This study aimed to analyze the quality and level of liking of the spice cookie formula and the fiber and antioxidant content of the selected cookie formula. The research method used a factorial complete randomized design with the treatment of wheat flour substitution using arrowroot flour and canna flour. There were three levels of substitution ratio, namely 50:50, 25:75, and 0:100, resulting in six formulas. The variables measured were sensory quality and level of liking using an organoleptic test by 30 semi-trained panelists. Organoleptic test data were statistically analyzed using the Kruskal Wallis test and Mann-Whitney further test. The two best formulas were selected using the exponential comparison method and then analyzed for dietary fiber content and antioxidant activity. The results showed that among the six formulas, there were significant differences in texture and aftertaste of the sensory quality and level of liking (p-value<0,05). The selected formulas were 50:50 substitution ratios of either arrowroot flour or canna flour. Cookies with canna flour substitution had a dietary fiber content of 9,6%, while cookies with arrowroot flour substitution were 7.8%. The antioxidant activity of cookies with canna flour substitution amounted to 9,5 mg/100g, while cookies with arrowroot flour substitution amounted to 12,0 mg/100g. In conclusion, spice cookies with a 50:50 ratio of canna flour and wheat flour substitution have the highest fiber content with strong antioxidant activity.","PeriodicalId":408003,"journal":{"name":"Jurnal Ilmiah Kesehatan (JIKA)","volume":"144 1","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2023-08-31","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"123599712","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

This study aims to determine the contribution of genetic factors and food intake to the occurrence of stunting in toddlers in the Rajapolah Community Health Center area. This research used an observational methodology with a case-control design involving a total of 66 toddler participants. Among them, 33 people were identified as having stunting (with height-for-age Z-score < -2 SD), while 33 people had normal nutritional status (height-for-age Z-score => -2 SD). The participants were selected using purposive sampling. Data analysis includes applying the unpaired T test for normally distributed data, as well as the Mann-Whitney test for non-normally distributed data. The results of this investigation highlight significant differences in genetic aspects of height (both father and mother) between the stunted and non-stunting toddler groups (with p values of 0,029 and 0.046, respectively). In addition, nutritional intake, including energy (p-value<0,001), protein (p-value<0,001), fat (p-value=0,01), and carbohydrates (p<0,001), was between the two groups. Based on these findings, it can be concluded that genetic factors (in the form of parental height) and nutritional intake (including energy, protein, fat and carbohydrates) have a significant influence on the occurrence of stunting in toddlers. Therefore, this research is a basis for designing interventions aimed at mitigating the problem of stunting within the operational scope of the Rajapolah Community Health Center.","PeriodicalId":408003,"journal":{"name":"Jurnal Ilmiah Kesehatan (JIKA)","volume":"1 1","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2023-08-31","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"122052787","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

This study aimed to evaluate if the hypoglycemic effects of K. hospita extract and fractions were related to its inhibition on the activity of $alpha$-amylase and $alpha$-glycosidase enzymes. K. hospita leaves were extracted with 96% ethanol and then subjected to liquid-liquid partition using n-hexane, ethyl acetate, and water as solvents. The inhibitory capacity of ethanolic extract and its fractions were tested against $alpha$-amylase and $alpha$-glycosidase enzyme activity and compared to acarbose. The in vitro study revealed that the IC50 of ethanolic extract, hexane, ethyl acetate, and water fractions were 1496,8 µg/mL, 1266,7 µg/mL, 12577,5 µg/mL, and 5217,0 µg/mL, respectively, against alfa-amylase activity. Whereas, for $alpha$-glycosidase activity, the IC50 values were 1341,2 µg/mL, 25470,0 µg/mL, 64450,0 µg/mL, and 1291,4 µg/mL, respectively. These values were markedly greater than those of the acarbose (7,4 and 5,5 µg/mL, respectively). From the research results, it was concluded that K. hospita leaf extract had a high IC50 value from K. hospita extracts and fractions, which indicated that the hypoglycemic effect of K. hospita was not related to the inhibition of the $alpha$-amylase and $alpha$-glycosidase enzymes.","PeriodicalId":408003,"journal":{"name":"Jurnal Ilmiah Kesehatan (JIKA)","volume":"1 1","pages":""},"PeriodicalIF":0.0,"publicationDate":"2023-08-31","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"139347545","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}
