Meniran tea contains phytochemicals like teas in general such as saponins, phenolics, flavonoids, and tannins. This study aims to determine the effect of the meniran leaf tea brewing method on the preference value and content of an antioxidant activity. This research was a laboratory experiment with a completely randomized design (CRD). Meniran tea was brewed using the Decoction Brew (DB), Cold Brew (CB), and True Brew (TB) methods with filter and non-filter treatments. The organoleptic test in this study used 30 untrained panelists. Organoleptic test data collection consisting of color, aroma, and taste attributes were assessed using a 9-scale hedonic scale questionnaire. Organoleptic data that had been collected was then tested for normality using Kolmogorov Smirnov, if normally distributed, continued with ANOVA statistical test and then Duncan's further test with 99% CI. Organoleptic test results in the form of attributes of color (p= 0,000), aroma (p= 0,003), and taste (p= 0,000) of panelists preferred tea with the TBF brewing method. Based on the antioxidant activity content of selected meniran tea (TBF) around 2,33 – 2,81 mg/mL. The potential possessed by coastal areas is not accompanied by the welfare of the lives of the people who occupy low economic strata, including in fulfilling nutrition. This study aimed to determine the relationship between energy consumption, protein, fat, carbohydrates, zinc, and iron with the incidence of stunting aged 1-59 months in fishing families in Bengkulu city. The cross-sectional research method was carried out in 2020 in Padang Serai and Malabro villages, which are fishers' family areas in Bengkulu city. Samples were children under five and mothers respondents with a total of 74. Data on food intake of children under five, obtained through the Food Frequency Questionnaire-Semi Quantitative (SQ-FFQ) and analyzed by nutrisurvey and microtoice to measure height were analyzed by HAZ index. The analysis used Chi-square statistical test. The results showed that there was a relationship between intake of energy, protein, fat, carbohydrates, and zinc in the incidence of stunting under five (p < 0,05), and there was no relationship between iron intake and the incidence of stunting under five (p > 0,05). In conclusion, toddlers with adequate food intake are associated with the incidence of stunting in fishing families. This study aims to determine the effect of providing supplementary food of snakehead fish flour substitution (called PMT-Tibus) on the nutritional status of children under five stunted. The study design used a randomized pretest-posttest control design. The study was conducted in Makassar City in 2019, using a sample of 24 people in each group. Group-1 was given PMT-Tibus with online nutrition education, while group-2 was only given online nutrition education. PMT-Tibus is given every day while the mother’s nutrition education is conducted periodically for one month. Nutritional status data was collected using anthropometric methods—processing and analyzing data using SPSS. WAZ of group-1 was increased by 0,11 ± 0,28. Otherwise, the WAZ of group-2 was decreased by -0,11 ± 0,42. HAZ of group-1 and group-2 increased (0,22 ± 0,31 vs 0,24 ± 0,31). WHZ of group-1 increased by 0,4 ± 0,04 and group-2 was decreased by -0,37 ± 0,68. There was a significant difference in WAZ and WHZ scores between the two groups, respectively, whit all p values < 0,05. This study aims to determine the prevalence and determinants of stunting in primary school students. The study used a case-control design with a sample of 30 stunted children and 60 non-stunted control children. Interview data and measurement of height with microtoise. Stunting data was processed using WHO AnthroPlus software. Statistical analysis using Odds Ratio test and Binary Logistic Regression. The result, the prevalence of stunting in Sultan Daulat is 24%. The determinants of stunting are the mother's occupation (as a farmer) p= 0,035 and OR= 98.9, the father's job is not fixed (a laborer) p = 0.046 and OR= 22,9, and the incidence of diarrhea (p= 0,047; OR= 17,9), and low birth weight (p= 0,047; OR= 0,78). In conclusion, children with diarrhea and low birth weight are triggers for children to experience stunting, while sanitation conditions and drinking water consumed have no effect on stunting. Stunting prevalence in primary school-age children (PSAC) is still high in the third world and Indonesia. This present paper aimed to study the prevalence and the associated factors such as sex, school-area, and food intakes of stunting in PSAC in Sidoarjo, 2018. This study is cross-sectional research using secondary data from baseline data of emotional demonstration projects in primary school students. Two hundred students were recruited from four schools representing urban and rural areas in Sidoarjo. Food intake was interviewed using SQ-FFQ. Children height was measured using microtoice. HAZ-score was calculated using WHO Anthro Plus software. Student t-test was done to test any differences in stunting prevalence between sex and school areas. The Chi-square test was used to check the difference in proportion for categories. Our results suggested the stunting prevalence among PSAC in Sidoarjo was 18% and was significantly greater in the rural area (p= 0,010). School location has association with stunting (OR= 2,7; 95%CI 1,25-5,8). In conclusion, we did not find any significant difference in food intakes, although stunted children were more likely to consume energy and carbohydrate. The making of dried fish (Keumamah) is a method of preserving fish to prolong its shelf life. The study aimed to measure the storage time of dried fish (Keumamah) using vacuum packaging and irradiation. The study used an experimental design through the Randomized Control Trial (RCT) method. Statistically analyzed using ANOVA and advanced Duncan test with Confidence Interval (CI) of 95%. This study showed that vacuum irradiation could significantly preserve the colour, taste, flavour, and texture characteristics of the dried fish (p < 0,01) for all variables. The Total Plate Count (TPC) test and water, protein, and fat content analysis suggest a significantly better post-storage condition of the dried fish using a vacuum and irradiation combination. Meanwhile, the analysis of ash content did not show a significant difference between treatment and control groups (p= 0,386). Increased glucose allows free fatty acids to enter as raw material for forming triglycerides. Hs-CRP can be used to identify the most sensitive inflammatory markers in diabetes. This study aims to analyze the effect of sunflower seed biscuits on triglyceride levels and Hs-CRP in Wistar rats with type 2 diabetes mellitus. The method is a true experiment with a randomized pre-post test with a control group design. The research sample size was 24 male Wistar rats, divided into four control groups K(-), K(+), and treatment P1, P2. The intervention was carried out for 28 days, and triglycerides were measured by spectrophotometer, and Hs-CRP was measured using the ELISA method. Statistical analysis used three tests, namely the Paired T-Test, the Kruskal Wallis test, and the Spearman correlation test. There are differences after the intervention and changes between groups with triglyceride values before intervention 145 mg/dl and after intervention 145 mg/dl and Hs-CRP values before intervention 14.8 mg/l and after intervention 14,8 mg/l. Changes between groups of triglyceride and Hs-CRP levels after statistical tests (p= 0,000) and (p= 0,000), respectively. The conclusion is a provision of sunflower seed biscuits showed an effect on triglyceride and Hs-CRP levels of type 2 diabetes mellitus rats. Moringa leaves are rich in fiber and antioxidants that can prevent oxidative stress and reduce inflammation. This study aimed to see, measure, and analyze the effect of Moringa flour supplementation on IL-6 and LDL levels of dyslipidemic Sprague Dawley (SD) rats. The type of study was true-experiment with randomized pre-post. Test with control. Group design. Intervention for 28 days in 4 groups of SD rats (n= 24); a consisting group of healthy rats (K-), dyslipidemic rats (K+), dyslipidemic rats respectively given 0.1g/100g BW moringa flour (P1), and 0.2 g/100g BW moringa flour (P2). ELISA and CHOD-PAP methods measured IL-6 and LDL levels. Statistical analysis used Paired t-test, One-way Anova, and Post Hoc Bonferroni. The results showed a significant decrease in IL-6 and LDL levels in the intervention group compared to the non-intervention group (p= 0,000). The reduction of IL-6 levels in the P2 group was greater than that in the P1 group but not significant. The decrease. in LDL levels in the P2 group was significantly higher than in the P1 group. It is attributed to the fiber and antioxidant content in Moringa. Fiber that can bind cholesterol and bile acids, antioxidants can regulate fat metabolism, capture free radicals and prevent oxidative stress. The research aims to examine changes in eating behavior before and during the COVID-19 pandemic among adolescents and adult groups in Indonesia. A cross-sectional study on 563 subjects, with the subject's inclusion criteria, namely living in Indonesia, aged 12-55 years, willing to participate in the research by filling in informed consent and filling out a questionnaire via an online google form. The data obtained were grouped based on variables before and after the pandemic, then tested the normality of the data. Bivariate analysis used the Wilcoxon text because the data were not normally distributed. As a result, there was an increase in the subject's breakfast habits and frequency of eating. Subjects experienced changes in eating habits, namely an increase in the frequency, variety, and portion of consumption of animal protein, vegetable protein, vegetables, and fruit between before and during the COVID-19 pandemic (p <0,001). In addition, the habit of consuming fluids, supplements, and spices also experienced a significant increase, while the pattern of snacking decreased between before and during the pandemic (p <0,001). The study was conducted in June-November 2017. The design of this research was experimental using a completely randomized design (CRD). The food bar formulation was mixed with 20g and 25g tuna, while 20g and 25g mackerel fish. Organoleptic test data were analyzed using ANOVA. Proximate analysis of food bars using the AOAC method. Food bars' essential amino acid content was carried out using LCMS and total microbial analysis using the ALT method. Food bar analysis selected from the test results by semi-trained panelists and consumer panelists is f4 with 25g tuna mixing with indicators of color (p= 0,000), aroma (p= 0,003), taste (p= 0,040), and texture (p= 0,167). Food bar in 100 grams contains: energy 470,77 kcal, 15,65% protein, 24,13% fat, 47,74% carbohydrates, 2.14% ash, and 10.33% water. The results of the total microbial test on the food bar showed a value of 4,5 x 102 cfu/g and an Aw value of 0,86.
