The chemistry of grapes is particularly important to winemaking, but the composition of other fruits such as apples, pears, cherries, and blackberries is also discussed. Sugars in fruits and their importance in winemaking are discussed. Since wine acidity is essential to biological stability and tartness, information concerning organic acids is presented for several fruits. {"title":"Air-sea exchange of carbon dioxide and oxygen induced by phytoplankton: methods and interpretation","authors":"J. New Horizon in July 1979. Some statistical methods useful in the analysis and interpretation of these data also are given. Data indicate that the in situ concentrations of CO/sub 2/ and O/sub 2/ can depart radically from their expected oceanic equilibrium values with respect to their atmospheric components in active upwelling areas. The departure from equilibrium is caused by both physical and biological processes. Dominant length scales are associated with the biological processes. The global distribution of primary productivity coupled with these and other small- and mesoscale measurements suggests that coastal and polar regions may be in nonequilibrium with respect to O/sub 2/-CO/sub 2/ exchange between ocean and atmosphere during parts of the year. The equatorial regions may be in nonequilibrium throughout the year. The chemical conclusions were drawn from all the data and observations, both physical and chemical, collected by direct investigation of the Shroud in 1978. The conclusions are that the body image is made up of yellowed surface fibrils of the linen that are at more advanced stages of degradation than the non-image linen. The chromophore is a conjugated carbonyl. No evidence was found in the body image of any added substances that could have contributed to the yellow color of the fibrils that form the image. The blood images on the cloth are made of blood. The data, taken together, do not support the hypothesis that the images on the Shroud are due to an artist.
