VAC treatment increased the loss of astringency in ‘Mopan’ persimmon while maintaining firmness and sensory quality over an 8-d storage period. Transcriptomic and metabolomic analyses were used to investigate the effects of VAC on the metabolism of the fruit. Downregulation of genes involved in the proanthocyanidin (PA) synthesis pathway, as well as transport-related genes such as glutathione S-transferases L3-like (GSTs L3-like) and ATP-binding cassette subfamily G member-like (ABCG), was associated with astringency in VAC-treated fruit. Increased acetaldehyde that would occur as a result of the upregulation of alcohol dehydrogenase (ADH) and pyruvate decarboxylase (PDC), would bind with PA and facilitate deastringency. Upregulation of ethylene-responsive factors (ERF22, ERF21, ERF18, ERF17, ERF12, and ERF10) in ethylene signal transduction may also contribute to the activation of ADH and PDC genes, which would further facilitate deastringency. Downregulation of genes related to cell wall dissociation was associated with slower fruit softening. Expression of reactive oxygen species scavenging-related genes was upregulated in VAC-treated fruit. Genes associated with abscisic acid biosynthesis and signal transduction pathways had different expression patterns, resulting in lower abscisic acid content and delayed fruit ripening under VAC conditions. A series of genes in the carotenoid synthesis pathway were inhibited by VAC. Metabolomic analyses revealed increased contents of flavor amino acids, which would enhance sweet and umami taste while reducing the levels of malic acid, tartaric acid (contributing to sourness), and ʟ-arginine (associated with bitterness).","PeriodicalId":12427,"journal":{"name":"Food Quality and Safety","volume":"9 1","pages":""},"PeriodicalIF":0.0,"publicationDate":"2025-01-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"147878861","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":3,"RegionCategory":"农林科学","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

In the present study, we employed a rapid, scalable, and safe microfluidic-blow-spinning technique to develop a novel multifunctional dual-layered nanofiber film featuring asymmetric wettability and antioxidant and antimicrobial properties. The films consisted of a hydrophobic polycaprolactone (PCL)/ethyl cellulose (EC) layer loaded with thymol and a hydrophilic polyurethane (PU)/polyvinylpyrrolidone (PVP) layer loaded with quercetin. The hydrophilic layer exhibited good antioxidant activity comparable with vitamin C, whereas the hydrophobic layer showed effective antibacterial activity against Escherichia coli and Staphylococcus aureus, 92.3% and 98.0%, respectively. In addition, the dual-layered structure significantly improved the elongation at break from 133.28% to 168.81% and improved the thermal stability of the films. The above results indicate that the proposed dual-layered nanofiber film is a promising and sustainable solution for the postharvest preservation of fresh food products.","PeriodicalId":12427,"journal":{"name":"Food Quality and Safety","volume":"9 1","pages":""},"PeriodicalIF":0.0,"publicationDate":"2025-01-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"147330804","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":3,"RegionCategory":"农林科学","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

However, its qualities, including soluble solids, decrease quickly and continuously during postharvest storage, resulting in poor eating value and commercialization. In this study, the effects of methyl jasmonate (MeJA) on the modulation of fruit sugar content, sucrose metabolism-related enzyme activities, and gene expression were investigated in a white-fleshed loquat cultivar stored for 30 d. The results showed that MeJA treatment significantly reduced the decay index and delayed the decrease of soluble solids. Additionally, MeJA treatment significantly reduced acid invertase and neutral invertase activities and promoted sucrose phosphate synthase (SPS, which participates in sucrose biosynthesis) and retarded sucrose synthase-cleavage (SS-c, which participates in sucrose degradation) activities during the storage period. Altogether, these changes in enzyme activity resulted in the maintenance of higher sucrose contents and lower fructose and glucose contents in MeJA-treated fruits. Moreover, MeJA treatment upregulated the gene expression levels of sucrose-phosphate synthase (SPS1-1 and SPS1-2) but downregulated sucrose synthase (SS1 and SS2). Taken together, these findings suggest that the application of MeJA might be a promising method to maintain the sugar content of loquat fruit during postharvest storage.","PeriodicalId":12427,"journal":{"name":"Food Quality and Safety","volume":"9 1","pages":""},"PeriodicalIF":0.0,"publicationDate":"2025-01-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"https://academic.oup.com/fqs/advance-article-pdf/doi/10.1093/fqsafe/fyaf019/62999341/fyaf019.pdf","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"147333041","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":3,"RegionCategory":"农林科学","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

Heat treatment has a significant impact on maintaining fruit quality and extending shelf life, while the precise mechanism by which heat treatment prolongs the storage life of melting peach remains to be elucidated. Materials and Methods: Two melting peach varieties, ‘Hujingmilu’ (HJML) and ‘Yulu’ (YL), were treated with hot water at 45 °C for 10 min to explore the effect of postharvest heat treatment during storage and its regulatory mechanism. Results: The enzymatic activities of polygalacturonase (PG) and 1-aminocyclopropane-1-carboxylate (ACC) oxidase (ACO) were inhibited by heat treatment, and the transcript level of PGM was reduced, while PpACO1 was not affected by heat treatment. Moreover, the protein abundance of PpACO1 was not inhibited by heat treatment. Interestingly, nitric oxide (NO) content significantly increased in heat-treated fruit as the S-nitrosylation level of total protein increased. An in vitro assay indicated that PpACO1 could be S-nitrosylated with a reduction of ACO enzymatic activity, suggesting that NO-mediated S-nitrosylation of PpACO1 may be involved in reducing ethylene emission by heat treatment. Conclusions: These findings demonstrated that postharvest heat treatment can lead to an increase in NO content, resulting in S-nitrosylation of PpACO1, thus slowing down endogenous ethylene production and effectively delaying postharvest ripening and softening of fruit.","PeriodicalId":12427,"journal":{"name":"Food Quality and Safety","volume":"9 1","pages":""},"PeriodicalIF":0.0,"publicationDate":"2025-01-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"https://academic.oup.com/fqs/advance-article-pdf/doi/10.1093/fqsafe/fyaf023/63391644/fyaf023.pdf","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"147879652","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":3,"RegionCategory":"农林科学","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

The results showed that treatment with SP-1a and its derivatives alleviated the symptoms of weight loss, colon shortening, and blood in the stool induced by. SP-1a and its derivatives restore the integrity of the intestinal barrier by controlling the expression of tight junction proteins. Furthermore, they play an anti-inflammatory role by reducing oxidative stress and inhibiting the expression of pro-inflammatory factors, pro-inflammatory proteins, and nuclear factor kappa-B (NF-κB) signaling pathways. This study investigated the transport, absorption, and potential immunomodulatory activities of a new peptide, Leu-Pro-Gly-Lys-Val-Ile-Ala-Ser (LPGKVIAS), derived from H. erinaceus. Transport and absorption of LPGKVIAS were analyzed by near-infrared fluorescence in vivo imaging in mice injected with a fluorescence probe–labeled LPGKVIAS. RNA sequencing was used to explore the immunological effects of the peptide on mouse splenocytes. Kyoto Encyclopedia of Genes and Genomes pathway analysis showed that LPGKVAS upregulated differentially expressed genes involved in immune regulation. Notably, activation of the lysosome–phagosome pathway in splenocytes of mice treated with LPGKVIAS was identified as a crucial immune defense mechanism against pathogen infection. Furthermore, reverse transcription–polymerase chain reaction studies validated the gene expression data, supporting the potential application of the peptide LPGKVIAS as an immunomodulator.","PeriodicalId":12427,"journal":{"name":"Food Quality and Safety","volume":"9 1","pages":""},"PeriodicalIF":0.0,"publicationDate":"2024-11-22","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"https://academic.oup.com/fqs/advance-article-pdf/doi/10.1093/fqsafe/fyae047/60785644/fyae047.pdf","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"147888566","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":3,"RegionCategory":"农林科学","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

Materials and Methods The entrapment properties of HIPPEs for cinnamon oil were investigated by varying the volume ratios of camellia and cinnamon oils (cinnamon oil contents: 0%, 2.5%, 5.0%, 10%, 15%, and 20%), and the droplet size, rheological properties, Raman spectroscopy results, microstructure, thermal stability, storage stability, and antioxidant activity of HIPPEs were determined. Results The droplet size of HIPPEs increased with increasing cinnamon oil content. Among the samples, HIPPEs enriched with the cinnamon oil content of 10% had the highest storage modulus, loss modulus, and apparent viscosity (13.64 Pa·s). However, the thixotropic recovery ability of HIPPEs decreased with the increase in cinnamon oil content. Raman spectroscopy and microstructural analysis revealed that proteins covalently cross-linked with cinnamaldehyde to form a three-dimensional network structure, which showed the highest stability when the cinnamon oil content was 10%. HIPPEs exhibited high thermal stability without delamination after heating, as well as good storage stability without delamination or discoloration after 15 d of storage at 25 °C and 50 °C. Among the samples, HIPPEs enriched with 10% cinnamon oil had the lowest peroxide and malondialdehyde values during storage. The addition of cinnamon oil significantly enhanced the antioxidant activity of HIPPEs. Conclusions The best overall performance of HIPPEs was achieved at a cinnamon oil content of 10%. This result provides a theoretical foundation for the development of WalPI and the application of cinnamon oil in food, as well as a theoretical basis for the development of novel food delivery systems.","PeriodicalId":12427,"journal":{"name":"Food Quality and Safety","volume":"9 1","pages":""},"PeriodicalIF":0.0,"publicationDate":"2024-11-19","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"https://academic.oup.com/fqs/advance-article-pdf/doi/10.1093/fqsafe/fyae048/60749298/fyae048.pdf","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"147878927","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":3,"RegionCategory":"农林科学","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

In this context, Rosa roxburghii Tratt (RR) has emerged as a potential source of skin-lightening compounds. Vitamin C (Vc) and superoxide dismutase (SOD)-rich extracts were extracted from RR, namely RRVC and RRSOD, using macroporous resin column chromatography and graded ammonium sulfate precipitation. The antioxidant and skin-lightening effects of these extracts were evaluated. RRVC and RRSOD showed strong inhibitory activity against various radicals and tyrosinase. When formulated together, their antioxidant and skin-lightening abilities were significantly enhanced, with the optimal ratio of RRVC and RRSOD (RRVS) of 5:32. In vivo studies on C57BL/6J mice revealed that these two extracts and their formulations effectively lowered oxidative stress levels in a model of d-galactose-induced aging in mice. Furthermore, they inhibited melanogenesis and tyrosinase activity in B16 cells and reduced ultraviolet-radiation-induced melanin deposition in mouse ears. The combination of RRVC and RRSOD had a more potent melanin-scavenging effect compared with the individual extracts. These findings suggest that RRVC and RRSOD, especially when combined at the optimal ratio, can whiten skin, increasing the value of RR products and offering natural alternatives for skin lightening.","PeriodicalId":12427,"journal":{"name":"Food Quality and Safety","volume":"9 1","pages":""},"PeriodicalIF":0.0,"publicationDate":"2024-11-08","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"147332030","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":3,"RegionCategory":"农林科学","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

This study aimed to investigate the impact of Bifidobacterium longum subsp. infantis NKU FB3-14 on loperamide-induced constipation by focusing on improving intestinal barrier function and modulating gut microbiota composition. Materials and Methods The constipated model mice induced by loperamide were treated with NKU FB3-14, and the laxative effect was assessed based on fecal water content, first black stool time and gastrointestinal transit rate. Gastrointestinal regulatory peptides in serum and intestinal neurotransmitter and inflammatory cytokines in colon tissues were measured using enzyme-linked immunosorbent assay kits. Changes in the composition of gut microbiota were analyzed through 16S ribosomal DNA (rDNA) sequencing. Additionally, high-performance liquid chromatography (HPLC) was performed to quantify levels of short-chain fatty acids (SCFAs) in feces. Results Treatment with NKU FB3-14 increased fecal water content, shortened the first black stool time, and improved the small intestine transit rate. Motilin and substance-P significantly decreased in the model group, and only motilin increased in the FB3-14 group; somatostatin and vasoactive intestinal peptide were decreased in the model mice and both increased in the FB3-14 group; 5-hydroxytryptamine (5-HT) levels in the colon tissue were upregulated following NKU FB3-14 treatment. Histological examination revealed thinner colonic mucosa in the model group along with significant increases in tumor necrosis factor α (TNF-α), interleukin 1β (IL-1β), and interleukin 17 (IL-17) levels in the colon tissues, which were alleviated by NKU FB 3-14 treatment. Furthermore, NKU FB3-14 intervention resulted in reduced abundance of Desulfobacterota and Desulfovibrio while increasing the abundance of Ruminococcaceae and Eubacterium; a higher level of butyric acid was observed in feces. Conclusions In summary, our findings demonstrated that NKU FB3-14 treatment significantly enhanced intestinal motility, regulated the expression levels of gastrointestinal regulatory peptides, prevented damage to colonic barriers, and ameliorated gut microbiota imbalance associated with loperamide-induced constipation.","PeriodicalId":12427,"journal":{"name":"Food Quality and Safety","volume":"9 1","pages":""},"PeriodicalIF":0.0,"publicationDate":"2024-09-10","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"https://academic.oup.com/fqs/article-pdf/doi/10.1093/fqsafe/fyae043/59069308/fyae043.pdf","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"147919182","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":3,"RegionCategory":"农林科学","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

In this study, comparative metabolomics analysis between the yellow hawthorn berry (Crataegus pinnatifida) and the red-skinned ones was first carried out with the peel and flesh separated to fully understand the polyphenol composition and metabolite variations. A total of 453 polyphenols was characterized, among which phenolic acids and flavonoids were abundant, and were closely relevant to the antioxidant capacity of hawthorn fruits. Polyphenol profile showed accession-specific accumulation in peel or flesh of different colored hawthorn. The unique yellow hawthorn was found to have few anthocyanins but show enhanced flux to synthesize flavones and flavonols, especially flavone C-glycosides and acylated flavonol glycosides. The specific acylation decoration includes acetylation, p-coumaroylation, and malonylation. In addition, the yellow hawthorn showed excellent α-glucosidase inhibitory effect, which might be associated with the high concentration of 8 polyphenols including 5 phenolic acids, 2 flavone C-glycosides, and an acylated flavonol glycoside, namely quercetin-7-O-(6''-malonyl)glucoside. Such acylated flavonol showed the highest correlation ship with the inhibition effect of hawthorn fruits on α-glucosidase, and was predicted to had the lowest binding energy with the enzyme by molecular docking analysis, indicating its great potential as a strong α-glucosidase inhibitors and an important antidiabetic ingredient in yellow hawthorn. Thus, acylated flavonol glycosides and C-glycosyl flavones might be chemotaxonomic markers differentiating varieties and bioactivities of yellow hawthorn from the traditional red-skinned ones. These findings complement the existing knowledge on the metabolite composition and nutritional properties of hawthorn fruits.","PeriodicalId":12427,"journal":{"name":"Food Quality and Safety","volume":"11 4","pages":""},"PeriodicalIF":5.6,"publicationDate":"2024-01-11","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"139438220","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":3,"RegionCategory":"农林科学","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}
