It consisted in 3 steps: a survey to investigate meat purchasing and preparation habits among older people; recipe development by two professional chefs using techniques designed to ensure tender and juicy meat; home testing with two panels of older people assessing the feasibility of the recipes as well as the acceptability and the texture of the dishes. This work led to the creation of a recipe booklet comprising four technical sheets (choice of cuts, slicing against the grain, low-temperature cooking, cooking in liquid) and 15 recipes: 3 for each cooking method (pan-fried, oven-roasted and pot-braised), 3 confit-style dishes, and three based on minced meat recipes. This booklet provides a practical tool to maintain meat consumption among the older people, thereby supporting adequate protein intake and prevent undernutrition in this population.</div></div>","PeriodicalId":43722,"journal":{"name":"CAHIERS DE NUTRITION ET DE DIETETIQUE","volume":"61 1","pages":"Pages 61-74"},"PeriodicalIF":0.2,"publicationDate":"2026-03-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"147636747","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

L’inactivité physique, les comportements sédentaires, le manque de sommeil et les habitudes alimentaires sont largement reconnus comme les principaux déterminants de l’obésité chez l’enfant. Étant donné que les enfants adoptent de plus en plus des comportements défavorables à leur santé et compte tenu de la forte prévalence de l’obésité infantile en France, il est urgent d’améliorer l’efficacité des interventions visant à inverser ces tendances en concevant et en mettant en œuvre de nouvelles approches favorisant des modes de vie sains dès le plus jeune âge. Le programme Vivons en Forme (VIF), développé en France depuis 2011, est un programme de prévention communautaire, multi-acteurs et utilisant la méthodologie du marketing social pour promouvoir de saines habitudes de vie chez les enfants et leurs familles, notamment les familles plus touchées par l’obésité. Sa mise en œuvre repose sur la mobilisation des services des villes impliquées, en charge de l’éducation, de la restauration ou des activités périscolaires des enfants. L’objectif de cet article est de présenter une description détaillée de la méthodologie VIF, qui cible de façon itérative les thématiques liées au mieux manger, la lutte contre la sédentarité ou l’amélioration du sommeil chez les enfants. L’exemple de la thématique des écrans illustrera le processus mis en œuvre.</div></div><div><div>Sedentary behaviors, lack of sleep, and dietary habits are widely recognized as the main determinants of childhood obesity. Given that children are increasingly adopting behaviors detrimental to their health and considering the high prevalence of childhood obesity in France, it is urgent to improve the effectiveness of interventions aimed at reversing these trends by designing and implementing new approaches that promote healthy lifestyles from an early age. The Vivons en Forme (VIF) program, developed in France since 2011, is a community-based prevention program involving multiple stakeholders and using social marketing methodology to promote healthier lifestyles among children and their families, particularly those more affected by obesity. Its implementation relies on mobilizing city services involved in education, school meals, or extracurricular activities for children. The objective of this article is to provide a detailed description of the VIF methodology, which iteratively targets themes such as healthier eating, combating sedentary behavior, and improving children's sleep. The process is illustrated showcasing the topic of mitigating time spent in front of screens.</div></div>","PeriodicalId":43722,"journal":{"name":"CAHIERS DE NUTRITION ET DE DIETETIQUE","volume":"61 1","pages":"Pages 19-28"},"PeriodicalIF":0.2,"publicationDate":"2026-03-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"147636793","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

De nombreuses études chez les rongeurs ont montré le rôle majeur du tissu adipeux brun ainsi que celui du tissu adipeux beige – présentant des similitudes dans les propriétés métaboliques et sécrétoires mais également des différences qui restent encore à être mieux définies – dans la thermorégulation et dans le maintien de la balance énergétique. Chez l’homme, les tissus adipeux brun/beige sont très présents chez le nouveau-né, déclinent avec l’âge, et sont positivement associés à la santé cardiovasculaire et métabolique. Cependant, l’impact de ces tissus sur le métabolisme chez l’adulte est très controversé. Parallèlement à un potentiel rôle dans le maintien de l’homéostasie énergétique à l’échelle de l’organisme entier, ces tissus pourraient exercer des effets locaux par la création de microenvironnements spécifiques contribuant au bon fonctionnement d’organes présents à leur proximité. Dans cette revue, nous faisons le point sur la biologie de ces tissus aux capacités oxydatives remarquables, sur les méthodes de détection et sur les résultats d’études cliniques rétrospectives et prospectives étudiant leur rôle dans la santé humaine.</div></div><div><div>Brown adipose tissue is specialized in energy dissipation in the form of heat through the process of non-shivering thermogenesis. Numerous studies in rodents have demonstrated the major role of brown adipose tissue, as well as that of beige adipose tissue – which has similar metabolic and secretory properties but also differences that remain to be better defined – in thermoregulation and energy balance. In humans, brown/beige adipose tissues are very present in newborns, decline with age, and are positively associated with cardiovascular and metabolic health. However, the real impact of these tissues on human metabolism in adults remains highly controversial. In addition to their potential role in maintaining energy homeostasis at the whole organism level, these tissues may exert local effects by creating specific microenvironments that contribute to the proper functioning of tissues and organs present in their close proximity. In this review, we describe the biology of these tissues exhibiting remarkable oxidative capacities, the methods enabling their detection, and retrospective and prospective clinical studies investigating their role in human health.</div></div>","PeriodicalId":43722,"journal":{"name":"CAHIERS DE NUTRITION ET DE DIETETIQUE","volume":"61 1","pages":"Pages 100-114"},"PeriodicalIF":0.2,"publicationDate":"2026-03-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"147636794","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}
