Balneological value of silt mud from that specific lake is high because of high level of ferrous sulphides and water-soluble salts in it’s content, including recognized as therapeutically active bromine and boric acid; high concentration of lipids and carotenoids, which have anti-inflammatory, anti-bacteria, immune stimulating and bio stimulating effects. Goal: development of the method for stimulation of the peloid extract obtaining process from the Tambukan mud by an ultrasound-assisted extraction with further determination of biologically active substance using a spectrophotometric method. The research is based on formerly known and patented methods, offered by Kh.G.Karagulov. The method is reasonable, allows to extract carotenoid in full. The disadvantage of it is the energy-demanding and the usage of an organic solvent. As the object of the research a deep seated mud sample from the Tambukan lake was taken. After an ultrasound-assisted extraction there was obtained an oily extract from the mud sample. Quantitative content estimation was held out using a spectrophotometric method in visible region of absorption. The ability to optimize the process of peloid extraction from the Tambukan mud by the ultrasound-assisted extraction has been proven. Offered method for extraction and determination of carotenoid amount in Tambukan mud is less resource- and energy-demanding. Alongside with that it provides best possible carotenoid amount in the outcome. Effective and less expensive method to obtain peloid from Tambukan mud has been developed. Experimental studies were carried out to obtain fermented milk ice cream with a high content of exopolysaccharides. As a nutrient substrate for the cultivation of probiotic microorganisms, a mixture was used to obtain ice cream, including dairy and non-dairy components. The starter cultures included certain strains of microorganisms: Streptococcus thermophilus, Lactobacillus delbrueckii ssp. bulgaricus. It was experimentally established that ice-cream with the addition of a bacterial starter culture YO-PROX 777, including thermophilic lactic acid strains of the microorganisms Streptococcus thermophiles, Lactobacillus delbrueckii ssp, has the greatest ssp. bulgaricus. Tsytsin Main Botanical Garden of Russian Academy of Science, as easily renewable biosafety drug and food resource. By standard methods, comparative morphology-anatomical and morphometric study of fruits was carried out; content of air-dry, absolutely-dry substance and ascorbic acid was determined in them; statistical processing of the results was performed. The fleshy drupes that we studied vary in fruits shape, by number, shape and size of stones. Features and similarities of anatomical structure of exocarp, mesocarp and endocarp of fruits, typical for most members of the Araliaceae family, were revealed. Fresh fruits of E. senticosus are smaller and lighter than fruits of E. sessiliflorus, but surpass them in terms of volume of stones and amount of ascorbic acid; content of absolutely-dry matter in them is equally high. We propose to consider fruits of both types as a new promising raw material for the production of biologically active additives and functional foods, alternative to traditional raw materials from roots of eleutherococcuses, traumatic to the plants.
