By making porridge into a uniform liquid porridge with a mixer, baby food and people with weak chewing ability can eat it. Uniform liquid porridge poses a risk of aspiration for people with impaired swallowing function. In this study, we report the result of making the white rice porridge with salmon into a uniform liquid porridge with a mixer and adding four different types of Thickener to increase the viscosity. By adding salmon as an ingredient, the amount of protein was higher than that of white rice porridge. By adding two types of Thickener containing dextrin and calcium lactate, the viscosity remained stable over time. As a result, lifestyle habits have drastically changed. There are concerns about living indoors rather than going out, lack of exercise, increased alcohol consumption, irregular eating habits, and lack of sleep or excess sleep. In June 2022, we were finally able to hold a small number of health classes, and we conducted a questionnaire survey on the current living situation so that we will report the results. Participants were 20 elderly females who had been informed about the study and agreed to a consent form. Participants measured their height, weight, blood pressure, and completed a self-reported questionnaire. The content of the self-reported questionnaire survey was the smoking habit, drinking habit, exercise habit, sleeping time, and supplement intake. As a result, water, gas, and electricity cannot be used, making it impossible to prepare meals. If you always have ready-to-eat porridge, you do not need to cook it, and can eat it whenever you want. The porridge with a lot of water causes aspiration in older people. In welfare facilities and hospitals, a thickener is used to adjust the viscosity of porridge so that the elderly can safely swallow it. In this study, we measured the thickness of commercially available porridge using the line spread test (LST). First, the viscosity of commercially available white rice porridge was assumed. Next, the white rice porridge was homogenized with a mixer, and the thickness was measured. Two g of each of the four commercially available thickeners was added to white rice porridge, homogenized with a mixer, and the viscosity was measured after stirring for five minutes. Viscosity measurements were taken 30 seconds, 5 minutes, 15 minutes, and 30 minutes after each porridge placed on the measuring plate. Retort porridge contains water and can be eaten directly from the container. However, there is a risk of aspiration for people with impaired swallowing function. As a result of the line spread test (LST), which was performed after homogenizing white rice porridge with sticky barley using a mixer, it was found that the viscosity was weak, and there was a risk of aspiration for people with weakened swallowing function. The thickness was added to white rice porridge with sticky barley by using four types of commercially available thickening agents that was made into a uniform liquid with a mixer. A line spread test (LST) was performed by adding 2 g of each thickening agent to 100g of liquid porridge. As a result, the viscosity of the liquid porridge was stabilized and thickened, and it became a state that could swallow more safely. Apium graveolens (celery) has potential benefits in many disorders. Aim of the study: To investigate the possible protective role of celery seeds extract (CSE) against the damaging effects of CP on the liver. Materials and Methods: The study has included five groups of rats divided into, Group 1 as normal control, group 2 received a single dose (7mg/kg, i.p.) of CP, groups 3, and 4 pretreated daily with CSE in two different doses; group 3 (250mg/kg) and group 4 (500 mg/kg), and group 5 pretreated daily with the hepato-protective agent silymarin (100mg/kg) for 17 days followed by CP injection. Results: CP markedly affected the liver function. The glutathione peroxidase, and interleukin-6 levels were significantly decreased while the levels of heme oxygenase-1, interleukin-1 alpha were markedly elevated in the tissue homogenates of CP injected rats. The administration of CSE has ameliorated all the altered biochemical and histopathological changes of the liver; the antioxidant enzyme glutathione peroxidase, IL-6 level, and prostaglandin E2 were markedly increased while IL-1 alpha was reduced. We examine in this paper the factors determining the choice of complementary foods for children aged 0-23 months in southwest Benin. The data comes from the Unt Amed survey conducted by the Applied Anthropology Research Group (AARG) in December 2020. The study employed an unordered multinomial logit regression model and bivariate analyses. Through conometric models, results show that complementary foods are introduced early to children. The choice of complementary foods is dependent on average family income, mother's occupation, food taboos, number of economically active persons in the household, residence environment, family food consumption score, survival strategy adopted by the family and reduced coping strategy index. Any inappropriate diet for pregnant women or infants has an irreversible impact on a child's bio-morphological and cognitive levels,\u0000leading to chronic malnutrition. This study assesses the factors that explain adherence to dietary taboos or restrictions and the factors statistically significantly related to the choice of nutritional restrictions in households housing stunted children under five years of age in southwest Benin.\u0000Data were collected in December 2020 on a sample of 558 families in 40 villages in the\u0000commune of Bopa in southwest Benin. Socioeconomic data from families, and anthropometric data from children (498) are analyzed within univariate, bivariate and binary logit regression methods.\u0000Results show that 36.3% of children are stunted, and 76.2% of households with stunted children have food taboos. In addition, 69.6% of households have at least one taboo on consuming beef, goat, poultry, pork, eggs, and fish, reducing in-take of the required micronutrients child growth. The gender of the head of the household, their occupation, religion, level of education, age category, area of residence, level of education of\u0000the wife of the head of the household, and average monthly household income have\u0000statistically significant effects on adherence to food taboos and restrictions in the household diet. MF-1.
