This preliminary study investigates antileishmanial activities of Peganum harmala essential oil (PHEO), Achillea millefolium essential oils (AMEO) and their combinations against Leishmania infantum promastigotes. A standard strain of L. infantum promastigote was cultured in a 96-well Novy-MacNeal-Nicolle media culture and antileishmanial activities of glucantime, PHEO, AMEO, an equal ratio of both and 80% PHEO+20%AMEO were investigated in concentrations of 10, 100, 500 and 1000 mg/mL and interval times of 24h, 48h and 72h. The results showed that greatest inhibition was observed in 50PHEO+ AMEO and lowest inhibition was seen in control group. The increased time and increased concentration significantly increased their efficiencies. The analyses showed a significant interaction between time and agents [F (10, 360)=7.84, P=0.000]. The agents showed better effects with increased time. Coffee has been drunk for millennia due to their taste and health benefits. High levels of polyphenols, and especially flavonoids and phenolic acids, are found in coffee and contribute significantly to their flavor and health-giving properties. This study evaluated, the total phenolic contents, antioxidant, and tyrosinase inhibitor activities of green coffee, and Turkish traditional coffee extracts. \u0000Antioxidant activities of the coffees were examined by two different methods, radical 2,2-diphenyl-1-picrylhydrazyl (DPPH), and ferric reducing antioxidant power (FRAP). Total phenolic contents were estimated by using Folin-Ciocalteu reagent as gallic acid equivalent. The phenolic profiles were investigated by means of reverse phase-high performance liquid chromatography (RP-HPLC). This study investigated tyrosinase enzyme inhibitions against diphenolase (DOPA), using kojic acid as a positive control. \u0000The extracts exhibited high levels of antioxidant activities associated with significant antioxidant compound contents. Color browning (caramelization) occurring in bakery products as a result of heat treatment is an important indicator of Maillard reaction (MR). As bread types, francala bread, grissini, rusk and traditional oven-dry bread were examined. Antioxidant substances as a result of MR in bread crust have an important place in preventing colon cancer for terms of human health. In this study, hue angle (H), chroma (C) and Browning index (BI) tests were applied due to caramelization by taking samples from crust parts of some bread types made from wheat flour. Amount of antioxidant substance formed was determined by 2, 2-diphenylpicrilhydrazil (DPPH) and total phenolic substance determination (TFM) methods. The total amount of phenolic substances in study were measured as 123-125 mg GAE / 100g for francala bread crusts, 73-115 mg GAE / 100g at rusk, 41-73 mg GAE / 100g at oven-dry and 74-104 mg GAE / 100g at grissini bread. DPPH is the highest values; 16.64% in oven-dry bread, 38.2% in rusk, 18% in grissini bread and 46% in francala bread. Ekstraksiyon sirasinda cozucu olarak %70 etanol + %30 su karisimi kullanilmistir. Calismada %1, %2 ve %3 oraninda sari kantaron ekstrakti iceren uc cesit ayran elde edilmistir. Kontrol grubu ve elde edilen ayranlar 28 gun boyunca depolanmis ve depolamanin 1., 7., 14., 21. ve 28. gunlerinde bazi fizikokimyasal ve mikrobiyolojik analizleri gerceklestirilmistir. Elde edilen bulgulara gore; depolama suresi boyunca orneklerin kul ve tuz degerlerinin degismedigi, kuru madde, su aktivitesi ve pH degerlerinin azaldigi, asitlik degerlerinin ise arttigi gozlemlenmistir. The thin layer chromatography was carried out of ethanol extract of leaves and stems of Satureja horternsis L., and the values of Rf are defined by the substances contained in them. According to the values obtained of spectral and chromatographic analyses, compounds have been identified which containing in the extracts. Thus the results were defined by viewed in the usual ultraviolet short and longwavelength light. The separated part as pure in thin layer chromatography time soluted in ethanol and wavelengths measured with Hitachi U-2900 UV-VIS spectrophotometer in 200-700 nm. The samples were analyzed for their total phenolic contents (TPC), total flavonoid contents (TFC), chemical profiles, and antioxidant activity. The TPC was determined using Folin-Ciocalteu method while the TFC using the AlCl3 method. The antioxidant activity of propolis was examined by two different methods, namely free radical scavenging assay and reducing ability. The chemical profiles of the samples were assessed by thin-layer chromatography (TLC), UV-Vis, and gas chromatography/mass spectrometry GC-MS analysis. Total phenolic content ranged from 53.35 ± 7.09 to 148.27 ± 15.08 mg GAE/g, total flavonoid content ranged from 45.73 ± 2.8 to 134.5 ± 8.46 mg RUE/g. GC/MS analysis revealed the presence of 9-octadecene and tetradecene as major compounds that have been previously reported to demonstrate antioxidant activity. In addition, Berqayel propolis sample showed high content of phenolic compounds and high antioxidant activity and contained mainly hydrocarbons, while samples from Wadi Faara recorded poor chromatograms with the absence of most of the compounds present in Berqayel samples. The majority of propolis samples showed relatively interesting antioxidant activity, which was also correlated with TPC and TFC. Natural honey has been valued in traditional medicine having demonstrated many antioxidant and antibacterial properties. The present study aimed to evaluate physicochemical characteristics and the antibacterial and antioxidant activity of two varieties of honey from Algerian steppe. Physicochemical parameters, such as pH, moisture content, electrical conductivity (EC), total acidity, ree acidity,ash and HMF were measured. The antibacterial activity was examined against the growth of Pseudomonas aeruginosa ATCC 27853, Escherichia coli ATCC 25922, Staphylococcus aureus ATCC 33862 by using the agar incorporation technique method and the determination of the minimum inhibitory concentration (MIC).The antioxidant activity was assessed by using the 2,2 diphenyl 1 picrylhydrazyl (DPPH) and the fer reduction antixydant power (FRAP). Physico-chemical analysis of honey samples confirmed good quality of honey according to the standards set by European Union Commission and Codex Alimentarius Commission. All samples had ability to scavenge DPPH. radicals and showed reducing potential analyzed by FRAP methods, with the highest performance obtained in Euphorbia cheridenia honey. The result of the antibacterial effect of this study revealed that our honey samples have showed an important antibacterial activity against all the bacterial tested strains, Noeae mucronata honey has the better antibacterial effect against Escherichia coli and Staphylococcus aureus. Bee venom has in vitro selective cytotoxic effect on some cancer cells examined but the mechanism of action has not been fully elucidated. Cancer is characterized by not only uncontrolled and increased cell proliferation but also by invasive and metastatic properties of proliferating cells. Wound healing assay is used for revealing the migration rate of cells in vitro. The effect of bee venom on healing diabetes-induced wound has been shown before, but to the best of knowledge there is no study showing migration velocity of metastatic breast cancer cells after bee venom treatment. This study aimed (i) to reveal the metastatic behaviour of metastatic breast cancer cells after bee venom compared to cisplatin, and (ii) also to conclude the differences between normal and cancer cells in terms of migration after bee venom and cisplatin. Findings showed that bee venom was more effective on selective inhibition of cancer cell migration, but cisplatin-mediated inhibitory effect on metastasis could not be detected as even low concentrations of cisplatin induced high rate of cell death. Cow's milk allergy, lactose-intolerance, calorie anxiety, and the prevalence of hypercholesterolemia, vegan diets play an essential role in preferring consumers towards these products. Products with plant-based substitutes, nutritionally deficient but rich in bioactive ingredients, can be great options for improving health. We investigated the changes in some chemical properties of cheeses producing from cow's milk containing 0%, 15%, and 25% soy drink in this study. FRAP values of cheeses containing 0%, 15%, and 25% soy drink were measured as 2390.76±44.37, 3367.69±32.63, 3993.84±13.05 μmol Trolox/g cheese, respectively. Due to an increased concentration of soy drink substitutes, their antioxidant activities were increased, but the dry matters of cheeses gradually were decreased. Cheese, which contains 25% soy drink, was found to be approximately two times the antioxidant activity of cheese without soy drink. This work is a preliminary study for soy drink substitution for cheese manufacture.
