Objectives: to study the effect of pectolytic preparations on apple pulp; screening of effective enzymatic systems that hydrolyze polymers of plant raw materials. The data reflecting the efficiency of using enzymes of different specificity of action on the yield of apple juice and its viscosity are presented. β-glucanases, pectinases and proteases were used as enzymes, which contributed to higher juice yield. It was found that an increase in the consumption of β-glucanase beyond the rational one contributed to an increase in the depth of hemicellulose hydrolysis, but reduced the efficiency of juice yield. The effect of the pectolytic complex enzymes was more effective than that of the proteolytic, hemicellulase and cellulolytic enzymes. As a result of the experiments, it was found that the cellulolytic enzymes, hydrolyzing the structural polysaccharides of the plant cell, contribute to an increase in the juice yield of the raw material, without having a significant effect on reducing the viscosity of the juice, and even in some cases lead to its increase. The given graphical curves of the effect of enzymatic complexes of different specificity of action on the yield of apple juice show that all the tested indicators had an effect on increasing the juice yield and its extractivity. The object of the study was Holstein bulls (n = 17). The material for the study was frozen-thawed semen of bulls in the amount of 61 samples. Microbiological studies of sperm doses were carried out using standard nutrient media in accordance with GOST 32222-2013. The total number of microorganisms was calculated by the number of grown colony-forming units (CFU/ml) in 1 cm3, with subsequent determination of their morphological pro-perties. Sperm motility and morphology were determined using the Argus CASA program. The state of DNA in spermatozoa was studied by the acridine orange test (AO test) using a fluorescence microscope. The study revealed a high positive correlation (r = +0.940**) between the number of microorganisms in sperm and pathology in individual sperm segments. Analysis of variance confirmed a statistically significant effect of the number of microorganisms on sperm morphology F = 123.2 (p=0.000). The correlation relationship between the fragmentation index and the content of microorganisms has a high value (r = +0.965**). Sperm motility negatively correlates (r = –0.768**) with the number of microorganisms (CFU/ml). In the presence of Mycoplasma spp in the samples, the number of cows with fruitful insemination was 35.5 % due to reduced motility, morphology and high fragmentation of sperm DNA (58 %). Sperm motility in samples containing Mycoplasma spp averages 24.5 %, while in samples without these microorganisms it is 48.9 %. The paper presents the results of research on growing Arctic brake (Rubus arcticus L.) on acidic light sod-podzolic soils in the natural and climatic conditions of the Kostroma Region. Two soil fertilization options were used: 1) azophoska 400 kg/ha (N60P60K60 as the main fertilizer + N30P30K30 top dressing); 2) the developed nutrition system, including the main organomineral fertilizer containing humic substances and bacterial spores (Bacillus subtillis, Bacillus mucilaginosus) and 3 top dressings with solutions of the mineral fertilizer Akvarin in May, June and September (10 %, 6 and 3 %, respectively). Local application of organomineral fertilizers at a dose of 500 kg/ha with 3 additional feedings of water-soluble mineral fertilizers of the Akvarin brand containing macro- and microelements has a beneficial effect on increasing the microbiological activity of the soil, ammonifiers by 25.8 %, phosphate-mobilizing bacteria by 39.1 %, its agrochemical indicators, inclu¬ding the content of organic matter by 0.4 %, mobile phosphorus and exchangeable potassium by 7.6–12.4 mg/kg, the survival rate of R. arcticus plants, the formation of the bush habitus, with the additional formation of partial shoots by 35 pcs/bush, the physiological activity of plants, expressed in an increase in the productivity of photosynthesis by 38 % and a significant increase in the yield of berries to 53.2 g/m2 (by 47.6 %). Expanding the possibility of forming R. arcticus plantations on acidic sod-podzolic soils will increase the occupancy rate of fallow soils and put them into operation. The water activity aw value in confectionery has a significant impact on the shelf life of cased sweets with ganache filling. The objective of the study was to develop a method for increasing the shelf life of chocolate ganache fillings by reducing water activity and optimally selecting hydrophilic recipe components while maintaining high organoleptic properties of cased sweets. The objects of the study were: control ganache without adding additional sugars; model samples of ganaches with hydrophilic agents, which included invert syrup, dextrose and sorbitol, taken in the ratio 1:1:1.5 (sample 1); 1:1.5:1 (sample 2); 1:1:1 (sample 3) with 12 % fruit puree replaced. During the studies, the water activity of sample 1 was reduced by 28 %, which allowed the candy to be stored for 60 days with a safety factor of 1.3. The sorbitol content in a ratio of 1.5 to dextrose and invert syrup provided the best microbiological stability, while in the control, which had a water activity of 0.97 %, the QMAFAnM indicators were already exceeded on the 20th day of storage. During organoleptic evaluation it was determined that different contents of invert syrup, dextrose and sorbitol formed different textures of ganache: the control sample had a denser consistency, traces of emulsion stratification, while the model samples retained a plastic, homogeneous filling, and sample 3 had the best flavor throughout the entire shelf life (4.45 points on the 60th day of sto¬rage compared to 4.27 and 4.35 points for the 2nd and 3rd samples, respectively). Objectives: to study the interaction of circovirus type 2 with Mycoplasma hyopneumoniae in the body of weaned piglets, as well as the manifestation of monoinfection in piglets during experimental infection; to assess the pathogenicity of PCV2d/M.hyo mixed infection, PCV2d monoinfection and M. hyo monoinfection; to identify the clinical and pathomorphological manifestation of mixed and single circovirus and mycoplasma infection in the experiment. Four groups of 23-day-old piglets (5 heads each) were formed and tested for the absence of pathogens. Experimental group I – mixed circovirus-mycoplasma infection, experimental group II – PCV2d monoinfection, experimental group III – M.hyo monoinfection, group IV – control. After infection, rectal temperature was measured daily and clinical manifestations were observed, nasal swabs were taken to determine the number of copies of M. hyo nucleic acid, blood was taken from each piglet weekly to detect viral nucleic acid and antibodies. All experimental and control piglets were euthanized on the 35th day from the beginning of the experiment. Pathomorphological and pathohistological studies were carried out. The experimental study reveals the synergistic pathogenicity of PCV2d and M. hyo in mixed infection. In experimental infection of weaning piglets with both M. hyo monoinfection and M. hyo/PCV2d mixed infection, it was found that M. hyo nucleic acid was detected in nasal smears in 80 % of animals and in lung tissue in 100 %. The number of copies of the PCV2d circovirus genome in the inguinal lymph node tissue of piglets in the mixed infection group was higher than in the monoinfection group. Feed additives based on humic substances (humic and fulvic acids) with high biological activity may be promising. The studies were conducted on the farm of the agricultural cooperative Imeni Ilyicha in the Novgorod Region on young Holstein cattle aged 6–7 months. Three groups of animals were formed (n = 10): a control group consuming the basic diet (BD), the first experimental group – BD + 5 ml of fulvic acid, the second experimental group – BD + 10 ml of fulvic acid. It was found that the introduction of 5 ml of fulvic acid into the diet of young cattle had a positive effect on the digestibility of all the nutrients studied. Thus, the dry matter, crude protein and crude fiber values in the first experimental group exceeded the similar values in the control group by 1.9 %, 5.4 and 5.8 %, respectively. The digestibility coefficients of crude fat, NFE and organic matter in the animals of the first experimental group also exceeded the control values by 3.9 %, 2.4 and 3.6 %. The increase in the mass fraction of fulvic acid did not lead to a further increase in the digestibility coefficient values, on the contrary, in relation to the first experimental group, they decreased in all indicators. The paper considered a system for supplying processed cheese with rheological parameters at temperatures from 55 to 95 °C. As a result of hydraulic calculations using published data, it was found that 1) calculation of the effective dynamic viscosity μE using the Ostwald formula with the found parameter values yields results very close to the experimental data obtained from open sources; 2) the dependence of the expended power N on the pressure is linear, on the rotor speed n is parabolic, and on the dimensionless dynamic viscosity coefficient μ is power-law; 3) the dimensionless dynamic viscosity coefficient μ has different effects on the productivity Q and the power N: for large values of μ, the effect on Q decreases, while on N, on the contrary, it increases;4) with the growth of viscosity of the pumped liquid, the energy efficiency of the cam pump first improves (the hydraulic efficiency of the pump η increases, the specific energy consumption indicator E decreases), and then begins to deteriorate. The characteristic of the process pipeline (dependence of the required pressure on the flow rate of pumped processed cheese) with a given length L, local resistances, static pressure PC for three values of the internal diameter is constructed. The study was conducted by questionnaires in the city of Vladivostok (Primorsky Region) in 2023. The quota sample of respondents was 500 people. To conduct the survey, an online questionnaire was developed containing 15 questions, which is publicly available on the Internet. The analysis of food systems containing seaweed from the consumer's point of view showed that a significant number of respondents have sufficient general knowledge about the positive effect of eating seaweed on human metabolism. At the same time, 470 respondents (94 %) have a positive attitude towards food systems containing seaweed, and 425 consumers (85 %) are ready to include such products in their diet once a month or more often. The reasons for choosing food systems that include seaweed are the taste of seaweed (326 people), the positive effect on metabolism (260 people), and the desire to diversify the diet (132 people). To develop new food systems that contain seaweed extracts, the most promising types of food systems were determined based on the analysis, in which it is advisable to introduce biologically active substances of seaweed in the form of extracts. The studies were conducted in the Krasnoyarsk Natural District based on a production experiment conducted on the land plots of the Shilinskoye agricultural production cooperative in the Sukhobuzimo District (56°37' N, 93°12' E). The soil of the experimental plot was leached high-humus medium-deep light clayey chernozem on red-brown clay. The experimental design included the following options (processing methods): 1. Zero. 2. Minimum. 3. Moldboard (st). The content of microbial biomass nitrogen (Nm.b.) was determined by the rehydration-extraction method. Differentiation of the studied soil layers by the value of nitrogen immobilization by microbial biomass was statistically significant in 67 % of cases and was more often observed in the first half of the vegetation seasons. It was found that hydrothermal conditions have a significant effect on the process of nitrogen fixation by microbial plasma. When using nonplow techniques of cultivation, the \"temperature\" factor was the most significant. In the 0–5 cm layer, when using surface disking, an increase in temperature was accompanied by remineralization of microbial nitrogen (r = –0.81...–0.97), and under no-till conditions – by its immobilization (r = 0.91...–0.96). Despite the relative homogeneity of the 0–20 cm layer during moldboard plowing, significant differentiation was found, which also indicated a significant role of abiotic factors in the assimilation of nitrogen by microorganisms. Long-term field experiments were carried out on the experimental field of the Borsky Scientific and Production Complex of the Krasnoyarsk State Agrarian University in 2020–2022. The objects of the study are the varieties of narrow-leaved lupine: Vityaz, Belozerny 110, Belorozovy 144, Bryansky Kormovoy, Nadezhda, Siderat 46, Uzkolistny 53 and the SN 78-07 variety sample. Meteorological conditions during the years of the study varied. The 2020 growing season was warm and moisture-rich, the environmental conditions index (Ij) was 4.7. In 2021, during the main periods of growth and development, with the exception of the 3rd ten-day period of June, there was a significant moisture deficit against the background of air temperatures exceeding the climatic norm, the environmental conditions index was negative (–3.8). In 2022, uneven moisture was observed, sharp temperature changes at the beginning of plant development, the environmental conditions index was negative (–0.9). The average grain yield varied from 11.5 c/ha (variety Nadezhda) to 20.3 c/ha (variety Siderat 46). The contribution of the \"vegetation conditions\" factor to the formation of the lupine grain yield was 60.8 %, the contribution of the \"variety\" factor was 31.2 %. The varieties Belozerny 110 (bi = 1.16) and Siderat 46 (bi = 1.39) have high ecological plasticity. The highest ecological stability was noted in the varieties Siderat 46 and Uzkolistny 53, in both genotypes Sd2 = 0.02. The Vityaz variety surpasses other varieties in stress resistance. The highest genetic flexibility was demonstrated by the varieties Siderat 46, Vityaz, Belorozovy 144 and the variety sample SN 78-07. The yield range was 34.4 % (Vityaz) – 50.0 % (Nadezhda).
