Along with the development of science and technology, lifestyle changes towards a healthy life and without preservatives are increasingly resonant. Public knowledge about the dangers of consuming synthetic MSG in the long term is getting higher. So processing fish waste into flavoring is one of the most useful breakthroughs in the world of science. Making a delicious and nutritious flavoring comparable to synthetic flavoring is a challenge. This study used fish broth raw materials TT, KT, TL and maltodextrin. The addition of maltodextrin to food aims to maintain the nutritional content during processing, increase solubility and organoleptic. The purpose of this study was to study the characteristics of natural flavors made from different fish waste and to determine consumer acceptance of products made from the resulting natural flavors. The test parameters observed were proximate analysis and hedonic organoleptic tests. Nonparametric data were analyzed using the Kruskall-Wallis then the Mann-Whitney test and the Bayyes test. The results of the research were carried out using the proximate test, namely the water content in the TT broth was 10.50%, the KT broth water content was 7.99%, and the TL broth water content was 10.46%. The ash content in the TT broth was 12.85%, the ash content in the KT broth was 10.23%, and the ash content in the TL broth was 11.42%. The fat content in TT broth was 1.82%, the fat content in KT broth was 1.80%, and the fat content in TL broth was 1.39%. The protein content in the TT broth was 5.88%, the protein in the KT broth was 6.89%, the protein in the TL broth was 7.54%. Based on the best hedonic organoleptic test, namely leubim bone powder broth with the addition of maltodextrin of 2.63. One of the important inland waters is Krueng Aceh, Krueng Aceh is a river located in Aceh Province in Cot Seukek, Aceh Besar Regency, passing through the city center (Peunayong) and empties into Lampulo Banda Aceh City. Analysis of catches in Krueng Aceh was carried out with the aim of determining the types of fish in the public waters of the Krueng Aceh mainland as basic data in the management of mainland public water resources. The study used the Purposive sampling technique at four stations and the results showed that there were 9 types of fish in the public waters of the Krueng Aceh mainland which were dominated by baung fish. The station with the most catches is station II located at Bakoy Village, Ingin Jaya District, Aceh Besar District. Penelitian ini dilakukan untuk mengetahui daya terima selai yang diproduksi dari buah pandan laut dengan tingkat kematangan yang berbeda yaitu (A) matang, (B) agak matang, (C) belum matang. Penilaian uji kesukaan ini berdasarkan pada proses penginderaan meliputi: kenampakan, aroma, rasa dan tekstur, dilakukan oleh 30 panelis biasa yang mempunyai kepekaan cukup baik. selai yang dibuat dari buah yang agak matang memiliki daya terima paling baik yaitu 100% berdasarkan parameter rasa. Untuk parameter tekstur dan aroma, selai dari buah yang telah matang adalah yang paling disukai oleh panelis masing-masing sebesar 83,3% dan 73,3%. Penelitian ini menghunakan rancangan acak kelompok (RAK) pola faktorial dengan 2 taraf perlakuan antara natrium bikarbonat NaHCO3 dan kalsium hidroksida Ca(OH)2 serta 3x pengulangan. Faktor pertama yaitu kapur sirih Ca(OH)2 yang terdiri dari A1= 0,5 %, A2= 1% dan A3=1,5% dan faktor kedua dari Natrium Bikarbonat NaHCO3 dengan pengulangan B1=0,5%, B2=1% dan B3=1,5%. Parameter yang diamati antara lain :analisis proksimat yaitu kadar air, kadar abu, kadar lemak, kadar protein, kadar karbohidrat dan organoleptik (tekstur, warna, rasa, aroma dan kenampakan). Hasil penelitian menunjukkan bahwa bagian kulit ikan tidak menunjukkan perbedaan nyata terhadap analisa proksimat, pada uji hedonik antara (tekstur, warna, rasa, aroma dan kenampakan) menunjukkan perbedaan nyata terdapat pada parameter tekstur A1=0,5 dan A3=1,5. Silk worms are relatively small in size that fit into the non-larval mouth so they are easy to digest and easy to catch because of their slow movements. However, the availability of silk worms is still very limited and still relies on nature. So it is necessary to do further culture. Silkworm cultivation is influenced by the food source for growth. In addition to aspects of food, silk worms are also influenced by ecological factors such as temperature. This study aims to determine the characteristics of silkworm population growth (Tubifex sp.) at an average temperature of 27 0C. Data analysis used in this research is descriptive qualitative. The treatment used is at an average temperature of 270C. Based on the research, the highest peak population of silk worms ( Tubifex sp.) was obtained at 27,450C. with an average population of 3060 ind/cm2 and the lowest number of silk worms was found at 27.040C 2477 ind/cm2. Masalah keamanan pangan yang membuat konsumen semakin selektif dalam memilih produk dan upaya menjaga kepercayaan konsumen pada suatu produk, mengakibatkan produsen berusaha untuk selalu menjaga mutu produk yang dihasilkannya. Tujuan dari penelitian ini adalah menganalisis kelayakan dasar unit pengolahan ikan kayu (Keumamah) yang berada di Kota Banda Aceh. Hasil penelitian menunjukkan kondisi sanitasi dan hygiene dari proses pengolahan ikan kayu tidak sesuai standart. Langkah-langkah perbaikan yaitu perhatian tentang masalah peningkatan mutu proses pengolahan ikan kayu meliputi air pencucian dan es, lokasi dan lingkungan (sarana dan prasarana), kontruksi Bangunan (lantai, ventilasi, tembok, atap, toilet, tempat cuci), peralatan dan pakaian kerja, kesehatan karyawan, bahan kimia, pembersih, saniter, syarat label dan penyimpanan serta pengendalian pest. Pakan alami yang dapat digunakan adalah cacing sutra. Ketersediaan cacing sutra menjadi salah satu masalah karena ketersediaannya hanya mengandalkan hasil tangkapan alam. Maka dari perlu adanya budidaya cacing sutra. Pakan merupakan faktor penting dalam budidya cacing sutra, pakan yang diberikan dapat berupa pakan buatan seperti PUN-11. Tujuan dari penelitian ini adalah untuk mengetahui pengaruh penambahan jumlah pakan PUN-11 ke dalam media pemeliharaan mampu meningkatkan pertumbuhan populasi cacing sutra, serta mengetahui dosis optimum untuk menghasilkan jumlah populasi cacing sutra yang maksimum. Hasil penelitian menunjukkan penambahan jumlah pakan PUN-11 ke dalam media pemeliharaan mampu meningkatkan pertumbuhan populasi cacing sutra. The method used in this research includes stock assessment using the Clarke Yoshimoto Pooley (CYP) Bioeconomic model to assessing the degradation and depreciation that has occurred in the Layaran fishery. The estimated production value of the Maximum Sustainable Yield (MSY) is 4.63 tonnes per year which is greater than the actual production value of 3.33 tonnes per year and the MSY effort value is 36,642 trips per year which is greater than the actual effort 16,972 trips per year show that there has not been overfishing in the Layaran fishery, both in terms of production and fishing effort.
