Objectives: to study the dynamics of accumulation of chelated ions of mineral substances in the process of biomodification of soybeans in a vanadium minera¬lized aqueous medium, to determine the chemical composition of the obtained SMC. The objects of the study are soybean seeds of zoned varieties Oktyabr-70, Lydia, SMC. To determine the chemical composition of the developed SMC, standard methods for studying food products were used, corresponding to the normative and technical documentation valid in the Russian Federation. Determination of mineral substances was carried out by mass spectrometry in inductively coupled argon plasma on an ICP-MS ELAN DRC II device by Perkin Elmer (USA). Construction of mathematical models in the form of second-order regression equations and their analysis were carried out using the Appol program and the Pareto-optimal solution method (KPS program). The paper indicates the features of diabetes mellitus development based on modern research, substantiates the possibility of using chelated vanadium as an ingredient in the production of hypoglycemic food products. A number of literary sources indicating the oxidative and hypoglycemic ability of vanadium compounds are analyzed. The paper presents the results of a study of soybean seed biomodification in a vanadium mineralized aqueous medium and the accumulation of minerals by endoproteinases of germinating soybean seeds. As a result, a two-fold increase in chelated mineral elements is noted: Na1+, Ca2+, K1+, Mg2+, V4+. A technology has been developed for the production of soybean-mineral concentrate (SMC) and soybean-mineral paste (SMP) for the subsequent use of these ingredients in the formulation of low-glycemic products. During the use of lick briquettes in the diets of cows during the year, their positive effect on the mineral composition of milk, milk productivity and milk fat content was revealed. Moreover, a reliable increase was established in the milk of the experimental group of cows in the concentration of macroelements potassium, sodium, magnesium, calcium, phosphorus, respectively, by 12.17; 155.10; 52.82; 46.18; 93.96 %; microelements iron, zinc, manganese, copper, cobalt, iodine (CBI), selenium, respectively, by 101.84; 113.96; 256.01; 130.47; 265.85; 530.0; 275.91 % compared to the control group, compared to the average level of the physiological norm – by 19.66; 39.70; 5.84; 82.12; 92.96; 98.94; 83.17; 80.11; 94.08; 47.67; 210.89;109.73 %. In the control group of cows, the concentration of macro- and microelements was below the lower limit of the norm, with the exception of potassium and manganese, which were higher by 29.01 and 10.04 %, respectively, compared to the lower limit of the physiological norm. The use of lick briquettes in the diets of dairy cows during the year also contributed to an increase in milk productivity by 6.23 %, milk fat content by 5.0 % (0.20 abs.%), an additional 0.49 liters of milk per head per day were obtained on average for the group. Lipovtsev with the introduction of 0.5 % novocaine solution in combination with the antibio¬tic-containing drug Ceftonit Forte in cows with subclinical endometritis. Objectives: to study the therapeutic effectiveness of the introduction of 0.5 % novocaine solution in combination with the antibiotic-containing drug Ceftonit Forte into the middle uterine artery at different times of the estrous cycle; to establish the fertilization rate of cows after the combined use of novocaine blockade according to I.P. Lipovtsev and the drug Ceftonit Forte at different times of the estrous cycle. The object of the study were cows of the red-motley breed with a subclinical form of endometritis. The diagnosis of subclinical endometritis was made according to the method of N.A. Flegmatov. Laboratory studies have established the presence of subclinical endometritis in 29.24–38.21 % of infertile cows. In 16.98–21.69 % of cases, the cervicovaginal mucus did not have visible threadlike or point inclusions of purulent exudate, but the reaction of such mucus with sperm was positive. Therefore, the absence of purulent exudate inclusions in the cervicovaginal mucus cannot indicate the absence of subclinical endometritis in cows. It has been established that a single use of novocaine blockade according to I.P. Lipovtsev in combination with the antibiotic-containing drug Ceftonit Forte of domestic production, regardless of the timing of administration during the estrous cycle, ensures recovery of 95.24–100 % of cows, and the fertilization rate after artificial insemination of females is 76.19–80.95 %. Research was conducted on broiler chickens of the Ross-308 cross under experimental conditions, while for the experiment, control and experimental groups of 30 heads each were created, starting from the day-old age, broiler chickens of the control group received tap water from vacuum drinkers without adding a feed additive, and chickens of the experimental group were given the feed additive Yantarnyj holodok daily in a dose of 1.5 l / t with drin¬king water until the end of growing. As a main diet, broiler chickens of both groups received compound feed of Ptitsefabrika Artemovskaya LLC. The use of the feed additive Yantarnyj holodok had a positive effect on the live weight gain, which by the end of the experiment was 2,938.10 ± 405.34 g, which was 1.9 % higher than the average value in the control group. 100 % survival of broiler chickens in the experimental group was established. Histological studies revealed the process of gradual improvement of the ovary structure, the formation of its cortical and cerebral zones. At the age of 10 days, the histological structure of the ovary was not formed and represented only the protein coat, and the internal part was represented by chaotically scattered follicles, among which follicles in the pertification state were found. By the 20th day, the cortical and medullar zones of the ovary could be seen. By the 35th day, the formation of egg-bearing mounds with a zone of formed follicles of varying degrees of maturity is observed, but complete maturation of follicles with a formed egg cell was not detected in the studied individuals. The objectives of the study were: to establish a rational amount of Boletus edulis powder added to the minced meat of snacks, to determine the quality characteristics of the experimental samples and to compare them with those of the control sample, and to develop preparation stages. A control sample was created as a comparison standard based on the recipe for preparing meat snacks from chicken meat. The experimental samples were prepared based on the recipe of the control sample with the addition of a new ingredient, Boletus edulis powder, which was added to the minced meat in various dosages: sample № 1 – 0.1 %; sample № 2 – 0.5 %; sample № 3 – 1 %. Boletus edulis powder was obtained by grinding dried mushrooms to a powder consistency. An organoleptic and tasting assessment of the samples was carried out, based on which the best experimental sample was selected. According to the obtained results of the quality indicators of meat snacks with the addition of Boletus edulis powder, it was found that the rational dosage of the introduced ingredient is 0.5 %. The stages of obtaining meat snacks from chicken meat with the addition of Boletus edulis powder, which is introduced into the minced meat system during the production of minced meat, were developed. Chilled raw white chicken meat (breast) was ground to a minced meat consistency, while the necessary spices were prepared in accordance with the recipe; the casing was pre-soaked in warm water. The next step is mixing the minced meat with spices and filling the casings with it. The resulting loaves were frozen, after which they were peeled from the ca¬sing and cut into small slices, 0.3 mm thick, on a slicer. This was followed by convection drying at a temperature of 60 °C for 2.5 hours. The substrates were made on the basis of high-moor peat with a decomposition degree of 15 %, with the addition of Biohumus Arkhangelsky, which is composted residual activated sludge from treatment facilities (RAS). To test extracts from materials used to prepare experimental substrates, oats (Avena sativa L.) and watercress (Lepidium sativum L.) were used. Comparison was carried out with distilled water and Knop's mixture. To select the optimal ratio of residual activated sludge and peat for plant growth, a model experiment was conducted with growing oats. The substrates prepared by the volume of fractions with a gradation of activated sludge of 10 % were studied. It was found that composted activated sludge does not have phytotoxicity in relation to the test objects. The extract based on dewatered activated sludge of the treatment facilities of the Arkhangelsk Pulp and Paper Mill does not have a depressing effect on the germination of test objects – oat and watercress seeds, and according to the indicators of the length of the root and coleoptile of oats, it has a stimulating effect comparable to or exceeding the effect of the Knop mixture. Phytostimulating effect of peat extract was not detected. The addition of OAI to high-moor peat during the preparation of substrates has a positive effect on growth indicators. An increase in the length of the stem and root, the mass of the underground and aboveground parts of plants is noted. The optimal addition to the substrate for growing oats is composted activated sludge in the amount of 10–20 %. The objective of the study is to develop a technology for beer drinks using fruit and berry raw materials and to form their quality characteristics. Tasks: to determine the dosage of juices (cherry, currant, raspberry) in the recipe for a beer drink based on light unfiltered beer Prazhskoye by studying the standardized quality indicators and identifying the best sample by overall characteristics; establishing the shelf life of beer drinks with the addition of juices by analyzing safety indicators in accordance with TR CU 021/2011; ma-king adjustments to the technological process to extend the shelf life of beer drinks. The objects of the study were beer drinks based on light unfiltered beer Prazhskoye with the addition of clarified cherry, currant and raspberry juice, produced according to GOST 32102-2013 Group H54 \"Canned goods. Juice products. Concentrated fruit juices. General specifications\" in quantities of 10, 20, 30 % of beer wort. In the work, generally accepted methods of analysis of organoleptic, physicochemical and microbiological quality indicators were used. The technology of beer drinks was developed, the quantitative dosage of juices was selected: cherry – 20 %, currant – 10, raspberry – 30 % of beer wort. A comprehensive assessment of the quality of the developed drinks was carried out according to organoleptic, physicochemical, microbiological quality indicators. The shelf life of beer drinks was determined – 30 days. The results of the micromorphology of the vas deferens in representatives of the order Lagomorpha are presented. Histological preparations were prepared and exami¬ned at the Omsk State Agrarian University (Department of Anatomy, Histology, Physiology and Pathological Anatomy). The objects of the study were material obtained from five sexually mature male Californian rabbits. For histological examination, pieces of organs were selected using the generally accepted method. Sections were stained with hematoxylin and eosin, as well as the Van Gieson method. Morphological, histological, morphometric and statistical methods were used in the study. The ductus deferens in rabbits is a paired tubular organ. The thickness of the mucous membrane of the left ductus deferens varies within 85.77 ± 3.13 μm, of the right ductus deferens was 136.14 ± 3.20 μm. The thickness of the muscular membrane of the left ductus deferens was 287.16 ± 3.48 μm, of the right ductus deferens was 333.79 ± 4.07 μm. The thickness of the adventitia of the left ductus deferens was 246.08 ± 4.75 μm, of the right ductus deferens was 258.56 ± 3.84 μm. During the study, special attention was paid to the adaptation of the muscular layer, which demonstrates a high degree of development and the ability to powerful peristaltic contractions, ensuring the movement of sex cells to the urethra. A comprehensive study was conducted that allowed theoretically and experimentally substantiating the feasibility of using turnips as a functional ingredient in the preparation of curd-vegetable casserole. The following quality indicators were studied in the experimental samples of culinary products: mass fraction of fat, protein, total sugars, ascorbic acid content; sanitary and microbiological indicators: the number of mesophilic aerobic and facultative anaerobic microorganisms (QMAFAnM), the number of yeast and mold fungi, and coliform bacteria (BGCP). The applied research methods are the mass fraction of fats according to GOST 31902-2012, the mass fraction of protein by the Kjeldahl method according to GOST 10846-91, the mass fraction of ascorbic acid was determined by titration with a solution of sodium 2,6-dichlorophenolindophenolate according to GOST 24556-89, the mass fraction of sugars – by the iodometric method, by diluting the sanitary and microbiolo¬gical indicators of QMAFAnM according to GOST 10444.15-94, counting the colonies of mold fungi and yeast according to GOST 10444.12-2013 and coliform bacteria according to GOST 31747-2012. The study was carried out at the Department of Public Catering Technology and Processing of Plant Raw Materials of the Federal State Budgetary Educational Institution of Higher Education \"BashSAU\", Republic of Bashkortostan. In the recipe for making cottage cheese and vegetable casserole, carrots were replaced with turnips in a ratio of 25 to 100 %. It was found that 100 % replacement of carrots with turnips in a culinary product improves organoleptic properties (taste, color) and physicochemical indicators (increase in vitamin C by 5.5 times).
