The present study brings to the discussion how the city, which built its culinary identity from Italic cultural heritage, receives a restaurant that offers as a main dish the so-called “Bauru à Moda Caxiense”, whose ingredients bring together, in addition to bread, cuts of filet mignon, cheese and ham, tomato sauce and, at the end, green sauce, prepared with fresh herbs. The trajectory of the restaurant, inserted in the local gastronomic offer due to the skill of its creator, is reconstructed in this research using Oral History as a methodology. The results of the study show the rescue of the successful process of inclusion of the aforementioned Bauru as a signature dish of the city, including in the tourist offer. In this way, we intend to interpret guest's experience, satisfaction, recommend and revisit intention phenomenon in terms of depth and breadth of host's sincerity. We adopt an interpretive approach and a mixed method. That is, the study combines topic extracting technic by employing online secondary big data and explicating emerging themes and patterns. The paper highlights firstly sincerity of communication in sentences with host name emphasized. On the other hand, the host's responsive and communicative nature improves friendliness over time, which affects experience, satisfaction, recommend and revisit. Finally, Airbnb hosts are intermediator of local culture. In our research, a lexicon specific to our research topic (guest-host communication) was created by using topic extraction, Tf*Idf and named entity extraction techniques. The created lexicon can be used in other studies in this field. Furthermore, we conclude that using hosts’ name in reviews by guest an important attribute of interaction. Findings from this study provides important managerial implications for hospitality industry and Airbnb hosts who attempt to interact with guest accurately. These attractions, which have been inherited from centuries ago, are also the subject of scientific research. Although icon issues are frequently discussed in the fields of art history, it has been observed that icons do not take place much in tourism studies. Unlike its counterparts, the subject of icons in this study is handled with the tourism paradigm and this situation reveals the importance of the study. In the context of determining the effects of the perceived value of icons on the behavioural intentions of tourists, empirical research designed. Quantitative research methods were used in the study. The data were collected with the help of a scale which was developed based on the literature. Primary data was obtained by applying the questionnaire to 507 domestic and 525 foreign tourists who have just visited Göreme Open Air Museum (Cappadocia, Turkey). The obtained data were analysed with the help of SPSS statistical program. Regression analysis was used to determine the explanatory value of the perceived value of icons, which is the independent variable of the research, on behavioural intentions, which are dependent variables. According to the results obtained from the research, it has been determined that the perceived value of the icons by the tourists makes a significant contribution to explaining the behavioural intention. Various suggestions have been presented depending on the results of the research.
