The composite flours were formulated with bean flour (80%) and nixtamalized corn flour (20%) using xanthan gum and/or ascorbic acid in different concentrations (0, 0.25 and 0.50%). The different flours composed of beans/corn were evaluated for their water absorption capacity (2.68 to 3.84 g/g), oil absorption capacity (1.14 to 1.43 g/mL) and swelling capacity (10.57 to 10.98 mL/g). The different flours composed of beans/corn were used for the production of pound cakes. As the content of xanthan gum and/or ascorbic acid increased, the different pound cakes presented better weight, volume and volume index. Meliponiculture is a very important activity for some Mayans in the Yucatan Peninsula. However, the production of Melipona honey and its territorial distribution has decreased in recent decades, compared to the last century. Fieldwork was carried out in the east of the state of Yucatan to assess honey production activities and the socioeconomic situation of the population that depends on them. Data from Worldclim was used to generate distribution models for Melipona bees as well as scenarios of the impact of climate change on these species in the next seven decades. The scenarios that assume the continued presence of Melipona bees in the next seven decades show disappointing results in the face of climate change. The present research work was aimed to evaluate the concentration of lead, cadmium and chromium in corn grain produced in the Mezquital Valley, by the different tillage systems and residue management with the aim of identifying the best system of agricultural production. It was used a Fluke® thermograph to obtain temperature images. Hypothesis was it is possible to establish the effect of heat sources trough thermographic images on the response of the litters. The aim was to evaluate the thermal condition of the piglets in the first twenty eight days of life and their performance until weaning. Piglets were F1 crosses (York x Landrace) x Pietrain. Treatments were minimum, maximum, average and central point temperatures. Variables registered were mortality, weaned piglets, weight of the weaned litters, piglets’ individual weight and number of lactating days. The morphometric parameters of length, width, thickness, weight and volume were measured; An aqueous maceration of the bean seeds was carried out in an acid medium (0.1 M HCl) and the content of polyphenols (Folin Ciocalteu Method), anthocyanins (visible spectrophotometry) and determination of the Reducing Iron Power (FRAP, by the method of TPTZ) of the aqueous extracts. It was found that the concentration of anthocyanins correlates with the total content of polyphenols and with the reducing activity of the ferric ion, the aqueous extracts obtained had a content of total phenols of 413 mg EAG/100g of seed, of anthocyanins of 42 mg MGE/100 g of seed and an iron reducing power of 10.26 mol of Fe2+/g of seed. The proposed methodology is based on tools and instruments to generate knowledge of big data information, making use of: Information and Communication Technologies; of the principles of multivariate data management that consider the distinctive uncertainty of environmental phenomena; and the generation of multidisciplinary databases to apply data mining and obtain information with a systemic approach. The proposed tool with its mixed approach applies to the operation and multimedia text database study and from there the KDD process knowledge is acquired. The goal to know its measure, components, hydrophilic, topography, materials and performance. The membranes of the module were characterized by the next techniques: atomic force microscopy (AFM), infrared spectroscopy by ATR (Attenuated Total Reflectance), contact angle and cross- flow equipment. Agree with the autopsy, the infrared spectrums indicate that the membrane is constituted by support of polyester paper, a polysulfone layer, a cellulose acetate layer and polyamide layer. The feed spacer is polypropylene and the permeate spacer is polyethylene terephthalate. All the measures did the membrane module were the same as the technical sheet from the manufacturer. The contact angle was 22.4±3.55° and roughness of 182.43±42 nm.
