The strain was identified as Acinetobacter sp. by the 16S rRNA homology and some physiological tests. D-GlcN in the liquid medium disappeared within 48h, and D-GlcNA was accumulated in the medium. It is remarkable that the maximum yield of GlcNA reached 92 mol% based on D-GlcN. The 13C atom% values of oxalate measured by GC/C/IRMS were nearly equal to those measured by automated nitrogen and carbon analyzer-mass spectrometer (ANCA-MS) giving a high degree of correlation (r2=0.9999) and good reproducibility (CV=0.224%). The principles of this method were based on the light absorbance change through a gelatinized starch-agar gel fixed in a well of a microplate caused by α-amylase action. α-Amylases from different origins were successfully measured. The results of α-amylase activity in enzyme formulations and rice koji extractions measured by this method were in agreement with the values obtained by the conventional method. By adding an authentic α-amylase solution to a mixture of agar and gelatinized rice starch, which was fixed in a well of a microplate, the gel turbidity measured at 655 nm was decreased by the α-amylase action on the gelatinized starch. The intensity of the α-amylase-activity was in proportion logarithmically to the turbidity decrease detected by a microplate-reader. The formation of edema caused in rats paws by injection of carrageenin was effectively depressed by soaking the rat paws in hot oolong tea extract. It gives 60% inhibition at the dose of 75 ppm of oolong tea extract. Oolong tea extract showed higher anti-inflammatory activity than those of green and black tea extracts. The active components were found to be catechins and oolong tea tannin (oxidative products of catechin in oolong tea) fractionated from aqueous oolong tea extract. By oral administration of oolong tea extract, carrageenin-induced inflammation was also inhibited, but the anti-inflammatory avtivity by oral administration was lower than by the soaking treatment. Its nutritive value and hypocholesterolemic effect were examined. Growing rats were fed for 3 and 4 weeks on 33.3% sake cake diets with and without 0.5% cholesterol (0.15% sodium cholate). There was no significant difference in growth between the sake cake and casein groups. The serum and liver cholesterol levels in the sake cake group were significantly lower than those in the casein group. Sake cake feeding increased fecal excretion of bile salts, cholesterol, and lipid more as compared with casein feeding. A similar or greater effect was observed for the group given the pepsin undigested fraction of sake cake.
