Labat-Robert","doi":"10.1016/j.mlong.2012.10.003","DOIUrl":"10.1016/j.mlong.2012.10.003","url":null,"abstract":"<div><p>From 16 to 20th September took place a meeting in Nancy, France for the 100th year celebration of the publication by Camille Louis Maillard of the reaction he described and intensively studied since all over the world. About 300 scientists from over 35 countries gathered at this occasion at the Polytechnic Institute (ENSAIA School) of Nancy. We propose here a short reminder of the early years of these studies as well as a brief report of some of the highlights of this meeting. Both industrial research organizations as well as basic and medical scientists were present, reflecting the wide spread importance of the Maillard reaction both in vivo as well as during food processing. Maillard reaction's products (AGEs: advanced glycation end-products) are generated constantly in the organism and absorbed also with a variety of nutriments, both forms participating in aging and a large number of pathological processes associated with aging. Food industry was the first to get involved in these studies. For these reasons both the pharmacological industry as well as food industry and cosmetic scientists were represented with communications to understand and alleviate the burden of the Maillard reaction by decreasing AGE generation both in food and in vivo.</p></div><div><p>Du 16 au 20 septembre 2012 a eu lieu à l’institut polytechnique de Nancy (ENSAIA) un colloque pour célébrer le centenaire de la publication par Camille Louis Maillard, d’origine Lorraine, de la note décrivant la réaction qui porte son nom. Cette réaction est intensément étudiée depuis à travers le monde. Environ 300 scientifiques de 35 pays couvrant l’Europe, l’Asie et l’Amérique sont venus présenter leurs travaux, de l’industrie agro-alimentaire aux universités, de la biologie et pathologie moléculaire à la médecine translationnelle. Tous les aspects et applications des réactions entre glucides et protéines et leurs conséquences sur l’organisme et l’environnement ont été abordés : en particulier, les <em>advanced glycation end-products</em> (AGEs) résultant de la réaction de Maillard, générés dans l’organisme et aussi absorbés avec l’alimentation qui contribuent au vieillissement de l’organisme et à de nombreuses pathologies. Ce sujet a été redécouvert après la guerre par l’industrie agro-alimentaire, repris rapidement par les chercheurs universitaires et le nombre de scientifiques travaillant dans ce domaine et leurs publications ont progressé depuis exponentiellement. Elle est associée à de nombreuses comorbidités, telles que l’hypertension artérielle, le diabète de type 2, les dyslipidémies, l’apnée du sommeil, certains cancers et des maladies cardiovasculaires majeures. Par ses effets sur différents facteurs de risque et sur la structure et la fonction cardiovasculaire, l’obésité a un impact majeur sur les maladies cardiovasculaires, telles que l’insuffisance cardiaque, la maladie coronaire, la mort subite et la fibrillation auriculaire, et est associée à une augmentation de la mortalité globale.</p></div><div><p>Obesity is an expanding public health problem, creating a global epidemic. Obesity is associated with many comorbid conditions, including hypertension, type 2 diabetes mellitus, dyslipidemias, sleep apnea, some cancers, and major cardiovascular disease. On estime que 50 % des patients porteurs de maladies chroniques sont insuffisamment observants. Ce phénomène, difficile à évaluer, a cependant des conséquences médicales et économiques considérables. La compréhension de l’(in)observance nécessite une approche multifactorielle, intégrant à la fois des facteurs biomédicaux, psychosociaux et environnementaux. La prise en compte de ces déterminants doit permettre la mise en place d’interventions visant à améliorer l’adhésion thérapeutique. Mais la mauvaise observance est aussi le reflet d’une relation médecin–malade en pleine évolution, où les thérapeutiques autrefois imposées nécessitent aujourd’hui la pleine adhésion du patient.</p></div><div><p>Compliance can be defined as the degree of conformity between a patient's behavior and his/her doctor's advice. Fifty per cent of the patients suffering from chronic diseases are considered to be poorly compliant. This phenomenon is difficult to assess and has major medical and economic consequences. To understand (non) compliance, we have to weigh up different contributing factors including biomedical, psychosocial and environmental issues. Taking these factors into account should allow the development of interventions aimed at improving medication adherence. Si les données demeurent controversées chez l’adulte à l’exception des lymphomes, des associations sont plus fréquemment retrouvées dans les cancers de l’enfant, notamment les tumeurs cérébrales, les leucémies et les néphroblatomes. Dans les tumeurs cérébrales, une association est fréquemment évoquée lors d’une exposition professionnelle des parents au moment de la grossesse. Diverses conséquences des pesticides sur la reproduction ont été évoquées : infertilité, mort fœtale, prématurité, hypotrophie, retard de croissance intra-utérin (RCIU), malformations congénitales, notamment orofaciales ; mais les études souffrent de certains biais. Les pesticides peuvent interférer avec les hormones (perturbateur endocrinien), les facteurs de croissance ou les neurotransmetteurs. L’étude des manifestations neurologiques en lien avec l’utilisation des pesticides est actuellement de mieux en mieux documentée. Notamment, le lien entre l’utilisation des pesticides et la survenue d’une maladie de Parkinson apparaît actuellement comme probable, au vu des nombreux travaux réalisés.</p></div><div><p>The risks for the health of pesticides are the object of numerous debates. If the data remain controversial at the adult with the exception of lymphomas, associations are found more frequently in the cancers of the child, in particular brain tumours, leukaemia and nephroblatomes. In brain tumours, an association is frequently evoked during a professional exhibition (exposure) of the relatives (parents) at the time of the pregnancy. Diverse consequences of pesticides on the reproduction were evoked: infertility, fœtal death, prematurity, hypotrophia, congenital malformations; but the studies suffer certain ways. Pesticides can interfere with hormones (endocrine disruptors), growth factors or neurotransmitters. The study of the neurological appearances in connection with the use of pesticides seems to be established.
