Aim. Study of the issue of forming the quality of bread with the addition of sesame flour. Methods. Laboratory, mathematical and statistical, physico-chemical. Results. According to the results of trial laboratory baking, it was founding that in the case of adding sesame flour, the initial acidity of the dough compared to the control increases by 0.2–0.7 degrees, which is due to the presence of fatty acids in sesame. However, the intensification of acid accumulation during the maturation of the dough was not observed. In the dough samples with the addition of sesame flour, a lower fermentation intensity was observed compared to the control, which is confirmed by a lower release of CO2 during the fermentation of the dough and the aging of the dough pieces. Thus, the total gas formation in the samples from 5 % sesame flour decreased by 6.5%, from 10.0 % – by 12.0 %, from 15 % – by 16.5 %. The duration of aging of dough pieces with sesame flour is reduced, compared to the control by 5–12 minutes. Finished products with the introduction of sesame flour are obtained with a more intensely colored crust than in the control. When 5 and 10% of the crushed sesame seeds were added to the weight of the flour, the products had uniform, thin-walled porosity and elastic crumb. The taste and aroma of these products was characteristic of wheat bread with a pleasant delicate taste of sesame. In the case of dosing of crushed sesame seeds for 15 % by weight of flour, products with less elastic pulp and too pronounced taste and smell of sesame seeds were obtained. It was found that the proportion of finished products with the introduction of sesame flour is reduced by 2.0, 4.5 and 7.5 %, respectively, increasing the dosage. The shape stability and porosity of the products decreases with increasing dosage of sesame flour. Conclusions. The addition of sesame flour changes the quality of wheat bread. Thus, the acidity of the crumb increases from 1.9 to 2.9 deg. Nevertheless, the stability decreases from 0.45 to 0.35, the porosity – from 75 to 57 %, the specific volume – from 2.84 to 2, 50 cm3/100 g. It is established that it is optimal to add 10 % of sesame flour, which promotes the production of bread with good quality indicators.","PeriodicalId":320089,"journal":{"name":"Collected Works of Uman National University of Horticulture","volume":"9 1","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2021-06-25","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"114322601","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

Currently, not studied yet the passage and changes in the production processes of garlic plants under the influence of reproduction, which in some way constrains the industrial production of planting material and marketable products in general. Studies on the impact of reproductions on changes in physiological state, plant resistance to disease and productivity were conducted during 2017–2020 in the research field of the Department of Vegetable Growing, Uman National University of Horticulture. During the biometric measurements, a significant change in the variation of approbation traits (height of the plant and scape, number of leaves and its size, number and weight of bulbils, cloves in the bulb) of garlic plants under the influence of reproduction, ie variety testing must indicate what is this generation. There was a significant decrease in the concentration of chlorophyll and the antioxidant enzymes activity in the leaves in III–V reproductions, which significantly affected the productivity and tolerance of plants. Indicators of plant damage disease on a natural infectious background indicated a sharp decrease in the resistance of plants of the Sofiivskyi cultivar in IV–V reproductions, Prometei and Lyubasha cultivarss in III–V. It was found that in the cultivar Sofiivskyi the largest mass of the bulb was formed in the first reproduction, while in the cultivars Prometheus and Lyubasha – in the second, and its gradual decrease to 21.2 % in the fifth reproduction. Yield had a similar trend, where the maximum reduction in yield was observed at 18.2; 28.0 and 17.0 % in the cultivars Sofiivskyi, Prometei and Lyubasha. The developed scientifically substantiated provisions will allow to increase efficiency of selection process and production of seed material.","PeriodicalId":320089,"journal":{"name":"Collected Works of Uman National University of Horticulture","volume":"63 1","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2021-06-25","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"116543173","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

Sources for selection and creation of such donors are gene pool collections, which concentrate source material of different geographical origin with a set of valuable breeding and genetic characters. The level of expression of these characters is modified by breeding conditions and the response of the genotype to environmental factors. Therefore, the main purpose of our research was to study the manifestation of morpho-biological features and properties of plants of tobacco collection samples in agroclimatic conditions of the Central Forest-steppe of Ukraine, establishment of breeding value of available gene pool of culture, selection of sources of economically valuable characters and formation of working tobacco collection. The strategic task of research is to create the varieties that are able to maximize the use of their genetic potential in a specific region, to be resistant to stressful environmental conditions, to ensure a high realization of the genetic potential of productivity. For the first time in the conditions of the Central Forest-steppe of Ukraine the analysis of 30 collection samples of tobacco of different ecological and geographical origin was carried out. New genetic sources for morphological character of plants, raw yield, seed productivity and early maturity, which are used at the Experimental station of tobacco farming National Research Center \"Institute of Agriculture of the National Academy of Agrarian Sciences\" in variety breeding, were identified. A certificate of registration of the working collection of tobacco gene pool of the present on morphological characters was received from the National Center for Plant Genetic Resources of Ukraine, according to the results of research in 2017–2019 (Certificate № 277 from 29.10.2019).","PeriodicalId":320089,"journal":{"name":"Collected Works of Uman National University of Horticulture","volume":"37 1","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2021-06-25","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"132095489","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

To distribute our maize material by precocity, a number of studies were conducted, namely: estimating the length of the growing season \"shoots-full ripeness\", which was determined in days, and a very important indicator-grain moisture at harvest as a percentage, it allowed to distribute two groups: early-maturing – (106–114) and middle-early – 114–123 days. Over the years of testing, the weather conditions varied considerably, which made it possible to evaluate the material under study in detail. In 2020, the growing season in the early-maturing group of lines was within 104.0 days, which is almost five days less in 2019. This trend was also observed for the group of middle-early lines. At the same time, the longer vegetation period was in 2019. Therefore, the aim of our study was to analyze the rate of moisture yield of corn grain of the studied lines of different maturity groups. The conducted researches allowed to trace the dynamics of grain moisture yield of corn lines of different maturity groups, to determine the variability of grain moisture of hybrids in different periods of grain maturation. 2019 was more favorable for growing corn, the plants formed a large vegetative mass, but the grain had a high humidity during the harvest period. This is due to a significant amount of precipitation (46.0 mm) in September 2019. Lines that had high harvest humidity were characterized by a long growing season, such as Um 337 and VIR 44. The group of the most productive included lines Um 337, Um 331, F7 and line MAN 053, which were ahead. The following year, Mind 337 and Mind 331 as a whole confirmed their positions, while F7 and MAN 053 yielded significantly lower yields.","PeriodicalId":320089,"journal":{"name":"Collected Works of Uman National University of Horticulture","volume":"745 1","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2021-06-25","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"133692043","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

The aim of the research was to establish the regularities of various forms and doses of chemical ameliorants in combination with mineral fertilizers influence on the yield of winter wheat on soddy-podzolic soil in the conditions of the West Polyssia. The application of ameliorants on the background of fertilization increased the indicators of the yield structure and plants survival. The highest results were obtained by using 1,5 and 1,0 doses dolomite flour (determined by the hydrolytic acidity) in complex with S40 and foliar dressing with microfertilizer. The obtained results were ear length – 9,0 and 9,2 cm, number of grains in an ear – 41,1 and 41,4 pcs. The mass of 1000 grains were respectively 43,8 and 43,7 g. The death of plants during the vegetation season from germination to harvesting was low – 18,2 and 19,0 %. It was founded that among the studied various doses and forms of limestone ameliorants on the background of N120P60K90, the application of 1,5 doses of dolomite flour contributed to increase pHKCl by 1,93 units (initial data pHKCl 4,47) and to grow up the winter wheat productivity on soddy-podzolic soil. The highest yield a 3,9 and 4,0 t/ha were ensured by the application of 1,5 doses and 1,0 doses dolomite flour in combination with S40 and microfertilizer on the background of N120P60K90. The yield increase to the control (without fertilizers) was 2,61 and 2,71 t/ha, to the background (N120P60K90) – 1,58 and 1,68 t/ha. The addition of sulfur fertilizers (S40) and two-time foliar feeding with Nutrivant Plus Cereals (2 kg/ha) during the spring tillering phase and stem elongation provided an 8% increase in yield.","PeriodicalId":320089,"journal":{"name":"Collected Works of Uman National University of Horticulture","volume":"17 1","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2021-06-25","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"128323790","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

It has been established that the use of root feeding of spring barley plants with mineral nitrogen simultaneously with an increase in grain yield also contributes to an increase in the quality of feed. At the same time, the crude protein and the amount of sugars increase, and the amount of fiber in the grain decreases. The amount of crude protein in spring barley grain on average for 2018–2020 varied depending on the dose of nitrogen when carrying out root fertilization with nitrogen. In the control without fertilizers, it was 12.9 %, when root feeding of plants with nitrogen at a dose of 20 kg/ha – 13.2 %; 30 kg/ha – 14.5 %; 60 kg/ha – 15.8 %; 90 kg/ha – 15.9 %. At the same time, it is observed that the crude protein in barley grain increases with an increase in the nitrogen dose to 60 kg/ha, and a further increase in the nitrogen dose is not accompanied by an increase in crude protein in barley grain. Simultaneously with an increase in the content of crude protein in the grain of barley, the percentage of fiber in the grain decreases during the root feeding of plants with mineral nitrogen. The percentage of mineral salts in barley grain during root feeding with nitrogen remained at the control level. The amount of sugars increases when using root feeding of spring barley plants with mineral nitrogen. If in the control the sum of sugars was at the level of 5.20 % for the air dry matter of barley grain, then in the variants of root feeding with nitrogen it reached the level of 5.31 ... 5.56 percent. Consequently, an increase in the level of crude protein in barley grain during root feeding with nitrogen was not accompanied by a deterioration in the sugar-protein ratio in feed. This is very important for increasing livestock productivity. The studied method of root feeding of barley plants with mineral nitrogen promoted an increase in protein in barley grain. On the control, 358.9 kg of protein was obtained from 1 hectare of spring barley crops, 533.2 kg of protein per 1 hectare was collected on the root application with nitrogen 60 kg/ha, and 568.5 kg of protein was collected on the version of root feeding with nitrogen 90 kg/ha. per hectare.","PeriodicalId":320089,"journal":{"name":"Collected Works of Uman National University of Horticulture","volume":"136 1","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2021-06-25","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"124885932","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

To solve this problem is possible only in long-term stationary studies, as the impact of different fertilizer systems on changes in soil properties and tree productivity for a long period of their use. The results of researches of long-term fertilizer influence on the main fertility indices of dark gray podzolic heavy loam soil and productivity of repeatedly grown apple trees of Idared varieties on seed and vegetative (M4) rootstocks and Calville snow on seedling rootstock are considered. During the 85-year period of growing the first and second generation of apple trees in the experimental garden, the organic fertilizer (40 t/ha of cattle manure), mineral fertilizer (N120P120K120) and their combination (20 t/ha of manure + N60P60K60) were applied in the old plantation every two years in autumn in plowing in rows at 18–20 cm, and in the new repetition: manure, phosphorus and potassium fertilizers as well, and nitrogen fertilizer in half doses annually in spring for cultivation or disk plowing to a depth of 12–15 cm. As a result of research it was found that organic fertilizer better than mineral fertilizers provided the formation of soil fertility (humus and mobile compounds and forms of nutrients, soil reaction) and yield capacity of experimental apple trees, which for all years of fruiting exceeded the total yield of Calville snow and Idared on seedling and vegetative rootstocks, respectively, by 34.8, 27.7 and 23.4 % compared with the yield of the control non-fertilized areas and 16.0, 15.8 and 13.2 % – on those fertilized with N120Р120К120. To study the allelopathy of vegetable residues on sowing properties of soft wheat grain. Methods. Laboratory, mathematical and statistical, physical. Results. The highest germination energy was obtained in the variant with water, corn and wheat stalks – 100%, percentage germination was 95%. Under conditions of germination in rye, rape and oat stalks, percentage germination was 15–30 % points lower compared to the control. Germination of soft wheat grain in the stalks of other crops provided percentage germination of 15–50 %. Obviously, soybeans, sunflowers, mustard, peas, barley, flax, safflower, buckwheat and sorghum show high allelopathy during the germination of soft wheat grain. The highest seedling vigor was obtained during germination in water and in corn stalks – 50 %. This figure in wheat and rye stalks was 33 and 28 %, respectively, or 17–22 points lower than the control. During the germination of soft wheat grain in the stalks of other crops, the seedling vigor was the lowest – 8–22 %. The average germination rate varied inversely proportional to seedling vigor. On average, wheat grain in corn stalks germinated for 29 minutes which was at the control level. During germination in wheat and rye stalks, it grew for up to 43–58 minutes. During germination in the stalks of other crops, the average speed increased to 72–288 minutes. Different germination substrates changed the parameters of soft wheat stalks. This indicator was at the level of control over grain germination in rye and corn stalks – 9.2–9.3 cm with fluctuations from 8.1 to 10.3–10.4 cm, and the variation coefficient was small (V = 12.0–12.5 %). The stalk length was significantly shorter during germination in wheat stalks, but the variation coefficient was insignificant (V = 5.2 %). During germination in the stalks of other crops, the stalk length decreased from 7.3 to 0.6 cm. Coclusions. Germination of wheat grain in corn and wheat stalks did not affect the deterioration of germination. The lowest allelopathy was shown by grain germination in rye stalks. The article is devoted to the analysis of the Alexander Column symbolism in the Taras Shevchenko Park in Odessa. Methodology. Field study and bibliographic research, synthesis and analysis, historical method, and method of analogies are used in that work. Results. Achievements and a number of reforms carried out by Emperor Alexander II and his role in the history of the Russian Empire are analyzed. The historical facts, contributing to the creation of the Alexander Park and the Alexander Column, dedicated to the memory of the emperor, on the 10th anniversary of his tragic death, are investigated. The architectural and artistic decoration of the monument has been analyzed in detail and it symbolic meaning has been deciphered. The functional purpose of this object is to preserve the memory and high social status of the personality of Alexander II in history, his place in the royal dynasty. These are personal symbols, such as a medallion with the profile of the sovereign and commemorative inscriptions on marble plaques. These are different types of status symbols: secular (crown, sword, scepter), indicating a high imperial status and continuity of power, and religious (Vladimir Monomakh's hat) – a symbol of God's anointing to power. The symbols of the apotheosis, the transition to the kingdom of heaven, are double-headed eagles with wreaths. The coat of arms of Odessa, surrounded by laurel and oak branches, is a symbol of memory and gratitude of the inhabitants of Odessa. The Alexander Column depicts elements of royal power from different historical periods, with an indication of the continuity and divinity of the imperial power. Scientific novelty. For the first time a study of the symbolism of the Alexander Column in Odessa was carried out in a detailed level. All symbols are correlated in time and reflect the philosophy of the era and the continuity of generations and royal power in the history of the state. Practical significance. The Alexander Column is located today on the main visual axis, the main alley of the Taras Shevchenko Park. Being on a hill, it also acts as a pronounced dominant, attracting the attention of visitors to the park. In addition to the aesthetic and compositional significance, it bears historical and memorial value","PeriodicalId":320089,"journal":{"name":"Collected Works of Uman National University of Horticulture","volume":"80 1","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2021-06-25","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"132897139","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}
