Se muestrearon 50 establecimientos que expenden CP cruda. En cada uno de los locales se tomaron muestras de 200 g de carne, las cuales fueron procesadas en el LM-FMVZ UNHV. Para la detección de Escherichia coli, se empleó placas Petrifilm EC de acuerdo al método oficial y para Salmonella spp., el ensayo Salmonella Express System (SALX) en placas 3M Petrifilm. Paralelamente, para evaluar las condiciones higiénicas sanitarias de los establecimientos y de los responsables del expendio de carne, se aplicó un cuestionario de buenas prácticas de manipulación. Se observó que todas las muestras se encontraban contaminadas, con UFC/g PF de E. coli, en promedio 1988 UFC/g PF±3.74 de E. coli. Y en cuanto a Salmonella spp., todos los casos fueron positivos a la misma. Además, se demuestran condiciones higiénicas sanitarias deficientes y regulares de infraestructura. Por tanto, el expendio de CP cruda no cumple con las buenas prácticas de manipulación de alimentos. Soc. 2020; 11(2):142-152. In Refractory epilepsy is due to that drug-resistant epilepsy in which there is no improvement after the application of various antiepileptic drugs (AEDs). The Telethon Children's Rehabilitation Center cares for a large population of children with some type of epilepsy. Recently, the application of the home intervention protocol for the ketogenic diet (DC) has increased. A few years ago, DC was only attended with extreme surveillance in a hospital center under rigid schemes. With this background, the objective of this study was to describe the experience and findings of a series of 10 cases of children with RE treated with this DC protocol over the course of at least 1 year. All the cases of children (n = 10) attended at the TCRC, Aguascalientes, Mexico, who were treated with the ketogenic diet between the dates of February 2010 and June 2015, were reviewed by means of an electronic clinical record criteria for refractory epilepsy, as well as surveillance for pediatric neurology and nutrition. The DC home intervention protocol was established under the criteria of Lambruschini-Nilo & Gutiérrez-Sánchez, where it started with a classic type DC with a 2: 1 ratio during the first week of adaptation and then went on to the 3: 1 or 4 ratio: 1 corresponding according to patient tolerance. The reduction in the number of crises was measured at 3 months and one year after surgery. Although the etiology is still unknown, it is known that there is a strong genetic association between these diseases and some alleles and / or haplotypes of the major histocompatibility complex (MHC). Individual susceptibility in autoimmunity may be determined by a combination of gene-specific polymorphisms that code for multiple proteins, cytokines, adhesion molecules, among others, and that is why it is important to study them. Therefore, what this study intends is to determine the genetic association between the 14 bp polymorphism of the HLA-G gene with the susceptibility to contract SLE and the clinical manifestations of the disease. The study population consisted of 120 patients with SLE and 112 patients without the disease. For the study, human DNA was obtained from peripheral blood, PCR was performed for molecular typing of the genotypes and alleles that were revealed by means of electrophoresis. in agarose gel. At the same time, serological tests were carried out using the ELISA technique to determine the presence of double-chain anti-.DNA IgG antibodies. The PCR results showed that lupus patients have a higher frequency of expression of the Ins/Del genotype (OR = 1.72, p <0.05); while, the presence of the homozygous Ins/Ins genotype is more frequent in the control group (OR = 0.29, p <0.001), thus showing that the first genotype is a risk factor and the second, a protection factor to suffer SLE respectively. It was also observed that between patients and controls there is no significant difference in the frequency of presentation of the Del/Del genotype in homozygosity. Regarding allele frequencies, the deletion allele was found to be more frequent in the group of lupus patients, compared to the control group where both alleles presented the same percentage. La investigación fue de tipo aplicada. La elaboración de los productos se realizó en el laboratorio de procesos pesqueros de la Escuela Profesional de Ingeniería Pesquera de la Universidad Nacional de Moquegua, luego se llevó a cabo la evaluación nutricional en el laboratorio de la Facultad de Zootecnia de la Universidad Nacional Agraria la Molina y posteriormente se efectuó el análisis de aceptabilidad en las instalaciones del comedor de la Institución Educativa Santa Elizabeth de la Provincia de Llo, utilizándose como instrumento una escala hedónica de categorías de 7 niveles. Los resultados arrojan que la proteína en los productos innovados: empanizados y kamaboko (pasta de pescado) están presente con el 25.55 % en el empanizado con harina de habas, seguido de empanizado con harina de plátano con 21.94 % y finalmente el kamaboko con 20.34%. El empanizado con harina de plátano fue el que tuvo mayor aceptación con un 86.3 %, seguido de la pasta de kamaboko con un 59.2 %, mientras que el empanizado con harina de habas solo obtuvo un 26.7 %. Sánchez-Yáñez","doi":"10.36610/j.jsars.2020.110200075","DOIUrl":"https://doi.org/10.36610/j.jsars.2020.110200075","url":null,"abstract":"Juna Manuel Sánchez-Yáñez E-mail address: syanez@umich.mx En México, un suelo agrícola pobre en nitrógeno (N) contaminado por un derivado de hidrocarburos como el aceite residual automotriz (ARA), con una relativa alta concentración de 100000 ppm, es un problema ambiental, pero también porque afecta drásticamente las propiedades del suelo asociadas con la mineralización de la materia orgánica y la pérdida de fertilidad, ya que sobrepasa el límite máximo aceptado de 4400 ppm de la norma mexicana llamada, NOM-138-SEMARNAT-2012 (NOM-138). Una alternativa de solución es tratarlo con acciones ecológicas para eliminar el ARA y recuperar esa fertilidad. Por lo que los objetivos de esta investigación fueron: i) biorremediación de suelo contaminado por 100000 ppm de ARA ii) fitorremediación mediante Sorghum vulgare con Aspergillus niger y Penicillium chrysogenum para decrecer el ARA a un valor inferior a 4400 ppm de la NOM-138. Para ello la recuperación de suelo se realizó mediante la variable-respuesta: desaparición del ARA por Soxhlet al inicio y después de la biorremediación y al final de la fitorremediación con S. vulgare con la fenología y biomasa a plántula. Todos los datos experimentales se validaron por ANOVA/Tukey HSD P<0.05%.
