El-Bana","doi":"10.36632/mejas/2021.11.1.4","DOIUrl":"https://doi.org/10.36632/mejas/2021.11.1.4","url":null,"abstract":"This study was carried out to investigate the utilization of defatted Chia seeds flour (DCSF) and defatted Moringa seeds flour (DMSF), as replacement of wheat flour at different levels (5, 10 and 15%) to prepare cookies rich protein and minerals. The obtained results revealed that, DCSF and DMSF, are very rich in protein, ash and fiber compared with CSF, MSF and wheat flour 72%.Wheat flour (72%) contains lower values in all determined elements excepted for sodium compared to chia and moringa seeds in addition, moringa seeds had higher values of potassium, phosphorus, copper, than those of chia seeds. The total amino acids of chia and moringa seeds were (56.97 %) and (79.13 %) respectively. Furthermore, moringa seeds were rich in essential and nonessential amino acids than chia seeds. Total saturated fatty acid of moringa seeds oil were higher (23.43%) than that of chia seeds oil (9.53%).High amounts of extracted polyphenolic compounds by ethanol from chia and moringa seeds were (1.63 and 1.34 mg gallic acid/g of DW) respectively. Moisture, crude protein, ash and crude fiber contents increased in cookies products in contrast, carbohydrates value decreased gradually with increasing the substitution levels of DCSF and DMSF. From the results of sensory evaluation, it should be noted that, fortification of DCSF and DMSF until 15% is acceptable for the sensory evaluation of cookies. Okoroma","doi":"10.36632/mejas/2020.10.4.61","DOIUrl":"https://doi.org/10.36632/mejas/2020.10.4.61","url":null,"abstract":"The dearth of Village Extension Workers (VEWs) who have requisite skills and competencies in the production of electronic media for extension education in the study area has remained the bane of effective extension education, particularly to rural clientele who are constrained by literacy to communicate. Hence, the study analyzed the capabilities of Village Extension Workers’ to produce electronic media for extension education in Imo State. Specifically, the study examined the level to which VEWs are trained in electronic media production; assessed the capabilities of the VEWs to produce electronic media; as well as assessed the relationship between the training given to VEWs and the capabilities of VEWs to produce electronic media. Data were collected from 120 sampled extension personnel using structured questionnaire. Data analysis was done using mean, standard deviation and Z-test. The results show that electronic media production skills taught in extension were inadequate as only 4 out of the 16 requisite skills areas understudied were taught to VEWs. The result also revealed that the average extension worker lacked the capability ( =0.6) to produce electronic media. At 5% Significantg level, the result showed that the training given to the VEWs on electronic production did not differ with the capabilities of the VEWs to produce electronic media (Z-cal =1.93; Z-tab =1.96). Sweet basil (Ocimum basilicum L.) is an important herb used for fresh and dry consumption and as a source of volatile oil. The aim of this study was to evaluate fresh sweet basil herb in response to packaging and cold storage treatments. Experiments were carried out at Sabahia Horticulture Research Station, Alexandria Governorate, Egypt. Samples (100g) were packed at seven different packages; unpacked (control), 3 punnets polyethylene (PE); Non-perforated polyethylene packaging (NPPEP), Lowperforated polyethylene packaging (LPPEP) and Medium-perforated polyethylene packaging (MPPEP), and 3 punnets polypropylene (PP); Non-perforated polypropylene packaging (NPPPP), Lowperforated polypropylene packaging (LPPPP) and Medium-perforated polypropylene packaging (MPPPP). The fresh sweet basil herb was stored at 7C during storage periods; 0, 5, 10 and 15 days in the two seasons. Lost weight, decay, dry matter, chlorophyll content, volatile oil and its main constituents were investigated. Results showed that lost weight and decay, increased with increasing the storage period. Dry matter, chlorophyll and volatile oil decreased with increasing storage period. Active components increased at end of storage period. Storage packages (PE and PP) showed significant differences in lost weight, decay, dry matter, chlorophyll, volatile oil and active compounds during storage. Sakha 53 a field experiment based on the completely randomized design was conducted. The results showed the important role of olea extracts and Salix alba leaves extract in decreased the harmful effect of drought stress on growth characters (shoot and root lengths and fresh weight of shoot and root). Spirulina platensis extracts caused significant improved of chlorophyll content, total soluble carbohydrate, phenol and protein compared with the stress sample. Salix alba and Psidium guajava leaves extracts caused significant increase in total soluble carbohydrate, phenol and protein. Algal and medicinal plants extracts shows significant decrease in proline and antioxidant enzymes content. It has potent anti-inflammatory, antioxidant, anti-obesity, and anticancer effects, thus there has been lately a virtual outbreak of interest in the pomegranate as a functional food. Pomegranate may have physiological effects on the intestines, and the gut microbiota plays an essential part in its therapeutic effects. Therefore, we believe that the beneficial effects of pomegranate are intimately tied to the intestine. Hence, we evaluated the immunomodulatory effect and the intestinal health benefits of the administration of pomegranate juice (PJ). Rats received 1 ml of PJ for consecutive 28 days. The present data revealed that PJ administration did not affect the production of TNF-α, INF-γ, and IL-8, but it enhanced the production of IL-4 exerting an anti-inflammatory effect. It increased villus heights and goblet cell numbers. Moreover, it improved mucosal immunity by enhancing the development of germinal center (GC) in the gut-associated lymphoid tissue (GALT) that is related to the production of efficient IgA. Specifically, the study assessed the relationship between school plants procurement and environmental aesthetics; operation of school plants and environmental aesthetics; and the relationship between school plant maintenance and environmental aesthetics of State Universities. Data for the study were collected from 336 respondents from Abia State, Anambra State, Ebonyi State, Enugu State and Imo State using survey method. Pearson Product Moment Correlation PPMC was used to analyze the data collected. From the result, the coefficient of correlation between school plants procurement and environmental aesthetics of State Universities was 0.35, indicating the existence of low but positive relationship between school plants procurement and environmental aesthetics of State Universities. The coefficient of correlation between operation of school plant and environmental aesthetics of State Universities was also low and positive (r = 0.24). The coefficient of relationship between school plant maintenance and environmental aesthetics of State Universities was 0.29 implying the existence of low but positive relationship between school plant maintenance and environmental aesthetics in the study area. The study concludes that school plant management practices are very important for sound education of students towards the realization of educational goals and objectives.
