Medicinal plant raw materials from ten plant species were collected in 36 sampling points in the Voronezh Region. Findings indicate that the main accumulators of cesium-137 isotopes were the leaves of the broadleaf plantain, the grass of the common motherwort, the grass of the common wormwood, and the leaves of the common nettle (accumulation coefficients were greater than 1.5). Cesium-137 was most prevalent in the leaves and grass, and to the least extent in flowers and underground organs. Strontium-90 was most evident in the roots of the greater burdock and the roots of the common dandelion. Isotopes of radioactive strontium-90 accumulated more in underground plant organs, and less in aerial plant organs. The leaves of the broadleaf plantain, the leaves of the common nettle, the roots of the common dandelion and the roots of the greater burdock showed the highest ability to accumulate natural and artificial radionuclides fixated by soil. Vavilov and at the Research Agricultural Institute. Using the Mixolab instrument, the basic parameters of the rheological state of the dough from patent wheat flour, flour from seeds of food beans (white and red), and also flour from composite mixtures based on them were studied. These data were compared with the SDS-sedimentation indices and gluten content in the flour of the starting components and composite mixtures. It has been established that SDSsedimentation indicators correlate with the gluten content in the composite mixture, with water absorption capacity (WAC), the moment of force during the dilution phase C2, with the moment of force characterizing the maximum consistency of the dough at the end of the phase of “starch retrogradation” C5 and with the cost of total energy consumed per batch. To a lesser extent, SDS-sedimentation indices correlate with the dough formation time T1, the dough stability time T2, the force moment C3 characterizing the dough stability during the gelatinization phase, and the force moment C4 characterizing the minimum consistency of the dough during the “starch retrogradation” phase. Data of the study will allow more efficiently regulate the technological dough process of the production of food products based on composite mixtures. The purpose of the work was to study the dynamics of the accumulation of biologically active substances in the aboveground phytomass of N. cataria L. in the Republic of North Ossetia-Alania. In years 2008-2013 the study of N. cataria L. was carried out in a culture on the basis of standard methods. The aboveground phytomass of N. cataria L. contains a variety of biologically active substances. A study of the dynamics of the content of the main biologically active substances in ontogenesis showed that during mass flowering, the maximum content is reached for essential oils, total acidity, ascorbic acid, and the content of tannins. The content of individual biologically active substances did not depend on the ontogenesis phase and remained at the same level during the growing season. There was established the relationship between the biologically active substances content and the weather and climate conditions of the year: direct – with average air temperature and inversely proportional – to the amount of precipitation. The chitosan-chymopsin complex provides prolonged proteolytic action of the enzyme, restores microcirculation in wound walls, improves metabolic processes and relieves local inflammation. The chitosan-miramistin complex has a pronounced bactericidal effect against aerobic and anaerobic bacteria, gram-positive and gram-negative microorganisms, both in the form of monocultures and in the form of associations, including hospital strains with antibiotic resistance. It has been established that ascorbic, succinic and fumaric acids effectively reduce the activity of enzymes that determine the storage capacity of wheat germ. It has been proven that compositional mixtures of succinic, ascorbic, and fumaric acids suppress the activity of the enzymes of the embryo in a non-competitive type of inhibition. The content of anthocyanins gradually drops to total disappearance at the late September. Extract of anthocyanins may content a large amount of flavonoids that are not separated during solid phase extraction (SPE) on C18-silica syringe cartridges. In the paper, the ability of bentonite clay as a sorbent for SPE of anthocyanins was investigated. Non-charged flavonoids were shown to compete with anthocyanins during sorption. Meanwhile sorption ability of anthocyanins markedly exceeds that of non-charged flavonoids. The method for anthocyanins and non-charged flavonoids is proposed. Anthocyanins of both cultivars was qualitatively the same – main compound was cyanidin-3-feruloylhexosyl-pentosyl-hexodide, mole fraction of the anthocyanin was approximately 72 % of the overall anthocyanin content of carrot roots of cv. “Purpur” (I) and only 49 % in in carrot roots of cv. “Mayami shokoladnaya” (II). Cyanidin-3-pentosyl-hexoside (33.8 %) was found in carrot roots of (II) and only 4 – 18 % in carrot roots of (I). The contact bactericide and fungicide Zeroks® (high-colloidal solution) in which silver nanoparticles are its active factor has been used to test growth regulation properties. Non-pelleted seeds have been treated with aqueous solution of the chemical Zeroks® (high-colloidal solution) (3000 mg/l of colloidal silver) in concentrations of 10 %, 20 %, and 30 %. It has been revealed that 10 % solution concentration is the most effective. Here, increase of seed emergence rate (by 4-12 %) and average seedling length (by 16.1-67.5 %) has been noted as compared to the control. The factor of seed treatment had more influence on the “seedling length” parameter than on the \"emergence rate\" one that testifies to liability of the former in comparison with the latter. Power of influence of sugar beet seed treatment with aqueous solution of the chemical Zeroks (high-colloidal solution) on the “seedling length” parameter was more than on the “emergence rate” one that testifies to liability of the former in comparison with the latter. Individual reactions of a hybrid embryo to the factor of treatment with the chemical Zeroks (high-colloidal solution) are possible; they are positive in seeds with less emergence rate and negative in seeds with high sowing qualities that is the evidence of different seed quality.
