Thus, new methods must be implemented in higher education studies, leaving guided learning, which is evaluated at the end of the course. The high percentage of abandonment of university studies calls for the implementation of teaching systems in which students are the main actors of the learning processes, under the guidance of the faculty. Moreover, a continuous assessment of students would help to increase student motivation by the continuous feedback of their effort as the course is underway. This work collects the results of different experiences carried out in three different degrees in the University of Seville (Mechanical Engineering, Chemistry and Materials Engineering). These experiences follow a methodology based on case studies, which finally motivated students in every course analysed and promoted the obtainment of higher marks.","PeriodicalId":263806,"journal":{"name":"Afinidad. Pérez Navarro, Amanda Acosta Solares, Erenio González Suárez, Nestor Ley Chong","doi":"10.55815/401374","DOIUrl":"https://doi.org/10.55815/401374","url":null,"abstract":"Due to the technological, energetic and economic impact of spray drying in the production of acetylated gelatinized starch from native starch of Manihot esculenta Crantz (Cassava), the objective of this work is to optimize the dynamic profitability indicators considering as optimization criteria the production capacity and the drying air temperature, and establishing the detailed design of the installation under optimum conditions.  A composite central experimental design was generated for the indicators Net Present Value (NPV), Internal Rate of Return (IRR) and Discounted Payback Period (DRP).  The regression models of the profitability indicators were optimized by ridgeline analysis through the Response Surface Methodology. For the evaluation of the indicators, the economic indexes of the process were determined, after technological selection, material and energy balances and technological design. The optimum economic variant has an NPV of USD 2 862 010, an IRR of 45,51 % and DRP of 3 years and is reached when 3454,45 tcassava/y are processed and the air feed temperature to the spray dryer is 184 °C, but the energy index is not favorable. An option that adequately combines energy, environmental and technical-economic results can be used by processing 3150 tcassava/y with 130 °C in the air feed to the dryer, reaching favorable economic results with NPV of USD 2 767 166, IRR of 37,99 % and DRP of 3,45 years and drastically reducing fuel consumption, although increasing the size of the spray dryer.","PeriodicalId":263806,"journal":{"name":"Afinidad. After careful collection and laboratory culture, the microorganisms can develop hydrolysis and fermentation processes in bioreactors. Kinetic models for their growth are applied, being the most used those of Monod, Moser, Blackman and Powell, which combine mathematical models and experimental work. \u0000The objective of this study was to determine the kinetic behavior of Bacillus subtilis (Bal3) to size the equipment needed to obtain enough amount of enzimes to produce  500 hl of ethanol at 70% per day. A medium composed of 60 g of sugarcane bagasse and 350 ml of whey in 1L of water with 0.02 g of inoculum was placed in a 2L Bioflo/CelliGen 115 bioreactor for 130 h at 20° C and 150 rpm. The pH ranged from 6.8 (start) to 5.8 (end). A biomass-substrate yield of 19.34% and a biomass productivity of 0.048 g/L per hour were obtained. With the kinetic models of Velhurs-Pearl, Pirt and Luedeking-Piret, the mass balance was performed and the equipment volume was calculated. Monod's model was considered to adequately represent the growth behavior of the bacteria.","PeriodicalId":263806,"journal":{"name":"Afinidad. The objective of this study was to diminish the added maltodextrin and evaluate the effect of fructans concentration as carrier agent on the quality properties of chayote powder. The effect of the two stabilizing additives for chayote juice was studied through calorimetry, FT-IR spectroscopy and some physicochemical properties. The samples were prepared with 5, 7 and 10% maltodextrin concentration, added with 0, 2 and 4% fructans. The spray drying process was carried out with inlet temperature of 110, 115 and 120 °C. The treatments with added fructans showed lower moisture content than treatments with maltodextrin only. The powder stability was observed in the sorption isotherms, which presented a higher degree of hysteresis during storage where fructans were added. The addition of fructans significantly increased the glass transition temperature (Tg) of the powder. The FT-IR showed the ability of agave fructans to water retention. The micrographs revealed spherical particles in a range from 16 to 105 μm. The evaluation of physicochemical properties confirmed the addition of fructans confers stability to chayote powder.","PeriodicalId":263806,"journal":{"name":"Afinidad. Se efectuaron cinco muestreos en período de seca del 2020 y posterior análisis de los resultados físico- químico, bacteriológico en conjunto con la interpretación de índices integradores. Los resultados reflejaron la contaminación del pozo debido a que muchos parámetros están fuera de los índices establecidos, elevado contenido medio de hidrogenocarbonato, nitrato, nitrito, coliformes totales, termotolerantes y Escherichia Coli. Debido a esto, no son aptas como agua potable, ni para el abasto poblacional, por lo que es necesario realizarse tratamiento según el grado de contaminación. La misma presenta problemas de calidad para el riego, salinización del suelo y toxicidad sobre los cultivos; aunque recomendable para el abasto animal.","PeriodicalId":263806,"journal":{"name":"Afinidad.
