Previous studies showed that students who consumed alcohol may consume coffee as well. We conducted a cross-sectional study with 212 final–year undergraduate students of Hanoi Medical University to describe their knowledge and practice in alcohol and coffee use The results show that over 70% of students had knowledge of alcohol and coffee. Approximately 87% and 41% of students thought that alcohol and coffee are both beneficial and harmful to health, respectively. Regarding the actual practice in the use of alcohol and coffee, 93.4% of students had ever drunk alcohol; while 84.9% of those had ever drunk coffee. The frequency of alcohol and coffee use is mostly less than 4 days per month. We found a high percentage of students had knowledge of alcohol and coffee, and they had been using alcohol and/or coffee, however, they occasionally used those drinks with a monthly frequency. Abuse or improper use of pesticides lead to increase residues in products, exceeding the maximum residue limit according to the regulations. Therefore, the need for developing methods, which can monitor, detect, and identify many pesticides simultaneously is necessary. The liquid chromatography quadrupole-time-of-flight mass spectrometry (LC-QTOF-MS) method has advantage of being able to simultaneously quantify and screen many compounds at once, are being a trend in analytical techniques for analyzing and screening pesticide residues in foods. In this study, the LC-QTOF-MS method was used to quantify 186 pesticides in fruit and vegetable samples. The limit of detection (LOD) for all compounds is 3.0 µg/kg. The recovery is in the ranged of 74.4 -118%, relative standard deviation (RSD) <20%. At the same time, the method was initial researched for nontarget screening by reprocessing previously acquired data without re-injection of the samples. The list of pesticides can be screening, which are up to 500 chemicals, by comparison results with the available high resolution mass spectral library. The screening detection limit of the method (SDL) is 100 µg/kg. In the food industry, due to their natural yellow or orange color, they are used as food colouring. The study was carried out to optimize the high-performance liquid chromatography combined with a photodiode detector (HPLC-PDA) to simultaneously determine the crocin and crocetin content in food. Analytical samples were ultrasonicated with ACN:H2O (1:1, v/v) solvent for 30 minutes. The sample solution was determined by HPLC – PDA with the following conditions: Sunfire C18 column (250 mm x 4.6 mm; 5 µm) mobile phase consisting of 0.1% formic acid and ACN using gradient program. The method has good specificity, the standard curves of crocin and crocetin have correlation coefficients R2 > 0.999, respectively, repeatability and recovery meet AOAC requirements. The limit of detection (LOD) for  crocin and crocetin were 0.5 mg/kg and 0.25 mg/kg, respectively. The method has been applied to simultaneously determine crocin and crocetin in 15 real samples and results in 13 out of 15 samples detecting crocin content, 11 out of 15 samples detecting crocetin content, and in 2 out out of 15 samples. neither crocin nor crocetin was detected. {"title":"Microbiological contamination of the inner surface of finished water filling taps at bottled drinking water producers in Khanh Hoa province","authors":"Phong Le Quoc","doi":"10.47866/2615-9252/vjfc.4119","DOIUrl":"https://doi.org/10.47866/2615-9252/vjfc.4119","url":null,"abstract":"The finished water filling tap is the final contact point of filtered drinking water before bottling. Therefore, microbial contamination at this site may result in cross-contamination into the finished water in the bottle. This study was conducted to evaluate microbiological contamination on the inner surface of the finished water filling tap at the bottled drinking water producers in Khanh Hoa in 2022. A total of 93 swab samples of the inside surface of the tap at 93 producers were subjected to a test for ATP (Adenosine Triphosphate), total plate count (TPC), coliform, Escherichia coli, Pseudomonas aeruginosa, Streptococci feacal, and Clostridia. There were 72/93 (77.4%) samples with ATP values higher than 300 RLU/cm2. The geometric mean of ATP and TPC were 3.1±0.8 log (RLU/cm2) and 3.5±1.2 log (CFU/cm2), respectively. The ATP and TPC were linear correlated, indicating that the surface ATP value inside the finished water filling tap was mainly formed by microorganisms. In addition, 6/93 (6.5%) samples were found to be positive for coliform, including 3 strains of Enterobacter cloacae, 2 strains of Klebsiella pneumoniae and 1 strain of Enterobacter aerogenes. Moreover, 1/93 (1.1%) samples were infected with P. aeruginosa. All 7 strains of these bacteria were biofilm producers under laboratory conditions. {"title":"A mini-review on analytical methods for polycyclic aromatic hydrocarbons in Vietnamese food and beverage samples","authors":"Anh Hoang Quoc","doi":"10.47866/2615-9252/vjfc.4114","DOIUrl":"https://doi.org/10.47866/2615-9252/vjfc.4114","url":null,"abstract":"Polycyclic aromatic hydrocarbons (PAHs) are a common class of organic pollutants in the environment and are of great research interest because of their high toxicity, including carcinogenicity and mutagenicity. Food is an important source of PAHs exposure in humans, so analysis of PAHs in food is an essential task of food safety testing. This review article gathers information about the analysis methods of PAHs that has been applied in previous studies on food and beverage samples in Vietnam, including steps of extraction, purification of extracts, and quantitative analysis on a chromatographic system. PAHs are extracted from the sample matrix into less polar organic solvents with different techniques such as liquidliquid, liquid-solid, ultrasonic extraction, and pressurized liquid extraction. Interferences in sample extracts can be removed by various techniques: acid and alkali treatment, gel permeation chromatography, solid phase extraction, and dispersive solid phase extraction. PAHs are separated and quantified on gas chromatography-mass spectrometry systems (GCMS, GC-MS/MS, GC×GC-ToFMS) or liquid chromatograph with fluorescence detector (HPLC-FLD). Analytical procedures are all quality controlled by results with blank samples, limits of detection/quantification, recovery standards, and replicate samples. {"title":"Determination performance of ICP-MS heavy metals in food and feed test method through participation of proficiency testing programs","authors":"Giang Tran Hoang","doi":"10.47866/2615-9252/vjfc.4117","DOIUrl":"https://doi.org/10.47866/2615-9252/vjfc.4117","url":null,"abstract":"The inductively coupled plasma mass spectrometry (ICP-MS) method is applied to determine the content of heavy metals (Pb, Cd, As, Hg) in food and animal feed samples at the National Institute for Food Control due to its high accuracy and quick response time. These samples were digested in a microwave using a mixture of nitric acid and hydrogen peroxide, with the yttrium internal standard added initially to control the analysis. The efficiency of the method was evaluated to meet the requirements of AOAC with reasonable specificity, working standard curve for elements in the range from 0.4 to 20 µg/L, the relative standard deviation of repeatability RSDr < 3,55%, and the recoveries (R%) ranged from 92.2 to 103.1%. The method has been validated by participating in international proficiency testing programs in 2021 and 2022 with a value of |z-score| ≤ 2. This article observed the knowledge, attitude and practice of students on food safety to survey students' knowledge, attitude and practice on food safety. A cross sectional description study was performed on 309 students in Cuu Long university in the Mekong Delta region. SPSS 16.0 was used to analyze the data. The results showed that in term of knowledge of food safety: 68.28% of students had knowledge of food poisoning, 75.73% could detect the risk of food poisoning, 80.58% described the clinical symptoms of food poisoning, and 62.46% knew the World Health Organization's golden rule of food safety. Regarding the knowledge of food preservation: 69.26%-75,73% had knowledge of egg preservation and of processed foods. For knowledge of solving food poisoning: 80.26% had knowledge of solving food poisoning cases. Research on the chemical composition, microscopic characteristics, and extraction of active components from herbal materials play an important role in medicinal applications. This study aims to describe the microscopic features of fresh Bishopwood leaves using a dual staining method, examine leaf powder under a microscope, determine the components using chemical reactions, and investigate the influence of factors such as ethanol concentration, time, temperature, and the ratio of raw materials to solvents on the process of extracting flavonoids from Bishopwood leaves. Through unique chemical reactions, the components of Bishopwood leaves were identified to include flavonoids, phenolics, tannins, steroids, proteins, carbohydrates, and anthranoids. Microscopic examination of fresh Bishopwood leaves and leaf powder under a microscope revealed characteristic structural components including epidermis, stomata, parenchyma, sclerenchyma, fiber bundles, and vascular bundles. The appropriate conditions for extracting flavonoids from Bishopwood leaves were using 50% ethanol as the extraction solvent, a 3-hour extraction time, a temperature of 60 °C, and a raw material-to-solvent ratio of 1 : 30 (g/mL). According to current international regulations, the standard of finished antiseptic solution must have regulations on the limit of preservatives when used in the formulation. In this study, simultaneous determination of BAC-C8 and BAC-C12 was performed by capillary electrophoresis using capacitively coupled contactless conductivity detection (CE-C4D) with analytical conditions including: fused silica capillary (50 µm ID.) with effective length of 40 cm, background electrolyte solution of 100 mM acetic acid (Ace) added 30% acetonitril (ACN); hydrodynamic sample injection at height of 10 cm in 20 s; separation voltage of +15 kV. The detection limit of BAC-C8 and BAC-C12 were 1.5 mg/L and 3.5 mg/L, respectively.
