Namun, mie memiliki kandungan protein, serat, dan kalsium yang rendah. Peningkatan nilai gizi pada mie dapat dilakukan dengan menggunakan tepung daun kelor (TDK). Namun, tepung ini rasanya pahit. Tujuan dari penelitian ini adalah mengetahui profil mutu gizi (protein, lemak, air, abu, karbohidrat, serat kasar, kalsium), fisik (daya putus), dan organoleptik (tingkat kesukaan panelis) dari mie basah dengan TDK. Pada penelitian ini perlakuan adalah perbandingan antara tepung terigu (TT) dan TDK, yaitu 100:0 (kontrol), 95:5, 90:10, dan 85:15. Setiap perlakuan diulang 5 kali. Protein, lemak, air, abu, dan karbohidrat dianalisis proksimat, serat kasar dengan metode analisis asam basa, dan kalsium dengan metode Atomic Absorption Spectrofotometer (AAS) . Daya putus mie diukur dengan menggunakan Tensile Strength Instrument. Mutu organoleptik dinilai oleh 20 orang panelis agak terlatih. Hasil penelitian menunjukkan bahwa penggunaan TDK secara signifikan memberikan perbedaan pada semua aspek mutu yang diukur (p 0,05). Kandungan kalsium pada mie basah kelor meningkat minimal 3,5 x kontrol. Daya putus dan tingkat kesukaan panelis terhadap mie menurun drastis sejak peningkatan konsentrasi dari TDK sebanyak 10%. Mie yang paling disukai panelis adalah mie basah dengan TT:TDK=95:5%. Kesimpulan, TDK hanya dapat disubstitusikan pada mie basah maksimal 5%. Kata kunci : mutu gizi, daya putus, organoleptik, mie, tepung daun kelor Abstract Noodles are food product favored by the public. However, noodles have a low content of protein, fiber, and calcium. Increasing the nutritional value in noodles can be done using Moringa leaf flour. However, this flour tastes bitter. This study aimed to determine the profile of food quality including nutrition (protein, lipid, moisture, ash, carbohydrate, crude fiber, calcium), physical quality (breaking strength) and organoleptic property (panelist preferences) from wet noodles with Moringa leaf flour. In this research, the treatment was the ratio between wheat flour and Moringa leaf flour, namely 100:0 (control), 95:5, 90:10, and 85:15. Each treatment was repeated five times. Protein, lipid, and carbohydrate were analyzed using proximate analysis, crude fiber was using the acid-base analysis method, and calcium was using the Atomic Absorption Spectrophotometer (AAS) method. The breaking strength of noodles was measured using Tensile Strength Instrument. Twenty rather-trained panelists assessed the organoleptic quality. The results showed that the use of Moringa leaf flour significantly provided differences in all measured aspects of quality (p 0.05). Calcium content in moringa wet noodles increased by at least 3.5 times if compared to control. The breaking strength and the level of preference of panelists to the noodles dropped dramatically since the concentration of Moringa leaf flour increased by 10%. Diperlukan sebuah upaya untuk mengatasi masalah ketergantungan terhadap komoditas beras dan bahan impor lainnya. Kegiatan diversifikasi dapat digunakan untuk mencari alternatif bahan pangan pokok alternatif. Tujuan penelitian ini adalah untuk mengetahui perbandingan preferensi konsumen pada produk nasi jagung putih dan nasi putih, pengaruh aspek sensori terhadap keputusan pembelian produk beras jagung putih untuk dijadikan sebagai pangan pokok alternatif, serta karakteristik kimia nasi jagung putih dan mengetahui potensi produk beras jagung sebagai pangan pokok alternatif. Penelitian ini menggunakan metode deskriptif untuk data laboratorium, metode dependent T-test untuk analisis data organoleptik, dan metode regresi linier berganda untuk mengetahui aspek sensori terhadap keputusan pembelian produk. Hasil pengujian organoleptik menunjukkan bahwa terdapat perbedaan yang signifikan tingkat kesukaan responden terhadap produk nasi putih dengan nasi jagung putih. Sampel nasi jagung putih mengandung protein sebesar 2,73%; lemak 0,08%; kadar air 77,52%; kadar abu 0,62%; karbohidrat 19,04%; total gula 1,66%; serat pangan 19,53%; dan total energi sebesar 87,84%. Hasil keputusan pembelian produk terhadap aspek kenampakan, cita rasa, dan tekstur dihasilkan bahwa aspek cita rasa nasi jagung putih sangat berpengaruh dalam keputusan pembelian produk. Sebanyak 60,67% responden menyatakan bahwa beras jagung putih berpotensi untuk dijadikan pangan pokok alternatif dan proporsi beras jagung putih:beras putih yang dapat dikonsumsi dan diterima oleh responden adalah sebesar 30,4 : 69,6.. Kata Kunci: Jagung Putih, Preferensi konsumen, Diversifikasi, Pangan Pokok Abstract The dependence of Indonesian citizen on rice is quite high when the amount of rice production falls. To overcome this problem, efforts are needed to reduce this dependence on rice and other imported food ingredients. Diversification can be used to find other staple food alternatives. The purpose of this study was to determine the comparison of consumer preferences on products of white corn rice and white rice, the effect of sensory aspects on the purchasing decision of white corn rice products as a staple food alternative, the chemical characteristics of white corn rice, and finding the potential of white corn rice products as a staple food alternative. This study used descriptive method for laboratory data, dependent T-test method for organoleptic data analysis, and multiple linear regression method to determine the sensory aspects of product purchasing decisions. The organoleptic test results showed that there were significant differences in the respondents' preference for white rice and white corn rice. The sample of white corn rice contains 2.73% protein; 0.08% fat; 77.52% moisture content; 0.62% ash content; 19.04% carbohydrate; 1.66% total sugar; 19.53% food fiber; and 87.84% total energy. Telah dilaporkan efikasi yang baik dari pengobatan TB di berbagai daerah, keberhasilan pengobatan TB dipengaruhi oleh banyak factor termasuk status nutrisi. Penelitian ini bertujuan untuk menemukan adanya hubungan indeks massa tubuh dan albumin dengan konversi sputum pasien tuberculosis, khususnya pasien tuberculosis paru positif kuman Basil Tahan Asam. Penelitian ini dilaksanakan di dua Pusat Kesehatan Masyarakat di Kota Medan antara bulan Oktober dan Nopember 2018. Seluruh subjek penelitian sejumlah 39 pasien TB dengan positif kuman Basil Tahan Asam ikut serta. Subjek penelitian menerima pengobatan TB sesuai panduan. Indeks masa tubuh, albumin, dan sputum diukur dengan menggunakan stature meter dan timbangan digital. Proporsi subjek penelitian di bawah normal, normal dan di atas normal adalah 13 (33.3%), 21 (53.9%) and 5 (12.8%), berturut-turut. Kadar albumin termasuk kadar normal ditemukan pada 25 subjek penelitian (64.1%), dan selebihnya termasuk kategori rendah. Indeks massa tubuh normal berhubungan bermakna dengan peningkatan kadar albumin ( p <0.05). setelah dua bulan pemantuan terlihat konversi sputum berhubungan bermakna dengan nilai indeks massa tubuh yang normal dan atau kadar albumin yang normal ( p <0.05). Simpulan yang didapat adalah status nutrisi adalah faktor penting dalam pengobatan TB. Kata kunci : albumin, Indonesia, indeks massa tubuh, konversi sputum, tuberculosis Abstract Tuberculosis (TB) remains a major public issue in Indonesia including in North Sumatra province. Despite reported good efficacy of TB treatment in the region, the success of treatment depends on many factors including nutritional status. This study aims to determine the relationship between Body Mass Index and Albumin level with sputum conversion in AFB-positive pulmonary TB patients.The study was done in two primary health centres in Medan between October and November 2018. A total of 39 newly diagnosed TB patients with confirmed AFB-positve were included in the study.Participants received TB treatment according to the national guidelines. Body mass index, albumin, and sputum were measured using a stature meter and a digital scale.The proportion of participants with below normal, normal and above normal BMI status were 13 (33.3%), 21 (53.9%) and 5 (12.8%), respectively. Level of albumin was determined as normal in 25 participants (64.1%), and the remaining as low. Normal BMI status was significantly associated with increased albumin level ( p <0.05). At 2 months follow-up, the sputum conversion was observed in 24 individuals (61.5%), and the conversion was significantly associated with normal BMI and/or normal albumin level ( p <0.05). We concluded that nutritional status is an important factor in the success of TB treatment . Akan tetapi, masih terdapat perdebatan mengenai kaitan antara stunting pada anak-anak dengan kejadian kegemukan maupun obesitas pada usia-usia selanjutnya. Penelitian ini bertujuan untuk menganalisis trajektori IMT/U dari anak-anak hingga remaja pada anak yang memiliki riwayat stunting dan normal. Penelitian ini merupakan penelitian kohort retrospektif , dengan menggunakan data sekunder Indonesia Family Life Survey (IFLS) yang merupakan kolaborasi dari Research and Development (RAND) dan Survey Meter . Subjek pada penelitian ini adalah 314 (43.6%) anak yang memenuhi kriteria inklusi dan eksklusi. Pendekatan yang digunakan untuk mempelajari trajektori IMT/U adalah Individual Growth Curve (IGC) model. Analisis IGC dilakukan dengan prosedur Linear Mixed Model pada IBM SPSS Statistics versi 25. Hasil penelitian ini menunjukkan bahwa terdapat selisih nilai z-score IMT/U sebesar 0.505 (β= -0.505; SE= 0.138; p<0.01) antara anak yang mengalami stunting dan normal pada awal pengukuran . Nilai z-score IMT/U anak stunted akan mengalami penurunan 0.078 kali lebih kecil (β= -0.078; SE= 0.011; p<0.01), akan tetapi kemudian mengalami peningkatan 0.011 kali lebih tinggi (β= 0.01; SE= 0.002; p<0.01) dibandingkan dengan anak normal . Penelitian ini menunjukkan bahwa terdapat perbedaan trajektori IMT/U anak yang memiliki riwayat stunting dan normal. Kata kunci : IMT/U; stunting ; trajektori Abstract Globally, linear growth failure is the most common form of childhood malnutrition, with around 165 million children under five are stunting. However, the link between stunting in children with the risk of overweight or obesity at later ages are still debated. This study aimed to analyze the trajectory of BAZ from children to adolescents in children who were stunted and normal. This study was a retrospective cohort study, using secondary data from the Indonesia Family Life Survey (IFLS) which is a collaboration of RAND and Survey Meter. The subjects in this study were 314 (43.6%) children who met the inclusion and exclusion criteria. BAZ trajectory approach used was the Individual Growth Curve (IGC) model. IGC analysis was carried out by Linear Mixed Model procedure using IBM SPSS Statistics version 25.  This study indicated that there was a 0.505 (β= -0.505; SE= 0.138; p<0.0 1 ) difference in the z-score of BAZ between children who were stunted and normal at the initial measurement. The decreasing of stunted child’s BAZ was 0.078 times smaller (β= -0.078; SE= 0.011; p<0.0 1 ) , but then the BAZ would increase 0.011 times higher (β= 0.01; SE= 0.002; p<0.01) than the normal children. This study showed that there were differences of BAZ trajectory between stunted and normal children . Kata kunci : hemoglobin, vitamin C, remaja putri Abstract Hemoglobin (Hb) is a cell component that has a role in carrying oxygen and carbon dioxide, and an anemia condition is found when blood Hb level is below 12 g/dL. Adolescent is an age group that is prone to anemia, especially young women who experience monthly menstrual cycle. The risk of anemia can be prevented by consuming a healthy diet rich in iron. However, iron absorbed in the body depends on food ingredients that can inhibit or increase iron absorption. One of the foods that can increase the nutrient absorption is vitamin C. This study aims to recognize the correlation between vitamin C intake and hemoglobin level in female adolescents in Public Senior High School 5 (SMA Negeri 5) in Malang. The type of this study was analytical observation using a cross sectional design. The population in this study was female adolescents in SMА Negeri 5 Mаlаng with a total of 58 respondents, and the statistical test used was the Pearson correlation statistical test. Results from the statistical test showed that there is no relationship between vitamin C intake and hemoglobin level in female adolescents in SMА Negeri 5 Mаlаng with p-value=0.383 (p>0.05), the average vitamin C intake was 140 ± 85.19 mg, and the mean value of Hb level of the female adolescents was 12.7 ± 1.33 g/dL. This study concludes that there is no relationship between vitamin C intake and the hemoglobin level in female adolescents in SMA Negeri 5 Malang. Remaja putri termasuk kelompok yang rentan mengalami masalah gizi. Asupan makan yang buruk menjadi penyebab umum masalah gizi pada remaja. Keseimbangan antara zat gizi yang masuk dibutuhkan untuk kesehatan yang optimal. Penelitian ini menggunakan desain cross sectional yang bertujuan untuk mengetahui hubungan asupan zat gizi dan status gizi pada remaja putri. Data yang digunakan merupakan data primer berupa karakteristik responden. Sampel yang digunakan adalah 150 remaja putri di SMK Sumpah pemuda 2 Ciawi Bogor. Uji statistik yang digunakan adalah uji korelasi Spearman. Persentase responden dengan asupan energi cukup sebesar 73,3%, persentase responden dengan asupan protein kurang sebesar 88%, persentase responden dengan dan asupan karbohidrat cukup sebesar 51,3%. Kesimpulan penelitian ini adalah Terdapat hubungan yang signifikan antara asupan energi, protein, dan karbohidrat dengan status gizi. Untuk mencapai status gizi optimal, remaja harus memenuhi kebutuhan asupan energi dan zat gizi makro, terutama asupan protein yang sangat dibutuhkan dalam masa pertumbuhan. Kata kunci: Remaja putri, Asupan gizi, Status gizi Abstract In adolescence, students are more concerned about physical appearance. Female adolescents are a group particularly vulnerable to nutritional problem. Poor food intake becomes a common cause of nutritional problems in adolescents. Balance between nutrition intakes is needed for optimal health. This study used a cross sectional design which aimed to determine the relationship between nutrition intake and nutritional status in female adolescents. The data used were primary data in a form of respondents’ characteristics. The sample used was 150 female adolescents in SMK Sumpah Pemuda 2 Ciawi Bogor. The statistical test used was the Spearman correlation test. The percentage of respondents with sufficient energy intake was 73.3%, the percentage of respondents with less protein intake was 88%, the percentage of respondents with and enough carbohydrate intake was 51.3%. There is a significant relationship among energy, protein, and carbohydrate intake with nutritional status. To reach optimal nutritional status, adolescents must meet the needs of energy intake and macro nutrients, especially protein intake that is highly needed in the growing period. Remaja cenderung mudah mengikuti pengaruh teman sebayanya, sehingga pendekatan positif berupa kelompok pendidik sebaya diharapkan mampu memperbaiki sikap dan perilaku gizi seimbang pada remaja. Penelitian ini bertujuan untuk menilai perubahan pengetahuan, sikap, dan perilaku gizi seimbang remaja setelah diberikan edukasi dari kelompok teman sebaya. Metode penelitian adalah quasy experiment dengan rancangan two group pre-post test design . Penelitian dilakukan di MTS Negeri Model 1 Limboto. Pengambilan sampel secara accidental sampling . Sampel untuk kelompok educator sebanyak 30 siswa, sementara yang menjadi sasaran target remaja kelompok peer educator sebanyak 128 siswa. Variabel penelitian meliputi pengetahuan, sikap dan perilaku gizi seimbang dikumpulkan sebelum dan setelah pemberian edukasi gizi. Analisis data menggunakan uji paired t-test untuk membandingkan skor masing–masing variabel. Hasil penelitian menunjukkan bahwa kelompok remaja peer educator terjadi peningkatan skor pengetahun 28,77 ± 23,58 ( p-value =0,000), skor sikap 4,72 ± 5,99 ( p-value =0,000), skor perilaku gizi seimbang 7,56 ± 8,26 ( p-value =0,000), sementara pada kelompok remaja sasaran kelompok peer educator terjadi peningkatan skor pengetahun 2,17 ± 15,05 ( p-value =0,104), skor sikap 0,86 ± 6,57 ( p-value =0,140) dan skor perilaku gizi seimbang 1,14 ± 9,97 ( p-value =0,198). Kesimpulan dari penelitian ini adalah terjadi peningkatan skor pengetahuan, sikap, dan perilaku gizi seimbang secara signifikan pada kelompok peer educator , namun tidak signifikan pada kelompok sasaran peer educator . Kata kunci : pengetahuan, sikap, perilaku, gizi seimbang, peer educator Abstract Adolescence period is categorized as a group prone to nutritional problems and has high health risk caused by rapid growth and development. Adolescents tend to follow their peers’ influence, thus a positive approach in a form of peer educators is expected to improve attitudes and behavior on balanced nutrition among adolescents. The study aims to assess the changes of knowledge, attitudes, and behavior about balanced nutrition in adolescents after given education from peer groups. The research method used was quasy experiment with two group pre-post test design. The study was conducted in Islamic Junior High School 1 Limboto. Sampling was taken by accidental sampling. The sample for peer educators was as many as 30 students, while the targeted adolescents of the peer educators were 128 students. The research variables including knowledge, attitudes, and behavior on balanced nutrition were collected before and after the provision of nutritional education. Varietas ini di masa yang akan datang dikhawatirkan hilang, sehingga diperlukan upaya revitalisasi pemanfaatan salak ini yaitu dengan diversifikasi produk olahan serta didukung dengan upaya sosialisasinya. Tujuan penelitian ini adalah melihat perubahan pengetahuan dan sikap masyarakat dalam memahami dan mendukung upaya pengembangan dan diversifikasi olahan salak Manonjaya sebagai pangan lokal untuk mengatasi masalah gizi khususnya di Manonjaya melalui penyuluhan gizi. Penelitian ini menggunakan desain one group pretest - posttest. Instrumen yang digunakan adalah kuesioner tervalidasi. Metode pengambilan sampel adalah purposive sampling. Penelitian dilakukan di Kecamatan Manonjaya Kabupaten Tasikmalaya bulan Mei - Agustus 2016. Media penyuluhan yang digunakan adalah booklet dan demo produk olahan salak Manonjaya. Responden penelitian yaitu siswi SMPN 1 Manonjaya, guru, pengelola kantin, orang tua siswa, dan masyarakat umum dengan jumlah 61 orang. Hasil intervensi penyuluhan gizi menunjukkan rata-rata pengetahuan responden tentang Salak Manonjaya dan hasil olahannya meningkat secara signifikan dari 43,72 sebelum intervensi menjadi 73,11 setelah intervensi. Peningkatan penge-tahuan ini diperkuat dengan komitmennya dalam sikap yang menunjukkan adanya pemahaman dan dukungan untuk memanfaatkan olahan salak Manonjaya sebagai salah satu alternatif pemenuhan kebutuhan gizi masyarakat. In the future, this variety may extinct, thus efforts are needed to revitalize the use of this salacca by diversifying processed products and supported by the socialization. The purpose of this research was to see the changes in knowledge and attitude of community in understanding and supporting the effort to develop and diversify Manonjaya salacca as local food to overcome nutrition problem especially in Manonjaya through nutritional counseling. Provinsi Nusa Tenggara Barat (NTB) merupakan daerah yang berhasil memberikan ASI eksklusif. Wilayah Gangga memiliki cakupan terendah di NTB yaitu 30,4%. Penelitian ini mencoba menggali secara bersamaan prediktor munculnya masalah yang ada di wilayah Gangga yaitu berupa pengetahuan ibu, dukungan sosial baik dari suami, keluarga dan teman serta dukungan dari tenaga kesehatan. Desain penelitian observasional analitik cross-sectional digunakan dalam penelitian ini dengan memberikan kuesioner pada 165 responden yang memiliki bayi usia lebih dari 6-12 bulan. Hasil penelitian menunjukkan hanya 38,2% responden memutuskan memberikan ASI eksklusif di Gangga. Hasil uji regresi logistik bineri pada model terbaik menunjukkan variabel yang paling kuat berpengaruh berturut-turut adalah dukungan sosial suami (p=0,001), dukungan tenaga kesehatan (p=0,016), dukungan sosial keluarga (p=0,020) dan dukungan sosial teman (p=0,049). Sedangkan pengetahuan ibu (p=0,171) memiliki pengaruh yang tidak signifikan. Tingginya pengetahuan, besarnya dukungan sosial suami, keluarga, dan teman serta dukungan tenaga kesehatan secara simultan memiliki pengaruh terhadap keputusan ibu dalam memberikan ASI eksklusif. Kata Kunci : Pengetahuan, dukungan sosial, dukungan tenaga kesehatan, ASI eksklusif Abstract The real practices show that there are still many mothers who do not give exclusive breastfeeding. West Nusa Tenggara (NTB) Province is an area that shows successful exclusive breastfeeding. Gangga area has the lowest coverage in NTB, as much as 30.4%. This research tried to simultaneously explore the predictors of the emergence of problems that exist in Gangga region in the form of mother’s knowledge, social supports from husband, family, and friends, and also support from health workers. A cross-sectional observational analytic design was used in this study by providing questionnaires to 165 respondents who had babies older than 6-12 months. The results show only 38.2% of respondents in Gangga decide to give exclusive breastfeeding. From binary logistic regression test result in the best model, the strongest influential variables consecutively are husband’s social support (p=0.001), health personnel support (p=0.016, family’s social support (p=0.020) and friend’s social support (p=0.049). While mother’s knowledge (p=0.171) shows insignificant influence. The high level of knowledge, the amount of social support of husband, family, and friends, and support of health workers simultaneously have an influence on the mother's decision in giving exclusive breastfeeding. Pengetahuan cara membaca label informasi gizi sangat diperlukan konsumen karena akan memengaruhi perilaku pemilihan makanan kemasan yang dikonsumsinya sehingga dapat memengaruhi status gizi yang dimiliki. Penelitian ini bertujuan untuk mengetahui perbedaan pengetahuan cara membaca label informasi gizi mahasiswa status gizi obesitas dan normal serta mengetahui hubungan pengetahuan cara membaca label informasi gizi terhadap perilaku pemilihan makanan kemasan. Penelitian ini merupakan penelitian observational analitik dengan pendekatan cross-sectional dengan teknik purposive sampling . Sampel dibagi menjadi dua kelompok, yaitu kelompok status gizi obesitas (n=33) dan kelompok status gizi normal (n=33). Peneliti meng-gunakan instrumen kuesioner yang telah divalidasi sebelumnya. Pada penelitian ini menunjukkan 51,5% mahasiswa status gizi normal memiliki tingkat pengetahuan cara membaca label informasi gizi yang cukup baik dibandingkan mahasiswa obesitas yang hanya 21,2%. Hasil uji beda dengan Mann Whitney juga menyatakan bahwa terdapat perbedaan tingkat pengetahuan cara membaca label informasi gizi dan perilaku pemilihan makanan kemasan antara mahasiswa status gizi obesitas dan normal (p=0,004 dan p=0,000). Penelitian ini menemukan hubungan pengetahuan cara membaca label informasi gizi dengan perilaku pemilihan makanan kemasan pada mahasiswa berstatus gizi obesitas dan normal menggunakan uji Spearman (p=0,004 dan p=0,007). Maka dapat disimpulkan bahwa tingkat pengetahuan cara membaca label informasi gizi mahasiswa status gizi normal lebih baik daripada mahasiswa obesitas saat memilih makanan kemasan.
