually increased by the rising amount of substitution in compared to the control sample, while the biscuits' volume, specific volume, and thickness were decreased. The applied image processing techniques comprising relative band depth, band ratios, minimum noise fraction and color band composites supervised classification as well as two spectral mapping methods (matched filtering and mixture tuned matched filtering) were efficient in the granitic rocks discrimination and alteration end-members (hematite, muscovite, kaolinite and chlorite) identification. These results easily differentiate the mélange matrix into a) metasediments rich in blocks and b) metasediments poor in blocks. Also, the granitic rocks are classified into granodiorite, monzogranite, syenogranite, alkali-feldspar granite and alkaline (riebeckite) granite. The associated abnormal level of radioactivity exhibits 18 ppm and 31 ppm for eU, eTh respectively and mainly restricted to the alkali-feldspar granites, which significantly have higher hematite and muscovite content rather than the other exposures. A detailed geologic map of scale 1:100,000 is constructed from the interpretation of the processed ASTER images, fieldwork and petrographic studies. The present study aims to prepare edible nano-coatings, mainly chitosan nanoparticles (CsNps) developed by incorporating fruit peel extracts (pomegranate or banana) as a low-cost natural edible coating material to improve the antifungal activity and functional properties of the edible coating. The synthesized nanoparticles were characterized by Dynamic light scattering (DLS) and zeta potential (ZP), Fourier transform infrared (FTIR) spectroscopy analysis, high-resolution transmission electron microscopy (HR-TEM) and X-ray spectroscopy (XRD). Total phenolic contents (TPC) were 27.79 and 19.78 mg GAE/100g DW for pomegranate peel extract (PmPE) and banana peel extract (BaPE), respectively. While the antioxidant activity (AA) was 87.07 and 79.81% for the same extracts. The antifungal activity of CsNps coating either alone or loaded with fruit waste peel extracts (FPE) of PmPE or BaPE was evaluated against the tested phytopathogenic fungi (Botrytis cinerea, Alternaria alternata, penicillium digitatum, Aspergillus flavus and Aspergillus niger) at concentrations of 0.2, 0.4 and 0.8 mg/ml (by mycelial radial growth). The results showed that chitosan nanoparticles loaded with pomegranate peel extract (PmPE-CsNps at 0.8 mg/ml) had highly effective (100 %) which achieved completely inhibition against all tested phytopathogenic fungi. The synthesized nano-coatings were non-cytotoxic for the normal human fibroblasts (MRC-5). Omnia, Ali","doi":"10.36632/csi/2022.11.1.8","DOIUrl":"https://doi.org/10.36632/csi/2022.11.1.8","url":null,"abstract":"In this study, some heavy metals and trace elements (iron, copper, zinc, lead, cadmium, and tin) were determined in selected canned tuna fish and processed meat products available on the local Egyptian market using atomic absorption spectroscopy (AAS). The results indicated that the Fe, Cu, Zn, Pb, Cd, and Sn levels in canned tuna ranged between 48.97–60.01, 1.81–4.5, 17.19–27.57, 1.51–1.82, 0.96–3.85, and 1.06–3.67 mg/kg, respectively. In the selected meat products (luncheon, beef burger, beef frankfurter, and oriental sausage), the levels of Fe, Cu, Zn, Pb, and Cd varied between 14.27– 26.36, 1.31– 4.48, 9.53–19.59, 0.78–2.88, and 1.50–3.54 mg/kg, respectively. Statistical analysis of the canned tuna results indicated that Fe, Cu, and Cd were strongly related to the production date and, potentially, the catch date, while Pb and Zn were related to the can material and solder. Statistical analysis of meat products data indicated that different meat processing preparations and operations did impact the levels of the detected elements in the tested produce.
