For successful breeding of birds, it is necessary to know their trophic preferences in nature. The article analyzes information on the nutrition of the gyrfalcon in Kamchatka, collected over the entire history of ornithological research in the region. In the diet of the gyrfalcon, minimum 41 species of birds and 11 species of mammals are identified. The composition of the food of specific individuals is determined by their habitat in a given season of the year. During the breeding season, ptarmigans (Lagopus lagopus, L. mutus) are crucial for most gyrfalcons, and small mammals (specially American (arctic) ground squirrel Spermophilus parryi) are also important in the mountains. On migrations and in winter (especially on Kamchatka Peninsula), an important role is played by water, near-water and synanthropic species of birds. In Koryak Highland in winter an important role is played ptarmigans as usual. Based on them the heavy metal pollution degree assessment in different places of the city during 2017–2020 is given. It was found that almost everywhere the lead content in soils corresponded to a very high or high degree of contamination. According to the concentration of copper and zinc, the soils were classified as low and medium polluted. During 2017–2020 an increase of copper and zinc concentration in soils was registered. The dynamics of changes in lead concentration, on the contrary, was poorly expressed during 2017–2018. In 2020 a decrease in its content was found in all observed areas. According to the integrated pollution indexes PLI and NPI, the most polluted soils were identified in such areas as ‟Hospital” (2017),‟Botanicheskiy Pereulok” (2018), ‟Stadium Spartak” (2020). All city soils were characterized by a weak degree of potential environmental risk resulting from heavy metal pollution. Volchenko","doi":"10.17217/2079-0333-2021-58-29-42","DOIUrl":"https://doi.org/10.17217/2079-0333-2021-58-29-42","url":null,"abstract":"The estimation of effectiveness of using lactic acid bacteria (LAB) strains – two Lactobacillus and one Streptococcus – as potential starter cultures in the production of dried sausages from blue whiting (Micromesistius poutassou) was given in the work. The biochemical activity of the LAB strains was monitored by changes in pH, total acidity and the content of non-protein and amine nitrogen. It was found that when modeling the production process of dried fish sausages using L. casei and Str. thermophilus, it was not possible to achieve the desired effect, but the use of L. plantarum provides a decrease in pH, an increase in total acidity and an improvement in the organoleptic properties of the finished product. It is shown that the best microbiological growth in experiments was demonstrated by the strain of L. plantarum. The number of colonies on the island has not changed. The total number of individuals belonging to19 species is more than 200 thousand pairs. The colonies are distributed on the island relatively evenly along the whole coast and are based on five species – northen fulmar Fulmarus glacialis,black-legged kittiwake Rissa tridactyla, red-legged kittiwake Rissa brevirostris and two species of guillemots. The most numerous species is Northen fulmar. The abundance of the common guillemot Uria aalge has noticeably increased. The glaucous-winged gull Larus glaucescens, the crested auklet Aethia cristatella, the moth horned puffin Fratercula corniculata and the tufted puffin Lunda cirrhata has increased less. The number of parakeet auklet Cyclorrhynchus psittacula has decreased.
