Salah satu tanaman pesisir yang memiliki potensi besar adalah buah pandan laut, buah pandan laut memiliki nutrisi yang tinggi dan dapat dimanfaatkan sebagai bahan pangan olahan. Mengetahui pengaruh tingkat kematangan dan akan melibatkan evaluasi sensori oleh panelis ahli atau konsumen untuk mengukur respon mereka terhadap atribut organoleptik hard candy yang dihasilkan. Nilai gizi dari produk hard candy penting gunanya mempromosikan produk hard candy buah pandan laut sebagai pilihan makanan yang sehat dan bergizi. Proses pembuatan hard candy dengan pemanasan sukrosa (50%) glukosa (30%) dan ditambahkan ekstrak pandan laut (16%) dilanjutkan dengan air dan jeruk nipis (4%) sambil diaduk hingga homogen, setelah itu apabila sudah berbentuk kental maka diamkan sekitar 10 menit. Selanjutnya dilakukan pencetakan menggunakan silikon permen hingga mengeras lalu dilakukan pengemasan. Hasil uji nilai gizi kadar air yang terbaik senilai (0,93) pada buah pandan laut matang dan terendah (0,77) pada buah pandan laut lewat matang, kadar abu yang tertinggi (0,26) pada buah lewat matang dan yang terendah (0,17) pada buah matang, kadar lemak yang tertinggi (1,44) pada buah lewat matang dan terendah (1,02) belum matang, kadar protein yang tertinggi (4,34) pada buah yang matang dan yang terendah (2,99) pada buah yang belum matang, kadar karbohidrat (94,89) pada buah belum matang dan yang terendah (93,44) pada buah yang matang, kadar kalsium diuji dengan hasil yang terbaik saja yaitu buah matang senilai (0,00481). In every fishery business activity, the thing that cannot be separated is the process of income analysis. This research was carried out in Ujong Gle Village, Pulo Aceh District, Aceh Besar District and Pulau Bagak Village, Pulau Banyak District. The purpose of this study was to determine the income of lobster business in Pulau Banyak and Pulo Aceh as well as marketing channels. The cost analysis used is fixed cost analysis, variable cost analysis, income analysis and profit analysis. The research method used is a case study. The results showed that the total income earned by lobster entrepreneurs was Rp. 79.150.000. The monthly income of lobster entrepreneurs in Pulau Banyak is Rp. 19,787,500 and Pulo Aceh is Rp. 39,083,300, marketing channels in Pulau Banyak are Medan - Jakarta and Pulo Aceh - Jakarta.
