The general scheme of bakery products production technology is given, where the parameters of the kneading process and the connection between the factors influencing the complex system of dough formation and the characteristics of the finished product are revealed.Ways of using germinated flax seeds in recipes based on wheat and rye-wheat bread with preservation of high organoleptic characteristics are proposed and selected. The analysis and the ways of regulation of structural and mechanical properties of dough on the basis of factors of influence are given: – usage of thick rye leaven and first-class flour 30:70 and supreme quality wheat flour with addition of germinated flaxseed (15% of the mass of wheat flour); – usage of thick rye leaven and first-class flour 50:50 with addition of germinated flaxseed (10% of the mass of wheat flour); – the usage of thick rye leaven and first-class flour 50:50 with addition of 20% of germinated flaxseed and also adding supreme quality wheat flour (15% of the mass of wheat flour). The even distribution of GFS in flour due to efficient mixing in determining the nature of the process is considered. Influential parameters were chosen: duration of mixing and non-variable factor – frequency of revolutions of the working body of the mixer. The quality of mixing of the mixture based on the key component – GFS – was evaluated. The quality of mixing was determined by the coefficient of variation of the key component of the mixture, i.e. GFS. Mixing curves are constructed – dependence of the coefficient of variation on the duration of mixing and the optimal mixing time is determined, which corresponds to the first minimum value of the coefficient of variation of the mixing curve. Three stages of kneading are distinguished: I (0…60 s) – zone of intensive mixing; ІІ (60…120 s) – zone of slow mixing and ІІІ (120…180 с) – zone of segregation. In addition, taking into account the specifics of the agrobiological properties of fodder beet root crops, after cutting of the hemlock, a significant number of roots (up to 5%) knocked out of the soil remain in the interrows, which are subsequently crushed by the wheels of the root harvester, that is, lost or damaged. The purpose of the work is to reduce losses and damage of fodder beets during their mechanized harvesting. The description of the technology of dividing the field into corrals and mechanized harvesting of fodder beets and technical means for their implementation is given. In this study, it is proposed to model the functional properties of shape memory alloys, namely, the dissipated energy range, strain range and stress range using the methods of machine learning. The modeling is carried ou in the specialized data mining software environment called Orange. There were built five models for each dataset by means of method of neural networks, random forest, gradient boosting, AdaBoost and kNN. The respective regression dependencies are obtained and K fold cross-validation with K=5 is performed. The errors and coefficient for R2 determination are calculated as the results of modeling by means of the above mentioned machine learning methods for the range of dissipated energy, stresses and strains on the number of loading cycles. The integral technology efficiency indexes of manufacturing and machining of polymeric material parts for gas transportation equipment are developed. A typical example of transmission with discrete-flexible connection can be considered as the movement of the drive elements of the chain. The use of chain gears as a drive for a wide range of technological machines with high requirements in order to ensure a certain law of motion of the executive bodies is the task of studying changes in its kinetic characteristics during operation. It is established that random deviations of the chain step from the nominal are the result of manufacturing inaccuracy elements of transmission and wear during operation. The mathematical model of motion gives an idea of the real interpretation of the kinematics of the chain transmission taking into account the uneven dimensions of individual links. The model makes it possible to present the components of deviations of the transmission movement from the given in two groups: deviations created by the accumulated error of the chain section, and movement. Numerical information based on the values of deformations at seven control points of the truss for chords and nodes was obtained as a result. A computer simulation experiment using SolidWorks software for similar impact parameters on truss was performed. Results comparison of full-scale physical model deformation and computer simulation experiments revealed its similarity. An interface for working with the system for different groups of users (students, teachers, developers) has been developed whose use allows you to download study materials and test tasks conveniently, to edit and adapt some meaningful links between information sections (Units), to pass training and test control, to form final reports of success and recommendations for further learning steps. The multi-set method of assessing the level of study of content units was described and the adaptive functionality of forming the content of educational lectures for review or in-depth mastering of the theoretical content was presented, which allows taking into account the initial level of student knowledge and his/her abilities to acquire new skills. The software has been improved with a system based on PWA (Progressive web app) technology, which has allowed us to realize such advantages of web applications as speed, convenience, and attractiveness. A technology of text questions and correspondent information units connection was proposed which was based on the theory of multiple approach use which has provided us with the mathematical determination of the indices of the unmastered pieces of knowledge which generate the text part of the adaptive training step. Implementation of PWA technology was performed using the following software tools Service Worker, Web App Manifest, HTTPS, and Application Shell, which allowed to perform client caching offline, speeded up the process of downloading and displaying graphic elements of the web page, provided the use of the proposed resource as a regular mobile application.
