The purpose of the work was to test the bulls-producers of meat breed on their own productivity and the quality of offspring. Materials and Methods. In the course of the study, generally accepted zootechnical and mathematical methods of analysis were used. The digital material was biometrically processed on a PC using the Microsoft Office Excel program. Results. 3 groups of bulls were selected. The 1st group included bulls of the genealogical line of the bull-producer Runaway 2113, the 2nd group of the Journal line 2101 and the third Violent 2140. The average score for the 1st group of bulls was 34.5 and the complex index was 99.4, respectively, for the 2nd group 35.6 and 101.9 and for the 3rd group 34.3 and 98.6. Lifetime assessment of meat qualities showed that the bulls of the 2nd group had the best meat forms and surpassed their peers by 0.6-0.7 points. Conclusion. Study of the correlation dependence of clinical and physiological parameters of animals of the Kalmyk and Russian hornless breeds and meat productivity. Materials and Methods. Experimental studies were carried out on the basis of the farm \"VolgoDonAgro\" LLC (Volgograd region) using classical and modern zootechnical, biochemical and other methods. Object of research: young animals of Russian hornless and Kalmyk breeds. Feed diets were made taking into account the level of average daily gains of 950-1000 g. The calculation of the components was corrected using the KormOptimaExpert program. Studies of the chemical and biochemical composition of the blood of experimental young animals were carried out in the laboratories of VRIMMP (Volgograd), Federal Research Center for Animal Husbandry named after Academy Member L.K. Ernst (Podolsk, Moscow region). The level of specific immunoglobulins was determined by the Mancini method. All the results obtained during the experiment were processed by the methods of variation statistics using the Excel (Microsoft, USA) and Statistica 10.0 (Stat Soft Inc., USA) software package. Results. An increased content of hematological parameters in young animals of the Russian hornless breed was established in comparison with animals of the Kalmyk breed: erythrocytes – by 6.79% (P>0.95), leukocytes – by 0.37%, hemoglobin – by 1.26% (P>0.95), as well as lysozyme activity – by 0.36% (P>0.95), bactericidal – by 1.19% (P>0.99), phagocytic – by 0.86% (P>0.95) respectively. The superiority of young bulls of the Russian hornless breed in terms of the level of immunoglobulins in the blood serum was: LgG – 5.87% (P>0.95), LgM – 5.38% (P>0.95), LgA – 13.16% (P>0.99) respectively. During the period of the experiment, the animals of the Russian hornless breed gained 231.02 kg of live weight, and the analogues of the Kalmyk breed – 207.87 kg. The mass of young bulls of the Russian hornless breed is 10.02% higher compared to the Kalmyk analogues (P>0.99). The correlation coefficient of erythrocytes with live weight was higher in animals of the Russian hornless breed compared to Kalmyk breed analogues by 0.05%, leukocytes with live weight – by 0.03% and hemoglobin with live weight – by 0.05%, respectively. Conclusion. The study of the genetic polymorphism of erythrocyte antigens in Kalmyk, Kazakh white-headed, Hereford and Simmental cattle, to evaluate their genetic structure, and to compare the blood groups of Kalmyk cattle in the Republic of Kalmykia and the Astrakhan region. Materials and Methods. A comparative characterization of the genetic structure by blood groups of Kalmyk cattle of the Republic of Kalmykia with cattle of the Kazakh Whitehead, Hereford, Simmental and Kalmyk breeds of the Astrakhan region was carried out. Blood group testing was conducted according to standard methods (Neimann-Sorensen) using monospecific serum (Nei M. and Li W.H., 1979) produced by JSC \"Samarskoye\" for breeding work. Results. Immunogenetic testing of animals was performed according to standard methods (Neimann-Sorensen) using reagents – monospecific serum produced by JSC \"Samarskoye\" for breeding work. Analysis of immunogenetic testing of Kalmyk cattle in the Republic of Kalmykia established the highest frequency of B2 (69%), E'3 (82%), C1 (88%), W (67%), Z (71%) antigens and the lowest frequency of B' (15%), Q (10%), C2 (17%), F (19%). Blood group testing of Kazakh white-headed breed showed that A1, I', C1, W, L, F antigens had a high frequency index and were 63; 79; 73; 66; 91; 87%, respectively. The antigens B2 (20%), G3 (11%), Y2 (2%), F' (11%), C2 (5%), X2 (5%), U' (12%) had a low frequency rate. Antigens such as O2 and H'' were not found at all. The highest frequency of occurrence of the Hereford antigens was in G2 (69%), O3 (65%), O4 (58%), Y2 (67%), Q (61%), C2 (72%), X2 (59%), L (71%), V (68%), the lowest in B2 (15%), I1 (14%), I' (17%), R2 (13%). The highest frequency of the Simmental breed was observed for the A2 antigen at 66%, Y2 at 77%, C1 at 91%, F at 90%, and H' at 65%. The lowest frequency was observed for the B2 antigen – 5%, I1 – 12%, F' – 11%. Antigens A'2, I', W and U' did not occur at all. Blood group testing of Kalmyk breeds of Astrakhan cattle showed the highest frequency of antigens A2 – 100%, I1 – 70%, A'2 – 90%, O4 – 70%, E'3 – 92%, F' – 70%, R2 – 94%, L – 90%, F – 71% and Z – 100%. Antigens with minimal frequency are O2 (1%), I' (2%), C2 (11%), S1 (1%). Antigens such as O3 and Q were not observed at all. Conclusion. It has been established that the cattle of the Kalmyk breed bred in Kalmykia differs from the animals bred in another zone, providing further improvement of the breed. To develop a line of meat products – chopped gerodietic ham using various types of meat raw materials, lactulose and Glimalask food additive, which has a reduced fat and sucrose content and an increased protein content and basal metabolic rate (BMR). Materials and Methods. The objects of the study were: samples of boiled ham, made in accordance with GOST 31790-2012 and the author's recipe, with the addition of lactulose and Glimalask food additive. In the preparation of control and experimental samples, the following was used: chilled beef of category I – according to GOST 34120-2017, broiler chicken fillet – according to GOST 31936-2012, trimmed lean pork without visible inclusions of adipose tissue, chilled – according to GOST 31476-2012, nitrite salt – according to GOST R 58859-2020, granulated sugar – according to GOST 33222-2015, lactulose \"Premium\" – according to TU 9197-055-54863068-2014, Glimalask complex food additive (TU 2639-182-10514645-12), food phosphate Hamifos 304 (sodium triphosphate 5-substituted (E451i), P2O5 content of at least 56.0% (manufacturer: Fosfa a.s., Czech Republic); drinking water – according to GOST R 51232-98. Development and research of control and prototype samples were carried out according to generally accepted methods in accordance with regulatory and technical documentation. Organoleptic quality indicators of samples in the course of research were determined in accordance with GOST 9959-2015. A 5-point scale was used taking into account the weight coefficient of organoleptic indicators. Mass fraction of sodium chloride (common salt) was determined according to GOST 9957-2015. Mass fraction of protein was determined according to GOST 25011-2017. Mass fraction of fat was determined according to GOST 23042-2015. Mass fraction of nitrite was determined according to GOST 29299-92. Results. Recipes and a technological scheme of boiled gerodietic ham with a high protein content, no added sugar and low fat content, which have high consumer qualities without compromising organoleptic characteristics, have been developed. Conclusion. The expediency of using lactulose and Glimalask food additive in the production of chopped ham with partial replacement of pork with broiler breast meat and beef has been substantiated. The study of the effect of the inclusion of non-protein nitrogenous substances in the diet of young bulls on the breakdown of protein in the rumen and the digestibility of nutrients in diets. Materials and Methods. In the course of the study, zootechnical, biochemical and mathematical methods of analysis were used. The obtained digital material was processed by the method of variation statistics, taking into account the Student's t-test, using the Microsoft Excel software package. Results. As a result of studying the effectiveness of using of carbamide concentrate in the amount of 10, 15, 20 and 25% as part of compound feed in the feeding of young cattle, it was found that the degree of cleavage of feed protein with the addition of carbamide concentrate in the amount of 10-30% of the feed weight was 56-63% after 4 hours of incubation, 70-75% after 6 hours and 79-84% after 24 hours. As the results of the experiment showed, in the rumen of the animals of the experimental groups, a pH shift to the neutral side by 4.1-7.8% was noted, and when 25 and 30% of the studied feed were included in the diet, the difference turned out to be significant. There was also an increase in the amount of protein nitrogen and infusoria in the rumen of young animals that consumed 10, 20 and 25% of urea concentrate as part of compound feed. In the cicatricial fluid of bulls consuming compound feed with the inclusion of urea concentrate, the protein cleavage was higher than in the control group animals consuming compound feed without urea concentrate. The digestibility of nutrients in groups of animals with 10 and 20% introduction of carbamide concentrate into the compound feed increased by 1.08-11.22 percentage points. Conclusion. The degree of cleavage of the feed protein with the addition of carbamide concentrate in an amount of 10-30% of the feed weight was 56-63% after 4 hours of incubation, 70-75% after 6 hours and 79-84% after 24 hours. The digestibility of dry matter in groups of animals with 10 and 20% introduction of urea concentrate into compound feed increased by 2.89 and 1.71 pp., fat – by 11.22 and 2.28, protein – by 10.0 and 8.23, organic matter – by 2.14 and 0.81, Nitrogen-free extractive fraction – by 4.81 and 1.08 pp., in relation to control. Study of the organoleptic, physical and chemical indicators of dry-cured snacks from rabbit meat using the Glimalask food additive. Materials and Methods. In the course of the research, standardized methods of analysis were used. The object of the study were two samples of products - dry-cured meat snacks from rabbit meat, produced according to the traditional technology of dry-cured meat products according to the developed recipes. For the development of laboratory samples, a marinade based on soy sauce, water and a complex of spices was used, while the Glimalask food additive (TС 2639-182-10514645-12) was additionally introduced into the experimental sample. To identify the indicators, standardized analysis methods were used: pH was determined according to GOST R 51478-99, water-binding capacity, water activity index, total moisture content – by drying, protein – by the Kjeldahl method and fat – by extraction method. The organoleptic evaluation of the obtained snacks was carried out using a nine-point scale in accordance with GOST 9959-2015. Results. Organoleptic evaluation: appearance, juiciness, consistency, color and taste, of the studied samples was carried out after drying. Thus, the prototype sample was rated higher than the control one, this is due to the use of the Glimalask food additive, which provided brighter taste and aroma characteristics and increased the juiciness of the snacks after the completion of the heat treatment. Next, the physicochemical parameters of the developed products were studied. It was revealed that in the test sample there was an increased protein content – more by 1.1%, moisture was less by 0.7% compared to the control, and the test sample of snacks was characterized by a high yield. Conclusion. Based on the results of the studies, it can be concluded that the use of the Glimalask food additive in the marinade recipe for the manufacture of dry-cured snacks did not have a negative impact on the finished product and contributed to the improvement of the taste, aroma and consistency of the finished products. The developed product has high consumer characteristics, meets the task of expanding the range of rabbit meat products. Comparison of the productive qualities of purebred lambs of the Edilbay breed and crossbred animals obtained from crossing rams of the Dorper breed with ewes of the Edilbay breed. Materials and Methods. Scientific and economic experience was carried out in the conditions of the M.G. Shangeraev farm (Chernoyarsky district, Astrakhan region) on 60 heads of lambs of the Edilbay breed and Dorper-Edilbay crossbreds aged from birth to 4 months of age. Live weight of lambs was determined by individual weighing on electronic scales with an accuracy of 0.5 kg in the morning before feeding, pre-slaughter weight – after fasting for 24 hours. Meat productivity was determined by the results of the control slaughter of 3 typical lambs for each group according to the method of All-Russian Research Institute of Beef Cattle Breeding (1984). The digital material of the research was processed by the methods of variation statistics according to Plokhinsky N.A. (1969) on a PC using Microsoft Office software and determining Student's reliability criterion. Results. Under the identical growing conditions up to 4 months of age, the average live weight of crossbred lambs was 43.6 kg, which is 3.1 kg or 7.65% higher compared to purebred edilbays. Feed costs per 1 kg of live weight gain in crossbred animals were lower by 0.34 energy feed units and 36.7 g of digestible protein. The superiority of crossbred lambs over purebred animals was 2.33 kg or 11.34% in slaughter weight, and 1.68% in slaughter yield. Conclusion. The production of young lamb from purebred and crossbred animals is expedient. The study of the productivity of rabbits when using hydroponic green fodder in feeding rations. Materials and Methods. The experiment was carried out in the conditions of a mini-farm of the agrarian faculty of Kalmyk State University named after B.B. Gorodovikov. According to the principle of analogues, two groups of rabbits of the Gray Giant breed were formed at the age of 2 months. Each group consisted of 10 heads. The period of the experiment is 3 months. Animals of the control group received a general farm ration, the rabbits of the experimental group were nutritionally replaced with alfalfa hay with hydroponic green fodder in the amount of 200 g in the first month of the experiment, 300 g in the second and third months. Rabbits were weighed monthly to measure their live weight, and at the age of four months, measurements were taken to determine the rate of their growth and development. Economic efficiency was determined according to the accounting data for the costs of young animals growing and the cost of products sold. The research materials were processed on a PC using the Microsoft Office software package. Results. The conducted studies showed that the rabbits that received hydroponic green fodder with the diet surpassed the animals of control group in live weight after a month of growing by 10,15% (P≥0.95) and after three months – by 19.95% (P≥0.99), in absolute growth – by 37.23% (P≥0.95) and 33.36% (P≥0.99), relative growth – 21.1 and 5.4%, respectively. The massiveness index was also higher in the animals of experimental group by 7.1%. Conclusion. The article is devoted to some aspects of creating technologies of the future agro-industrial complex of Russia. The focus is on a systematic approach to the development of complex self-organizing technological systems for food production. Discussion. The range of issues discussed includes: consideration of food technology as part of the systemic complex \"agrarian-and-food technology\"; adaptation of the technological properties of agricultural raw materials to processes in machines, apparatuses and bioreactors of food production; the dynamics of the development of agro-industrial complex technologies; interpretation of the basic laws of dialectics from the point of view of the development of agro-industrial complex technologies in the 21st century; strengthening the integrative qualities of manufacturing and processing technologies when creating a system complex; features of the storage technology of agricultural raw materials, partially or completely processed agricultural products as an integral part of the complex \"agrarian- and-food technology\". Particular attention is paid to the dialectical complication of AIC technologies. Conclusion. End-to-end technological systems combine into a single whole a large number of heterogeneous systems – autonomous technologies from the production of raw materials to sale to consumers and are created to obtain a significant increase in efficiency in food production. The creation of fundamentally new industrial-type technologies to solve the problem of ensuring the safety and quality of food products can form the Sixth technological mode in the agro-industrial complex. Assess the features of milk production and dairy cattle breeding in the southern regions of Russia in the face of new global external challenges. Materials and Methods. The main scientific method of research is the horizontal and vertical analysis of open statistical reporting posted on the open website of the Federal State Statistics Service, analytical materials of the Dairy Union of Russia. Mathematical extrapolation tools of the Excel program were used for calculations and making forecasts. To formulate the conclusions, the methods of logical analysis, comparison and generalization of the data presented in the calculation materials and press releases were applied. Results. An assessment was made of the dynamics of raw milk production by all categories of dairy farms in Russia over the past 10 years. It has been established that milk production volumes have increased due to intensive milking and animal husbandry technologies, which made it possible to achieve self-sufficiency in milk up to 80%. Modernization of the dairy complex with the most advanced robotic equipment has allowed farms not only to increase milk yield per cow, but also to significantly improve the quality of milking and the quality of the resulting product. Examples of best practice in terms of milk productivity in the conditions of the South of Russia were demonstrated by enterprises of the Krasnodar Territory and the Volgograd Region. An alarming factor is the reduction in the dairy population of animals. Nevertheless, milk production is intensive against the backdrop of a reduction in the number of dairy cattle, but this factor must be taken into account in the future and its impact should be neutralized through a positive trend in the growth of the number of livestock. Conclusion. On the basis of the study, conclusions were drawn about the need for further expansion of state support measures for the industry and the search for options for introducing Russian-selected animals into production in order to reduce import dependence on foreign genetic material and technologies.
