Numerous theoretical, experimental and applied researches have made it possible to form the theoretical foundations of preschool pedagogy, to justify the methods and technologies of studying the education and development of children in the preschool age. However, there are still a number of current problems and promising directions for research. The main reasons for their emergence are mainly changes in the political, economic and other spheres of social life. The transition to new socio-economic conditions significantly changes the new view of the pre-school education system, the characteristics of childhood and the child's position in the system of social relations. The main tool in the implementation of this work is the European Standards and Guidelines for Quality Assurance in the European Higher Education Area (ESG). The Twinning project on providing support to the Ministry of Education of the Republic of Azerbaijan with the aim of further adapting the higher education system to the requirements of the European Higher Education Area, launched in 2015, provided an opportunity to apply ESG in Azerbaijan's higher education. У роботі наведено моделювання рецептурного складу сухих білкових молочних продуктів для хлопців-спортсметів спеціального призначення. Змодельовано рецептурний склад сухих білкових молочних продуктів «Банан» та «Шоколадний» для хлопців-спортсменів, призначених для нарощування м’язової тканини, із використанням у якості сухих білкових концентратів казеїнату натрію сухого або його суміші із молоком сухим знежиреним; рецептурний склад сухих білкових молочних продуктів «Банан» та «Шоколадний» для хлопців-спортсменів, призначених для відновлення та регенерації білків крові, із використанням у якості сухих білкових концентратів КСБ-УФ-65 або його суміші із молоком сухим знежиреним, а також рецептурний склад сухих білкових молочних продуктів «Банан» та «Шоколадний» для хлопців-спортсменів, призначених для нарощування м’язової тканини, відновлення та регенерації білків крові, із використанням у якості сухих білкових концентратів суміші казеїнату натрію сухого та КСБ-УФ-65 (або суміші казеїнату натрію сухого, КСБ-УФ-65 та молока сухого знежиреного). У рецептурах сухих білкових молочних продуктів «Банан» та «Шоколадний» на основі аналізу літературних та патентних джерел обгрунтовано масову частку лактулози та високометоксильованого пектину – 4,04% та 4,04 % відповідно, що забезпечує вміст обох фізіологічно функціональних харчових інгредієнтів у відновленому продукті по 0,5%. \u0000Визначено органолептичні показники у відновлених молочних коктейлях для хлопців-спортсменів «Банан» та «Шоколадний», обґрунтовано масову частку фруктози у цільових сухих продуктах – 22,6%, що відповідає її вмісту у відновленому коктейлі 2,8%. \u0000Обґрунтовано раціональну кількість життєздатних клітин Bifidobacterium longum ssp. animalis Bb-12 у сухих білкових молочних продуктах для хлопців-спортсменів – не менше, ніж 1×107 КУО/г.
