The latter has been highlighted through National Declarations of Heritage as the one concerning Picanterías and chicherías piuranas cultural spaces (2015). Nevertheless, the cultural tradition of Piura, in all its forms, as has happened in Peru, has been enriched through the contributions of different migrant groups, such as the Chinese, coexisting and creating a diverse culinary culture, with practices and flavors appropriate and resigned by the local collective memory. Piura was a department that, in the second half of the 19th century, received a minority Chinese migrant population, compared to regions such as Lambayeque and La Libertad (Gutiérrez and Vargas, 2016, p. 76).   But, as happened in other places with higher migration density, the fondas had an early appearance and, later, the chifas. What products did they offer and how was this cuisine received by the local population? What local inputs would they have provided in this easy incorporation of chifa into the tables of Piura's population? And what memories are associated with these gastronomic spaces? Thus, VENTURAGRO, attached to Universidad Nacional Experimental de los Llanos Occidentales Ezequiel Zamora (UNELLEZ), used the Moodle platform for training in agroecological tourism. In this study, the management indicators of these trainings between the years 2020 and 2022 are described. The research approach is qualitative, it is field descriptive, the technique is documentary and the method of systematization is of educational experience. The instrument for data collection is the Socio-Community Linking Format . The sample is of intentional type, it includes 2518 participants trained through courses, workshops, forums, diplomas and projects; 450 institutions, including universities, tourism service providers, communities, tourism professionals and entrepreneurs at the national and international level. The objective is to assess the citizen perception of the gastronomic cultural heritage in the tourist management of the canton of Jipijapa, delving into the economic, social, environmental and cultural analysis. The results showed that the gastronomic cultural heritage in tourism management is remarkable, in the planning, organization, coordination and control of tourism, that tourism management can be improved with the inclusion of the gastronomic cultural heritage, traditions or customs, processes and traditional artisan food preparation techniques and their presence in festive activities as an added value generates new economic income, employment, life change and social well-being, as well as helps to strengthen the gastronomic cultural heritage and tourism management, with the presence of tourist attractions. Puerto Vallarta, a tourist city in the state of Jalisco, the center and motor of development of the area, a destination for the coastline of traditional unplanned development that has made tourism the base of its economy, is a mature destination that requires diversification and new revitalizing agents of the tourism. The objective of this work is to display the territorial conceptualization that defines the main characteristics of the Puerto Vallarta Art District, based on a sociodemographic and economic analysis of the downtown area of ​​the city, which would provide a new life by diversifying the existing cultural offer. and becoming a complementary alternative to the traditional offer of sun and sand. Some of the conclusions are that it is observed that there is a permanent construction of a creative economy in the art district of Puerto Vallarta. To understand this relationship, semi-structured interviews were conducted with the students, information on archaeological interventions in general was reviewed, and the most representative archaeological sites of each district were visited.
