This research aimed to investigate performance of sappan extract as colorant for indicator label applied in chicken meat packaging. The samples were stored at room and refrigerator temperature. They were then tested for color change of label RGB (Red Green Blue), pH and TVB-N (Total Volatile Base-Nitrogen) of the meat. Data were analyzed using ANOVA at significant level of 5%. Indicator label showed the reduced RGB during storage, while pH and TVB-N increased. In case of room temperature, the color change into pink occurred in day 3 with pH 6.72 and TVB-N 1.84 mg N/100g. Meanwhile, for samples at refrigerator temperature, the label color turned into pink in day 6, with pH 6.56 and TVB-N 2.09 mg N/100g. In this regard, indicator label could detect the depletion of chicken meat quality as indicated by color shift from yellow to pink when pH and TVB-N were at critical value. This result provides significant output for development of sappan extract for indicator of meat spoilage.","PeriodicalId":381629,"journal":{"name":"Indonesian Journal of Applied Research (IJAR)","volume":"34 1","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2021-12-08","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"115826993","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

To characterize the quality of wild boar cross meat, two males and two females reared in the same environment were slaughtered at an average of one year of age, and meat samples were was collected and analyzed for different parameters such as for moisture, pH value, protein, fat, iron, phosphorous, calcium, water holding capacity through the measure of cooking loss. Data obtained for live body weight, carcass biochemical characteristics, and meat quality traits were submitted to one-way analysis of variance (ANOVA) using a general linear model (uni-variate) in Statistical Package for Social Sciences (SPSS) computer program and the level of significance was determined observing the probability value (p) obtained through ANOVA of respective traits. To study the association among nutritive values and body parts, Pearson’s correlation coefficients were determined using in Statistical Package for Social Sciences (SPSS) computer program. The pH values were found to be in the range of 5.78 to 5.90. Moisture, total ash, fat, and protein contents were observed to be in the range of 71.38 to 73.57 %, 0.89 to 1.10 %, 4.34 to 5.54 %, and 16.73 to 18.84 % respectively. Iron, phosphorous, and calcium content were found to be in the range of 1.94 to 2.94 mg/100g, 20.17 to 37.57 mg/100g, and 170.68 to 190.88 mg/100g respectively whereas cooking loss was in the range of 31.59 to 26.88 %. Sensory evaluation of meat samples was examined by a group of panelists according to the hedonic rating test. The consumer preference was similar to both types of meat samples (male and female). The overall acceptance; however, were higher in female samples than in male samples due to boar taint evident during the cooking or eating of pork derived from non-castrated male pigs once they reach puberty. The comparison of wild crosses among available commercial pigs and indigenous pigs is warranted for further studies with an appropriate and defined production system to obtain lean meat as per the consumer preferences which could be extensively used in commercial pig production to provide high-quality pork.","PeriodicalId":381629,"journal":{"name":"Indonesian Journal of Applied Research (IJAR)","volume":"1 1","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2021-08-25","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"130559549","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

This study was conducted to formulate a liquid hand soap with neem oil and lemongrass essential oil as an natural antibacterial component. Three different concentrations of neem oil 5%; 10% and 15% and three different concentration of lemongrass essential oil (0.2%; 0.4%;0.6%) were formulated as liquid soap using coconut oil, castor oil and neem oil as its soap bases. The natural liquid soap was made by saponification reaction between oils and potassium hydroxide. The soap was evaluated for its pH value, density, foam stability, insoluble in alcohol content, free fatty acid and antibacterial activity. The results showed that the colour of the liquid soap was transparent with yellowish colored and had distinctive smell of neem oil. The pH values of the different formulated liquid hand soaps are within the accepted pH range of 4 - 10. The specific gravity was 1,083 – 1,088 g/ml. The foam stability range was 25.35% - 78.38%, respectively. The insoluble in alcohol content range were 0.14 – 0.4. The free caustic alkali range was 0.12 – 0.47. The liquid hand soap can inhibit the growth of Staphylococcus aureus. The inhibition zone diameter of liquid hand soap was 1.98- 2.61 cm. It was therefore proven that neem oil and lemongrass essensial oil is effective as an antibacterial component in the formulation of liquid hand soap.","PeriodicalId":381629,"journal":{"name":"Indonesian Journal of Applied Research (IJAR)","volume":"86 ","pages":"0"},"PeriodicalIF":0.0,"publicationDate":"2020-12-28","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"133753946","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}
