We determined the plasma MSM concentration following four months of oral MSM supplementation at escalating dosages. Methods: 45 men and women (25 ± 5 years) participated in this study. Subjects were assigned to ingest either 1, 2, or 3 grams of MSM daily for 16 weeks. Blood was collected at baseline and following weeks 4, 8, 12, and 16 and analyzed for plasma MSM concentration using a LC-MS/MS method. Results: A group (p 0.05). With regards to the interaction, at weeks 4, 8, 12, and 16, values were higher for the 3 grams/day group as compared to the 1 gram/ day group (p 0.05). Conclusion: Both men and women respond to MSM supplementation in a similar manner as related to plasma MSM concentration. A higher dose of supplement results in a greater plasma MSM concentration. Values reach peak concentration within the initial 4 weeks of supplementation and do not increase further during subsequent weeks of treatment.","PeriodicalId":89590,"journal":{"name":"Journal of nutrition & food sciences","volume":"1 1","pages":""},"PeriodicalIF":0.0,"publicationDate":"2019-01-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"70300328","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

Since bread had been listed as one of the top ten foods consumed by Malaysian, the information of nutrient content in buns is needed for consumer to be aware of the nutrient intake from their food choices. The main objective of this study is to determine the nutritional composition of varieties of sweet buns sold in Malaysia.Method: A total of three to six brands from each type of bun (chocolate, coconut, kaya, potato and red bean) were sampled from local supermarkets in the Klang Valley, Malaysia using stratified sampling. The proximate composition, minerals, vitamins C, fatty acids, trans fatty acids and cholesterol were analysed using standard methods with the application of internal quality controls.Results: Carbohydrate was the major macronutrient in commercial buns ranging from 46.93 ± 3.72 to 54.73 ± 2.46 g/100 g. The highest protein content was found in the potato bun (9.15 ± 0.56 g/100 g) and the lowest protein content was in the kaya bun (7.13 ± 0.32 g/100 g). Fat content was in the range of 2.90 ± 1.37 to 8.98 ± 1.61 g/100 g. Major minerals content detected in buns were sodium, followed by potassium and calcium. Chocolate buns showed higher content of vitamin C (p<0.05) compared to kaya bun. Trans fatty acids were at trace level in all buns.Conclusion: These findings indicate that Malaysian commercial buns are good source of carbohydrates and with negligible level of trans fatty acids.","PeriodicalId":89590,"journal":{"name":"Journal of nutrition & food sciences","volume":"1 1","pages":""},"PeriodicalIF":0.0,"publicationDate":"2019-01-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"70300244","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

There is scarce knowledge as to adipokine activity in hip fractured elderly patients in acute settings. We evaluated whether active nutritional support may reflect on adipokines levels and affect outcomes. Methods: A randomized controlled study measuring adipokine (ghrelin, leptin, resistin and adiponectin) levels in hip fractured geriatric patients receiving active nutritional support was conducted in the Ortho-Geriatric Unit Rabin Medical Center, Israel. The intervention group’s energy goal was calculated by repeated resting energy requirements whereas the control group received only standard nutritional support. Measurements were taken pre-operation, 48 h post-operative and on day 7 post-op. Results: Ghrelin and adiponectin levels showed significant changes in both study groups with no significant change between groups. Ghrelin levels were also significantly higher on day 7 in patients without complications (p=0.035). Leptin levels differed between groups (p=0.038). In the intervention group, leptin levels decreased initially, then sharply increased, whereas the control group’s levels consistently decreased in all 3 measurements. Resistin levels did not change significantly over time. Conclusion: Ghrelin and adiponectin may play a role in hip fractured patients irrespective of nutritional status whereas, ghrelin levels may also indicate post-operative complications. Leptin may be affected by energetic balance.","PeriodicalId":89590,"journal":{"name":"Journal of nutrition & food sciences","volume":"1 1","pages":""},"PeriodicalIF":0.0,"publicationDate":"2019-01-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"70300291","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

The sensory organs for taste are the taste buds, that transduce gustatory stimuli into neural signals. It has been reported that chickens have a low taste bud number and thus low taste acuity. However, more recent studies indicate that chickens have a well-developed taste system and the reported number and distribution of taste buds may have been significantly underestimated. Chickens, as a well-established animal model for research, are also the major species of animals in the poultry industry. Thus, a clear understanding of taste organ formation and the effects of taste sensation on nutrition and feeding practices is important for improving livestock production strategies. In this review, we provide an update on recent findings in chicken taste buds and taste sensation indicating that the chicken taste organ is better developed than previously thought and can serve as an ideal system for multidisciplinary studies including organogenesis, regenerative medicine, feeding and nutritional choices.</p>","PeriodicalId":89590,"journal":{"name":"Journal of nutrition & food sciences","volume":"8 2","pages":""},"PeriodicalIF":0.0,"publicationDate":"2018-01-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"https://sci-hub-pdf.com/10.4172/2155-9600.1000686","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"36106212","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

AA is used to protect the GT catechins during digestion and increase bioavailability. Thirty two Zucker diabetic fatty (ZDF) rats were randomly divided into four groups (n=8 in each group) and treated with water, GT, AA and GT+AA respectively for five weeks. Urinary metabolic profiles were determined using <sup>1</sup>H NMR spectroscopy. Fourteen metabolites were identified and their 24-hr excretions were quantified. Changes in the 14 metabolites demonstrated differential treatment effects on the metabolism of ZDF rats. GT and AA were found to be able to independently reduce urinary excretions of most metabolites that were over-excreted in the control diabetic rats, such as oxidative stress marker metabolites and TCA cycle metabolites. GT showed a great potential in controlling metabolic acidosis by suppressing the excretion of lactic acid and acetic acid from diabetic rats and GT+AA showed a remarkably stronger suppression than GT while AA was unable to suppress these two acids. Further investigation is needed to better understand the role of GT and/or formulated GT in altering the metabolic pathways in the diabetic animal model as well as in humans.</p>","PeriodicalId":89590,"journal":{"name":"Journal of nutrition & food sciences","volume":"3 6","pages":""},"PeriodicalIF":0.0,"publicationDate":"2013-01-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"https://www.ncbi.nlm.nih.gov/pmc/articles/PMC5627652/pdf/nihms860199.pdf","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"35426545","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

The purpose of this study was to assess the association between n-3 with, C-reactive protein (CRP), and homocysteine (HCY) in Black minorities with and without type 2 diabetes. Methods: A cross-sectional study was conducted with 406 participants: Haitian Americans (HA): n=238. African Americans (AA): n=172. Participants were recruited from a randomly generated mailing lists, local diabetes educators, community health practitioners and advertisements from 2008–2010. Sociodemographics and anthropometrics were collected and used to adjust analyses. All dietary variables were collected using the semi-quantitative food frequency questionnaire (FFQ) and used to quantify vitamin components. Blood was collected to measure CVD risk factors (blood lipids, HCY, and CRP). Results: African Americans had higher waist circumferences and C-reactive protein and consumed more calories as compared to Haitian Americans. Omega 3 fatty acid intake per calorie did not differ between these ethnicities, yet African Americans with low n-3 intake were three times more likely to have high C-reactive protein as compared to their counterparts [OR=3. 32 (1. 11, 9. 26) p=0.031]. Although homocysteine did not differ by ethnicity, African Americans with low omega 3 intake (<1 g/day) were four times as likely to have high homocysteine (>12 mg/L) as compared to their counterparts, adjusting for confounders [OR=4.63 (1.59, 12.0) p=0.004]. Consumption of n-3 by diabetes status was not associated with C-reactive protein or homocysteine levels. Conclusions: Consumption of n-3 may be protective of cardiovascular risk factors such as C-reactive protein and homocysteine for certain ethnicities. Prospective studies are needed to confirm these results.","PeriodicalId":89590,"journal":{"name":"Journal of nutrition & food sciences","volume":"3 1","pages":""},"PeriodicalIF":0.0,"publicationDate":"2012-12-19","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"70300146","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

Effectiveness of buffer therapy is likely to be affected by diet, which could contribute or interfere with the therapeutic alkalinizing effect. Little data on food pH buffering capacity was available. This study evaluated the pH and buffering capacity of different foods to guide prospective trials and test the effect of the same buffer (lysine) at two different ionization states. Food groups were derived from the Harvard Food Frequency Questionnaire. Foods were blended and pH titrated with acid from initial pH values until 4.0 to determine \"buffering score\", in mmol H<sup>+</sup>/pH unit. A \"buffering score\" was derived as the mEq H<sup>+</sup> consumed per serving size to lower from initial to a pH 4.0, the postprandial pH of the distal duodenum. To differentiate buffering effect from any metabolic byproduct effects, we compared the effects of oral lysine buffers prepared at either pH 10.0 or 8.4, which contain 2 and 1 free base amines, respectively. The effect of these on experimental metastases formation in mice following tail vein injection of PC-3M prostate cancer cells were monitored with <i>in vivo</i> bioluminescence. Carbohydrates and dairy products' buffering score varied between 0.5 and 19. Fruits and vegetables showed a low to zero buffering score. The score of meats varied between 6 and 22. Wine and juices had negative scores. Among supplements, sodium bicarbonate and Tums<sup>®</sup> had the highest buffering capacities, with scores of 11 and 20 per serving size, respectively. The \"de-buffered\" lysine had a less pronounced effect of prevention of metastases compared to lysine at pH 10. This study has demonstrated the anti-cancer effects of buffer therapy and suggests foods that can contribute to or compete with this approach to manage cancer.</p>","PeriodicalId":89590,"journal":{"name":"Journal of nutrition & food sciences","volume":"2 ","pages":"6"},"PeriodicalIF":0.0,"publicationDate":"2012-08-15","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"https://www.ncbi.nlm.nih.gov/pmc/articles/PMC3872072/pdf/nihms489701.pdf","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"31983074","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}
