Palmitic-, linolic- and linolenie-acid firmly increase in concentration sharply before reaching the respiratory climacteric rise, but decrease in the maximum formation of aroma substances. C16- and C18-fatty acids are almost exclusively present as glycerides in ripened bananas of the species “Gros Michel”, whereas in apples of the species “Jonathan” these fatty acids are distributed over the fractions glycerides + waxes, galacto-lipids and phospholipids + sulfolipids.ZusammenfassungUnreife Bananen enthalten C2–C15-Fettsäuren als freie Säuren, reife jedoch C2–C6-Fettsäuren, hauptsächlich als Acylkomponenten von Estern. Palmitin-, Linol- und Linolensäure nehmen in der Konzentration kurz vor Erreichen des klimakterischen Atmungsmaximums stark zu, im Maximum der Bildung von Aromastoffen wieder ab. Enzymatic reactions, occurring with remarkable intensity without inhibition of the enzyme at the moment of cell destruction, also initiate the formation of components, which are not or only present in minor amounts in natural cells. By immediate inhibition of the fruit enzyme, followed by standardized and careful concentration, quantitatively and qualitatively “pure” metabolism products could be isolated; on the basis oft heir gaschromatografic and spectroscopical investigation, considerations on their biogenesis could be made.Four basicly different reactions are discussed:1.Amino acids as precursor of aroma substances in bananas.2.Derivation of aroma substances from the fatty acid metabolism.3.Change of phenyl-alanin to phenol-ether.4.Enzymatic-oxidative cleavage of unsaturated fatty acids.ZusammenfamungBiogeneseuntersuchungen über Aromastoffe von Früchten setzen voraus, daß die in kleinen Mengen und großer Zahl vorkommenden Aromakomponenten ohne enzymatische bzw. chemische Veränderungen isoliert and angereichert werden. Enzymatische Reaktionen, die ohne Inhibierung der Enzyme im Moment der Zerstörung des Zellverbandes mit erheblicher Intensität einsetzen, bewirken auch die Bildung von Komponenten, welche im natür-Zellverband nicht oder nur in untergeordneter Menge vorkommen. Durch Sofortinhibierung der fruchteigenen Enzyme und nachfolgende standardisierte und schonende Konzentrierung konnten quantitativ and qualitativ „echte” Stoffwechselprodukte isoliert und auf deren eingehender gaschromatographischer und spektroskopischer Untersuchung Betrachtungen über die Biogenese aufgebaut werden.
