Prospects for Children’s Height in Japan and South Korea: Perspective from FoodConsumption 日本和韩国儿童身高的前景:从食品消费的角度

Children in\u0000Japan ceased to grow any taller in the mid-1990s, whereas Korean peers kept growing and overtook the Japanese 3\u0000cm in the mid-2000s and then stopped. In the 1990s, when Koreans caught-up the Japanese in height, per capita\u0000caloric supply from animal products in Korea was 150 kcal/day less than in Japan. When Korean children stopped\u0000growing in height in the mid-2000s, per capita supply of animal products was still rising. Household Expenditure\u0000Surveys classified by age groups of household head were decomposed to demonstrate that children and younger\u0000people in Korea started to turn away from vegetables in the early-1990s, and by the end-2010s they ate less than\u000010% of the vegetables eaten by those aged 50. Similarly, two decades before Japanese height stopped increasing in\u0000the early 1990s, the young people started to turn away from fresh fruit. Vegetables/fruit may be essential nutrients\u0000to support animal protein intake in human metabolism. The study was conducted in Gwagwalada, FCT, Abuja. Two objectives guided the study. The study adopted descriptive research design. Multi stage sampling technique was used to select rice farmers, while a well-structured questionnaire was used for data collection from the 360 rice farmers used for the study. Objectives of the study were achieved using descriptive statistics and logistic regression. The results show that 58.06% of the rice farmers were male, 36.13% were between the ages of 30 and 39years, 47.74% of them were married with 40% having an average of 5 people in their households. Also 61.94% had at most a national certificate of education (NCE). Majority (44.84) of the rice farmers had a farm size of between half a hectare and two hectares. Zero tillage, with a weighted mean score of 2.95, is the most effective soil management practice in the study area, while fertilizer application with a mean score of 3.2 is the most effective fertility practice among the rice farmers in the study area. The result further revealed that with a weighted mean score of 2.5, the respondents agree with the assertion that location of the soil determines the effectiveness of management practices. The result of the logistic regression shows that sex, age, education and farm size all had significant influences on the effectiveness of soil management practices in the study area. The heat treatment imparts different sensory properties to the milk that may influence its acceptance by consumers. In Ghana, fresh milk is boiled and sold locally to consumers. Generally, consumption amongst women of reproductive age and children under five is low. In this study, the sensory properties that drive liking for local boiled milk and other heat-treated milks in women of reproductive age and children between 1 and 5 years of age was studied. External preference mapping was used to understand the sensory properties of the milks that were liked by the two consumer groups. The sensory properties of boiled milk that made women of reproductive age like a particular product was its sweet and salty taste, smooth mouthfeel and artificial flavour. For children between 1 and 5 years, the oily aftertaste, boiled egg aroma as well as its sweet taste made them like the same product as the adults. This product also had a cooked aroma and flavour which could have influenced liking in the consumer groups.
