Our objective was to determine the effects of feeding “Oonari” (T3 rice) on meat quality parameters and shelf life. A total of 45 crossbred finishing pigs were fed either 20% or 45% T3 brown rice containing experimental diets as a replacement for corn (Rice 20 and Rice 45, respectively), and they were compared with 16 crossbred pigs finished with corn-based commercial diet (Basic). After more than 2 months of feeding period, pigs were slaughtered. The longissimus muscle was removed from the loin on day 4 after slaughter, and sliced pork chops (4 × 4 × 2 cm) wrapped in polyvinyl chloride film were retail displayed at 4℃ under a LED light for up to 6 days. During storage, values of lightness (L*) and yellowness (b*) decreased, while the levels of redness (a*), drip loss, and thiobarbituric acid reactive substances (TBARS) increased. Chops from T3 rice-fed pigs lessened the amount of drip loss and TBARS than chops from Basic-fed pigs. The lower shear force value was observed in T3 rice-fed samples than Basic-fed samples, but cook loss was not affected by the type of diet. When compared to Basic-fed pigs’ muscle, either sides of the longissimus muscles from shoulder and lumber of T3 rice-fed pigs showed low protein and high fat contents. We also found that feeding T3 rice decreased fatty acid composition of C18 : 2 in all three tissues ; longissimus muscle, subcutaneous fat and intermuscular fat. There was no clear difference in pork quality between Rice 20 and Rice 45 treatment. Overall, these results indicated that feeding T3 rice as a replacement of corn in diets for finishing pigs may have positive effects on pork quality, thus leads to an improvement in the shelf life of chilled raw pork.","PeriodicalId":274137,"journal":{"name":"Nihon Yoton Gakkaishi","volume":"99 1","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2020-03-05","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"114601603","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

The aim of this study was to estimate genetic parameters for NBA using a random regression model (RRM) with different order Legendre polynomials of parities, and to compare the parameters with those from the other models [single trait model (STM), repeatability model (RPM) and multi trait model (MTM)], which are generally used for genetic evaluation of NBA. The NBA data of Landrace and Large White, which includes from the first to the sixth parity, were collected from the database on the National Swine Genetic Evaluation scheme. The number of litter records of Landrace and Large White were 55,857 and 34,024, respectively, and their pedigree records were 11,035 and 6,722, respectively. Two types of RRMs were fitted in this study: one included farm effect (RRM1), and the other included farm-parity (RRM2) as a fixed effect. Both the RRMs included additive genetic effects and permanent environmental effects as random effects, and were fitted up to the second order (i.e., cubic) Legendre polynomials of parities for the random effects. Estimated variance components across parities by RRM2 showed smooth trajectories to compare with RRM1 in both breeds. In addition, the genetic parameters estimated by RRM2 were similar to MTM than RRM1. As a result of the trajectories of the variance components and the contribution of the eigenvalues, the most appropriate order to Legendre polynomials for additive genetic effects could be up to the second order in both breeds and for permanent environmental effects could be the first order in Landrace and up to the second order in Large White. In addition, the contribution of the eigenvalues showed that the intercept explained ranged from approximately 90 to 92% of genetic variability for NBA and genetic curve with the first- and second-order terms of Legendre polynomials explained ranged from approximately 8 to 10% of genetic variability in RRM2.","PeriodicalId":274137,"journal":{"name":"Nihon Yoton Gakkaishi","volume":"14 3 1","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2019-12-16","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"123801798","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

Examination I: We analyzed odor strengths and concentrations of the odor substances in Gel Permeation Chromatography (GPC) fractions of an extract from pig’s feces by Gas Chromatography-Mass Spectrometry(GC/MS). Other than the specified offensive odor substances regulated by the Offensive Odor Control Law in Japan, iso-butyric acid, phenol, p-cresol, indole, skatole and 3-phenylpropanoic acid were also included in the GPC fraction which had an odor like piggery smell. Examination Ⅱ: We analyzed concentrations of the odor substances from the feces under the pH conditions of 5, 7 or 9, in 30℃ by GC/MS. Phenol, p-cresol, indole, skatole and 3-phenylpropanoic acid were included in volatilized odor regardless of the feces pH. Examination Ⅲ: We analyzed concentrations of the odor substances in feces collected from three different livestock farms with different feeding and concentrations of the odor substances in the air of pig houses by GC/MS. n-butyric acid,n-valeric acid,p-cresol and skatole were included in volatilized odors from both the feces and the air, indicating that these substances might contribute the piggery smell. The LBY diet was prepared by replacing soybean meal (control diet) with LBY (experimental diet). A total of 12 crossbred pigs (Large White×Landrace× Duroc, six barrows and six gilts) were housed at a density of two pigs (one barrow and one gilt of similar weight) per pigpen, and three pigpens were assigned to each of the control and LBY diet groups. Pigs were supplied either the control or LBY diet when their weight reached approximately 80 kg, and feeding was stopped when their weight reached approximately 115 kg. The experimental diet contained sufficient crude protein (CP) and total digestible nutrients (TDN), with dry weights of 15% and 75%, respectively, which were diluted with water to obtain a final dry weight of 22%. Growth performance, carcass characteristics, and sensory evaluation of the longissimus dorsi muscle were not significantly different between the groups. The fatty acid composition in the LBY group showed a significant decrease in C18 : 2 and C18 : 3 content and a high fat melting point. These results indicate that LBY may be a useful protein source for swine. Jpn. J.
